Her response would often elicit a blank stare. Occasionally, someone would vaguely recognize her country of birth, light up, and say, \u201cOh, that\u2019s in Russia, right?\u201d<\/p>\n<p class=\"duet--article--dangerously-set-cms-markup duet--article--standard-paragraph n2hx75i _1knl15h1 _1knl15h0 cej01i1\">Tamara would be crestfallen. \u201cI was in New York City, a place where diversity rules, and no one knew where my home was,\u201d she says over lunch.<\/p>\n<p class=\"duet--article--dangerously-set-cms-markup duet--article--standard-paragraph n2hx75i _1knl15h1 _1knl15h0 cej01i1\">Those experiences inspired <a href=\"https:\/\/ny.eater.com\/2023\/8\/29\/23846314\/chama-mama-chelsea-review\" rel=\"nofollow noopener\" target=\"_blank\">Chama Mama<\/a>, the Georgian restaurant she opened in Chelsea in 2019. \u201cI not only want people to know where and what the Republic of Georgia is, but to really appreciate what we have to offer the world,\u201d she says.<\/p>\n<p class=\"duet--article--dangerously-set-cms-markup duet--article--standard-paragraph n2hx75i _1knl15h1 _1knl15h0 cej01i1\">Since then, Chubinidze\u2019s mission has picked up steam. In the last five years, Georgian restaurants have gone beyond their south Brooklyn bubble. For years, there was one Georgian restaurant in the West Village (Old Tbilisi Garden). Today, there are seven. There are also broth-and-meat-cradling dumplings called kinkhali, lamb stews laden with tarragon, and chicken drizzled in walnut sauce.<\/p>\n<p class=\"duet--article--dangerously-set-cms-markup duet--article--standard-paragraph n2hx75i _1knl15h1 _1knl15h0 cej01i1\">During the 20th century, Georgia lost its culinary identity when it was incorporated into the Soviet Union in 1922. At the time, \u201cpeople went for \u2018easy\u2019 food and forgot old recipes,\u201d chef Meriko Gubeladze, owner and chef of Tbilisi restaurant <a href=\"https:\/\/www.instagram.com\/shavilomi_tbilisicuisine\/?hl=en\" rel=\"nofollow noopener\" target=\"_blank\">Shavi Lomi,<\/a> says. That led to Slavic dishes becoming popular, such as borscht and salads with mayonnaise, he explains. In 2008, <a href=\"https:\/\/www.atlanticcouncil.org\/blogs\/ukrainealert\/the-2008-russo-georgian-war-putins-green-light\/\" rel=\"nofollow noopener\" target=\"_blank\">Russia invaded Georgia<\/a>, occupying South Ossetia and Abkhazia. Four years later, the conservative, Russia-leaning Georgian Dream political party took power and has remained in power today. Those instances created a <a href=\"https:\/\/politicsgeo.com\/looming-emigration-from-georgia-run-forrest-run\/\" rel=\"nofollow noopener\" target=\"_blank\">large-scale exodus<\/a> from the country. Since 2010, 23 percent of Georgia\u2019s population has emigrated, and the United States has seen <a href=\"https:\/\/eurasianet.org\/georgian-workers-emigrate-as-labor-shortage-spreads\" rel=\"nofollow noopener\" target=\"_blank\">the largest increase<\/a> in Georgian immigrants.<\/p>\n<p class=\"duet--article--dangerously-set-cms-markup duet--article--standard-paragraph n2hx75i _1knl15h1 _1knl15h0 cej01i1\">At the same time, more Americans are visiting: in 2013, <a href=\"https:\/\/www.economy.ge\/uploads\/meniu_publikaciebi\/ouer\/GEORGIAN_TOURISM_IN_FIGURES_2013.pdf\" rel=\"nofollow noopener\" target=\"_blank\">about 25,000 visited,<\/a> and by 2024, that number doubled to 50,000. In 2018, the Georgia National Tourist Association <a href=\"https:\/\/www.newyorker.com\/magazine\/2019\/04\/29\/the-culinary-muse-of-the-caucasus\" rel=\"nofollow noopener\" target=\"_blank\">brought 800 foreign journalists<\/a> to the country, resulting in abundant publicity. So while more Georgian restaurants have opened thanks to immigration, more diners want Georgian cuisine following their trips to visit the country.<\/p>\n<p class=\"duet--article--dangerously-set-cms-markup duet--article--standard-paragraph n2hx75i _1knl15h1 _1knl15h0 cej01i1\">\u201cThere\u2019s been a greater urgency to promote and make the world aware of Georgia\u2019s cultural heritage, and that includes its food and wine,\u201d says Tina Kaadze, the owner of <a href=\"https:\/\/saperavinyc.com\/\" rel=\"nofollow noopener\" target=\"_blank\">Saperavi<\/a>. As a result, he adds, \u201cThe level of Georgian cooking that is happening here right now is very high.\u201d<\/p>\n<p class=\"duet--article--dangerously-set-cms-markup duet--article--standard-paragraph n2hx75i _1knl15h1 _1knl15h0 cej01i1\">Oniani points out that one should not overlook the growth of the <a href=\"https:\/\/georgianjournal.ge\/georgian-cuisine\/37543-georgian-wine-exports-to-us-increased-fivefold-over-10-years.html\" rel=\"nofollow noopener\" target=\"_blank\">Georgian wine industry, which is<\/a> happening at the same time. \u201cOur cuisine and our wine are inherently linked, so it\u2019s not a surprise that as Georgian wine has become more popular in the U.S., so has the cuisine.\u201d From 2011 to 2021, <a href=\"https:\/\/georgianjournal.ge\/georgian-cuisine\/37543-georgian-wine-exports-to-us-increased-fivefold-over-10-years.html\" rel=\"nofollow noopener\" target=\"_blank\">sales of Georgian wine<\/a> in the United States have quadrupled.<\/p>\n<p class=\"duet--article--dangerously-set-cms-markup duet--article--standard-paragraph n2hx75i _1knl15h1 _1knl15h0 cej01i1\">The foundation of Georgian cuisine in New York is now solid enough that some new restaurants are beginning to stray from tradition, like <a href=\"https:\/\/askiliorchard.com\/\" rel=\"nofollow noopener\" target=\"_blank\">Askili Orchard<\/a> in the West Village.
