{"id":125183,"date":"2026-02-06T15:18:09","date_gmt":"2026-02-06T15:18:09","guid":{"rendered":"https:\/\/www.newsbeep.com\/us-ny\/125183\/"},"modified":"2026-02-06T15:18:09","modified_gmt":"2026-02-06T15:18:09","slug":"via-cuma-and-dough-co-pizzerias-plan-expansions","status":"publish","type":"post","link":"https:\/\/www.newsbeep.com\/us-ny\/125183\/","title":{"rendered":"Via Cuma and Dough &#038; Co. pizzerias plan expansions"},"content":{"rendered":"<p>Most of<a class=\"nd-link\" href=\"https:\/\/www.newsday.com\/lifestyle\/restaurants\/best-pizza-long-island-2025-guide-vq164bqr\" rel=\"nofollow noopener\" target=\"_blank\"> Long Island\u2019s top pizzerias<\/a> are single-location ventures,\u00a0but this winter already seems to be the season of pizza expansion with two heavy hitters planning new shops:<\/p>\n<p>Via Cuma<\/p>\n<p>Chef-owner Luca Schiano Di Cola\u2019s ode to his native Naples <a class=\"nd-link\" href=\"https:\/\/www.newsday.com\/lifestyle\/restaurants\/via-cuma-pizza-valley-stream-kff0762o\" rel=\"nofollow noopener\" target=\"_blank\">opened in a tiny Valley Stream storefront in 2024<\/a> and has just taken the keys to what was, until earlier this week, Naples Street Food in Oceanside. With 38 seats, Oceanside has almost twice the capacity as Valley Stream and, unlike the BYOB original, it will have a full bar. Schiano Di Cola hopes to open Via Cuma II in March.<\/p>\n<p>Naples Street Food\u2019s owner, Gianluca Chiarolanza (also Italian by birth) was one of Long Island\u2019s artisanal pizza pioneers, opening the first Naples Street food in Franklin Square in 2016. <a class=\"nd-link\" href=\"https:\/\/www.newsday.com\/lifestyle\/restaurants\/naples-street-food-pizzeria-oceanside-x66793\" rel=\"nofollow noopener\" target=\"_blank\">Oceanside debuted in 2019<\/a> and, by 2021, the Franklin Square pizzeria had been taken over by Gigi Sacchetti, who initially renamed it Chef Gigi\u2019s Place and then, <a class=\"nd-link\" href=\"https:\/\/www.newsday.com\/lifestyle\/restaurants\/farina-00-chef-gigi-italian-franklin-square-ematqy7i\" rel=\"nofollow noopener\" target=\"_blank\">in 2024, Farina 00<\/a>. (Is it a full-time job to keep all of this straight? It is \u2014 and I have that job!)<\/p>\n<p>Chiarolanza has no plans to open another Long Island pizzeria, but he is a partner in a pizza truck in Florida so he\u2019ll still be slinging pies.<\/p>\n<p>Dough &amp; Co. <img alt=\"Danny Rocca, chef-owner of Dough &amp; Co. Credit: Linda Rosier<\/p>\n<p>In Oyster Bay, <a class=\"nd-link\" href=\"https:\/\/www.newsday.com\/lifestyle\/restaurants\/umbertos-jericho-oyster-bay-ku9156k6\" rel=\"nofollow noopener\" target=\"_blank\">Umberto\u2019s is moving<\/a> into much larger quarters in the old Jericho home of Frank\u2019s Steaks. The Main Street store won\u2019t be empty for long because Dough &amp; Co. of Huntington (est. 2022), an elevated slice shop with a standout gluten-free Sicilian, will be opening a Nassau County beachhead.
