It seems others here agree, given how quickly the version at Mama’s Luncheonette in Cow Hollow blew up in 2024. For one, the croutons are not croutons at all. They’re crackles of brown rice, crisped up on the griddle in a glug of olive oil. Nick came by the idea honestly; “Croutons rip tortillas,” he says, which is a no-go for on-the-go eating.

A pedestrian walks past Ruby’s in the Outer Sunset, on Wednesday, March, 11, 2026.

Charles Russo/SFGATE

A chicken Caesar wrap is served at Ruby’s in the Outer Sunset, on Wednesday, March, 11, 2026.

Charles Russo/SFGATE

Then there’s the dressing. They went through countless iterations, eventually landing on a concoction involving olive oil, Asiago cheese and the secret ingredient: lime juice, not lemon. The swap in citrus gives each bite a distinctive tang, and using Asiago instead of Parmesan or pecorino adds creaminess without turning things gloopy like your average supermarket Caesar.

Article continues below this ad

Above all else, though, is the crisp on the tortilla. When Nick trained his staff to make the wraps, his nonnegotiable was its construction. The wrap is large — about the length of an adult forearm — so structural integrity is key, lest patrons be dropping little gem lettuce all over Sunset Dunes. Nick describes the thought process with the seriousness of a seismologist consulting on a high-rise, telling me the dish is a feat of “engineering.”

“Getting a wrap to become something that can be presented in a rod, upright manner is tricky,” he says. “We have a system where we crisp the tortilla to the point where it can hold its own.”

While both sides are crisped golden brown, it’s the sear over the seal of the tortilla that serves as the seismic beam, keeping everything secure. If a customer is eating in, the wrap is swaddled in tin foil, tucked inside a brown pastry bag with a Ruby’s stamp on it, and laid down on a tray. My colleague and I posted up on one of the picnic tables tucked against Ruby’s east wall and dug in. The tortilla indeed had a satisfying crunch to it and held the filling well. The lettuce was crisp and, crucially, cut small enough to prevent any awkward bites where you accidentally pull out a giant piece of romaine. The dressing was flavorful, but in a way where you can still talk face-to-face with people afterward — no overwhelming notes of garlic or chin-dribbling globs of mayonnaise. My favorite part was the brown rice “croutons,” which added a pleasant nuttiness to the dish without rattling my molars. Safe to say my days of missing East Coast desk lunches are over.

Article continues below this ad

The rest of the menu is identifiably San Francisco, featuring eight types of tacos alongside an ahi tuna poke bowl and a fisherman’s stew inspired by the Osbornes’ other restaurant, Mission Rock Resort. The rib eye taco ($7) is prepared uber-simply, with just a little salt and pepper on the meat and pickled onions, Oaxaca cheese and a small dollop of green salsa on top. While the meat was well worthy of its minimalist preparation, sweet but unctuous in a luxurious way, the corn tortilla was the standout for me, pleasantly chewy without taxing the masseters.

It’s such a crowd-pleaser, in fact, that one customer thought thousands of people should know about it. Grace Swint, a 35-year-old high school teacher, was walking down the street when she noticed the cheerful green building and decided to check out the menu.
