There are beehives on the roof of The Cloud One Hotel

The folks at The Cloud One Hotel, which opened in 2022 on Greenwich and Cedar, wrote earlier this summer to tell me about their new deli — an all-day spot serving breakfast, lunch and dinner with house-made cookies, fresh-squeezed juices, smoothies and Parlor Coffee out of Brooklyn. But buried in that press release was a mention that they have their own beehives on the roof.
And they sell their own honey in the deli.
So the beehives are maintained by beekeeper Tom Wilk of Wilk Apiary, which runs 15 apiaries with 82 hives in Queens, Manhattan, Nassau County, Ulster County, Orange County and Sullivan County – all in New York State.
“Our goal is to choose sites that will be suitable to raising happy colonies of honeybees,” Tom says on his website. “All of the properties we have apiaries on are owned by very environmentally aware people who host us to help the survival of honeybees in the area. While it sometimes gets crazy going to multiple sites inspecting and servicing the honeybees, we like the idea of bringing honey bees to as many areas as we can.”
Wilk started the company in 2012; became a certified master beekeeper at Cornell’s Dyce Labs for Honey Bee Studies in 2019; and became the Long Island/New York City region director for the Empire State Honey Producers Association, a position he held until 2024.
In 2020, they became the first New York City beekeepers to be part of the New York State Grown & Certified program. All honey from our New York State hives falls under this category and can contain the official logo from the New York State Department of Agriculture and Markets.
And in 2024, they built their own dedicated honey processing center in Bethel, New York, on their own land so they can produce and bottle their own honey.
And we can pick some up right down the street!
