Chef Pisaniello was the owner of Michelin-starred La Locanda di Bu in Italy for a long time, but closed the restaurant during the pandemic.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" width=\"1944\" height=\"1995\" src=\"https:\/\/www.newsbeep.com\/us-ny\/wp-content\/uploads\/2026\/04\/1000085166-2.jpg\" alt=\"\" class=\"wp-image-159215\"  \/>One of Sud\u2019s crispy, square pizzas. Photo: Sud<\/p>\n<p class=\"wp-block-paragraph\">His new restaurant, Sud, is inspired by the cuisine of Southern Italy, where he grew up.\u00a0\u201cMy cuisine is inspired by memories as a child traveling to the various regions,\u201d Chef Pisaniello told Greenpointers.<\/p>\n<p class=\"wp-block-paragraph\">\u201cThe pizzeria is built on the strong foundations of Southern Italian culinary tradition\u2026 It aims to bring the regional gastronomic identities of that part of Italy to the table, while also embracing American culture with new age pizzas and pastas.\u201d<\/p>\n<p class=\"wp-block-paragraph\">\u201cThe goal is to provide a glimpse into a specific segment of the culinary heritage that made Italian food famous worldwide,\u201d Chef Pisianiello said.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" width=\"2304\" height=\"2304\" src=\"https:\/\/www.newsbeep.com\/us-ny\/wp-content\/uploads\/2026\/04\/1000083548-1.jpg\" alt=\"\" class=\"wp-image-159220\"  \/>Sud\u2019s montanara di mortadella. Photo: Sud<\/p>\n<p class=\"wp-block-paragraph\">Sud\u2019s current menu starts with traditional Italian appetizers like arancini, polpette, and caprese salad, plus some less common ones like montanara di mortadella, which is fried pizza dough topped with mortadella, stracciatella, pistachio, and orange zest.\u00a0<\/p>\n<p class=\"wp-block-paragraph\">The menu continues with a long list of pizzas. There\u2019s everything from classic Margherita to the Abruzzo with mashed potato, saffron, smoked provolone, and fresh sausage. Chef Pisaniello explained that his pizza is \u201cvery crisp with an Italian taste and a square shape.\u201d\u00a0<\/p>\n<p class=\"wp-block-paragraph\">In a few weeks, Sud\u2019s menu will expand to include pasta and fish.\u00a0<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" width=\"2232\" height=\"2232\" src=\"https:\/\/www.newsbeep.com\/us-ny\/wp-content\/uploads\/2026\/04\/1000084216-2.jpg\" alt=\"\" class=\"wp-image-159216\"  \/>The interior of Sud. Photo: Sud<\/p>\n<p class=\"wp-block-paragraph\">Sud\u2019s weekend brunch menu offers egg dishes like an omelette and Benedict, plus options like a prosciutto and mozzarella panini and a baguette with smoked salmon and cream cheese.\u00a0<\/p>\n<p class=\"wp-block-paragraph\">Chef Pisaniello said that his recipes will \u201ccontinually evolve with the seasons, drawing inspiration not only from thorough research but also from childhood memories and extensive professional travel.\u201d<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" width=\"2304\" height=\"2304\" src=\"https:\/\/www.newsbeep.com\/us-ny\/wp-content\/uploads\/2026\/04\/1000084059.jpg\" alt=\"\" class=\"wp-image-159218\"  \/>A cocktail from Sud\u2019s bar.
