I thought I had seen every possible way to make a pizza. I really did. But then I rolled into Mimo’s Pizza Shop on Staten Island, and my mind was officially blown. If you are looking for a standard, thin-slice pie, look somewhere else. I needed something loud. Something completely over the top. That is when I witnessed the creation of their stuffed ricotta pizza. This thing is pure, beautiful chaos.
The energy in the kitchen is wild, and the chefs do not play around. I watched them build this masterpiece, and I knew right away it was going to be a legendary meal.
The Build is Insane
It all starts with a massive sheet of fresh pizza dough. The chef grabs a piping bag and stuffs the outer crust with a heavy, healthy amount of creamy ricotta cheese. It is loaded to the absolute max.
Next comes the layers. They lay down a thick blanket of sliced mozzarella cheese, followed by a massive pour of their chunky vodka sauce. They spread it out. Drenched.
But they are just getting started.
A heavy drizzle of housemade pesto goes on next, followed by a shower of parmesan cheese and a mountain of pepperoni. They slide the tray into the roaring hot oven. The result? Incredible. It bakes until the crust is golden brown and the pepperoni cups are crispy and charred.
The Ultimate Money Shot
Once it slides out of the oven, they do not stop. They top the entire pie with fresh, creamy burrata cheese, another grating of parmesan, and a heavy drizzle of hot honey.
I grabbed a slice and took a massive bite. The contrast of the crispy, savory pepperoni with the sweet hot honey and the creamy ricotta stuffed inside the crust is elite. It is an absolute game-changer. Look at that pull! The cheese just oozes out of the fluffy bread. It is just the right amount of cheese.
If you are ready to have your pizza standards completely shattered, you need to get to Mimo’s Pizza Shop on Staten Island. Go hungry. Trust me, you will need the appetite.
