ROCHESTER, N.Y. \u2014 Rochester Institute of Technology has become the first university in New York State to have a 50% plant-based menu at its dining halls.<\/p>\n
RIT says it serves around 4,000 plant-based meals a day, made possible through a three-year collaboration between RIT Dining and Humane World for Animals. That\u2019s an organization that partners with schools, hospitals, and corporations to expand plant-based options.<\/p>\n
The university says offering more plant-based meals helps to promote environmental sustainability. In a campus survey, 82% of RIT students said they supported offering more plant-based meals. Some of the most popular dishes include the bibimbap bowl, blackened tofu steak, and tempeh Reuben.<\/p>\n
The university signed a pledge in 2023 to expand its plant-based options.<\/p>\n
