{"id":206725,"date":"2026-04-23T00:41:54","date_gmt":"2026-04-23T00:41:54","guid":{"rendered":"https:\/\/www.newsbeep.com\/us-ny\/206725\/"},"modified":"2026-04-23T00:41:54","modified_gmt":"2026-04-23T00:41:54","slug":"the-40-half-chicken-that-ruffled-brooklyn","status":"publish","type":"post","link":"https:\/\/www.newsbeep.com\/us-ny\/206725\/","title":{"rendered":"The $40 Half Chicken That Ruffled Brooklyn"},"content":{"rendered":"<p class=\"css-ac37hb evys1bk0\">What should half a rotisserie chicken cost?<\/p>\n<p class=\"css-ac37hb evys1bk0\">It\u2019s a question Hugo Hivernat asked himself before opening <a class=\"css-yywogo\" href=\"https:\/\/www.instagram.com\/gigi_greenpoint\/\" title=\"\" rel=\"noopener noreferrer nofollow\" target=\"_blank\">Gigi\u2019s<\/a>, <a class=\"css-yywogo\" href=\"https:\/\/www.nytimes.com\/2026\/04\/14\/dining\/nyc-restaurant-news.html\" title=\"\" rel=\"nofollow noopener\" target=\"_blank\">his rotisserie restaurant in Greenpoint, Brooklyn<\/a>, last week. \u201cWe want to keep the price affordable,\u201d he told The New York Times <a class=\"css-yywogo\" href=\"https:\/\/www.nytimes.com\/2025\/12\/30\/dining\/rotisserie-chicken-restaurants.html\" title=\"\" rel=\"nofollow noopener\" target=\"_blank\">in December<\/a>. \u201cI mean, affordable for New York.\u201d<\/p>\n<p class=\"css-ac37hb evys1bk0\">The chicken is butchered by one cook, foisted onto a rotisserie skewer by another and blistered with a hand torch by a third cook. It\u2019s served with roasted potatoes and three sauces on a silver platter that he found at a flea market in France. But the price he arrived at displeased a local politician.<\/p>\n<p class=\"css-ac37hb evys1bk0\">\u201c$40 half chicken at a wine bar? Really?\u201d wrote New York City Councilman Chi Oss\u00e9 on Thursday <a class=\"css-yywogo\" href=\"https:\/\/www.instagram.com\/p\/DW7XOvyFrOF\/\" title=\"\" rel=\"noopener noreferrer nofollow\" target=\"_blank\">in an Instagram post<\/a> that appeared to call out the new restaurant, which is not in his district.<\/p>\n<p class=\"css-ac37hb evys1bk0\">It set off a firestorm in the comments among restaurant operators, diners and opinionated bystanders about whether that was indeed affordable for New York, or if it was an instance of egregious price gouging. The Gigi\u2019s chicken is just the latest flashpoint in a continuing debate about the <a class=\"css-yywogo\" href=\"https:\/\/www.nytimes.com\/2025\/09\/18\/dining\/restaurant-prices.html\" title=\"\" rel=\"nofollow noopener\" target=\"_blank\">price of dining out<\/a> in the city.<\/p>\n<p class=\"css-ac37hb evys1bk0\">Operators said the disconnect between owners and diners stemmed from a misunderstanding about <a class=\"css-yywogo\" href=\"https:\/\/www.nytimes.com\/interactive\/2022\/08\/09\/dining\/dinner-bill-restaurant-costs-inflation.html\" title=\"\" rel=\"nofollow noopener\" target=\"_blank\">restaurant economics<\/a>. It is only worsened by the fact that a rotisserie chicken can be purchased from just about any neighborhood supermarket at a fraction of the cost. At Costco, for example, a roughly three-pound rotisserie chicken costs $4.99 \u2014 the same as it did in 2009.<\/p>\n<p class=\"css-ac37hb evys1bk0\">Supermarkets warp consumers\u2019 perception of what a rotisserie chicken should cost because \u201cit\u2019s a loss leader,\u201d said Henry Glucroft, an owner of <a class=\"css-yywogo\" href=\"https:\/\/badaboom.us\/\" title=\"\" rel=\"noopener noreferrer nofollow\" target=\"_blank\">Badaboom<\/a>, a rotisserie restaurant in Bedford-Stuyvesant. Rotisserie chicken is a classic loss leader, a retail strategy in which grocery stores price an item lower than the production cost \u2014 in this case, often significantly cheaper than a whole raw chicken \u2014 to draw in customers. \u201cWe can\u2019t afford to take the loss,\u201d he said.