PALM CITY — Fantini’s Fusion Kitchen, Palm City’s newest restaurant, officially opens at 11 a.m., June 12.
Located at 3208 SW Martin Downs Boulevard, the former site of the Fin & Flame, the new eatery is the latest from local restaurateur Jimmy Fantin, owner of Fantini’s Italian Restaurant on U.S. 1 in Stuart, known for its authentic New Haven Style Apizza and classic Italian fare.
Fantini’s Fusion Kitchen promises a refined, metropolitan-inspired dining experience featuring bold global flavors and polished hospitality.

Fantini Hospitality Group Executive Chef Sean Camillo has been given full creative freedom to balance innovation with his classic techniques. The menu includes Asian-inspired flavors, Mediterranean elements, dry-aged tomahawk steak, and the Italian staples Fantin is known for, including fresh-made pasta.
The beverage program includes an extensive wine list and classic cocktails. Fantini’s Fusion Kitchen will also feature a signature collection of luxe cocktails crafted with premium spirits and presented with elevated flair.
The restaurant’s design blends architectural detail with modern refinement. Guests can expect professional service delivered with precision and attention to detail.
Happy Hour will be 3 to 6 p.m., weekdays and on Sunday get ready for “Sunday Gravy with Sinatra,” a celebration of classic Italian traditions and timeless music from 11 a.m. – 5 p.m. Ongoing entertainment includes live jazz on Wednesdays and DJ Dragonfly on Thursday and Saturday nights, adding to the restaurant’s metropolitan-inspired atmosphere.
During opening weekend, June 12-14, DJ Dragonfly will perform from 5 p.m. until closing on Friday, Saturday, and Sunday.
Fantini’s Fusion Kitchen plans to be open from 3 to 9 p.m. Monday through Thursdays; 11 a.m. to 10 p.m. Fridays and Saturdays; and 11 a.m. to 9 p.m. on Sundays.