<\/p>\n<p class=\"css-ac37hb evys1bk0\">In response, Mr. Glucroft and his partner, Charles Gerbier, will offer a one-day, <a class=\"css-yywogo\" href=\"https:\/\/www.instagram.com\/p\/DW9XQHfD_rv\/?hl=en\" title=\"\" rel=\"noopener noreferrer nofollow\" target=\"_blank\">\u201cpay what you feel is fair\u201d promotion<\/a> Tuesday on the half chicken at their restaurant. Dine-in customers with a reservation will have the rare opportunity to name their price. \u201cWe want to open the conversation,\u201d Mr. Glucroft said.<\/p>\n<p class=\"css-ac37hb evys1bk0\">On any other day, the half chicken at Badaboom costs $32 with potatoes \u2014 no sauces. <a class=\"css-yywogo\" href=\"https:\/\/www.cleodowntown.com\/\" title=\"\" rel=\"noopener noreferrer nofollow\" target=\"_blank\">Cleo Downtown<\/a>, a rotisserie restaurant opening on Friday in the West Village of Manhattan, will serve a half chicken with side sauces for $32. On the Upper East Side, <a class=\"css-yywogo\" href=\"https:\/\/www.chezfifinyc.com\/\" title=\"\" rel=\"noopener noreferrer nofollow\" target=\"_blank\">Chez Fifi<\/a> sells a half chicken brushed with duck fat for $78.<\/p>\n<p class=\"css-ac37hb evys1bk0\">At <a class=\"css-yywogo\" href=\"https:\/\/www.theflybrooklyn.com\/\" title=\"\" rel=\"noopener noreferrer nofollow\" target=\"_blank\">the Fly<\/a>, a chicken bar in Bed-Stuy, half a bird costs $19 \u2014 a detail the councilman, who represents the neighborhood and Crown Heights, highlighted in the comments of his Instagram post. Factor in a side of potatoes and three sauces, however, and the total is similar to that of Gigi\u2019s: $38.<\/p>\n<p class=\"css-ac37hb evys1bk0\">Mr. Oss\u00e9 declined to comment for this story through a spokesman. On Friday, in an Instagram direct message viewed by The Times, he asked Mr. Hivernat if they could speak over the phone. The two are looking for time to talk, according to the restaurant owner.<\/p>\n<p class=\"css-ac37hb evys1bk0\">Mr. Hivernat offers his staff paid time off and health insurance benefits and employs a salaried dishwasher, and insisted the chicken was \u201cthe right price\u201d once inflation, labor, loans and his $9,000 monthly rent was considered. He earns about $4 in profit from a $40 half chicken.<\/p>\n<p class=\"css-ac37hb evys1bk0\">\u201cThese neighborhoods deserve good food, but there has to be some sort of middle ground,\u201d said Crystal Anderson, a 44-year-old events producer in Bed-Stuy who left a comment supporting Mr. Oss\u00e9\u2019s post. \u201cI know it\u2019s really difficult to open new restaurants, but there is only so much reinventing the wheel you can do with a whole chicken,\u201d she added.<\/p>\n<p class=\"css-ac37hb evys1bk0\">Felipe Cha, the second-generation owner of <a class=\"css-yywogo\" href=\"https:\/\/www.instagram.com\/incachickenbk\/\" title=\"\" rel=\"noopener noreferrer nofollow\" target=\"_blank\">Inca Chicken<\/a> in Bushwick, has seen chicken prices fluctuate. When his father opened the rotisserie restaurant in 1989, he sold his flame-charred chickens for 75 cents per pound. Today, a half chicken with two sides costs $14.50 before tax.<\/p>\n<p class=\"css-ac37hb evys1bk0\">\u201cThe pricing is meant for our hard-working clientele,\u201d said Mr. Cha, 50. On an average weekday, he sells about 250 birds and earns about $4 in profit from each half-chicken sale \u2014 roughly the same as that of Gigi\u2019s. His rent, $8,000 per month, is comparable to Gigi\u2019s, too.
