But its newest New York opening might be the most over-the-top version yet.<\/p>\n<p>The <a href=\"https:\/\/www.timeout.com\/newyork\/restaurants\/cote\" rel=\"nofollow noopener\" target=\"_blank\">Michelin-starred Korean steakhouse<\/a>, which first landed in Flatiron in 2017, has officially expanded uptown with a sprawling new outpost inside 550 Madison\u2014and it\u2019s not just a restaurant. It\u2019s a full-blown, multi-level dining complex.<\/p>\n<p>Opened April 18 by Simon Kim and his Gracious Hospitality team, the new space mixes three concepts under one roof: a second Manhattan location of Cote, a glitzy new bar called <a href=\"https:\/\/www.instagram.com\/barchimera\/\" rel=\"nofollow noopener\" target=\"_blank\">Bar Chimera<\/a> and an upcoming omakase counter from sushi legend Masahiro Yoshitake that will debut later this year.<\/p>\n<p><img decoding=\"async\" id=\"54eb046a-8242-1660-d5b0-b0508216817b\" class=\"photo lazy inline\" loading=\"lazy\" data-component=\"lazy-embed\" src=\"https:\/\/www.newsbeep.com\/us-ny\/wp-content\/uploads\/2026\/04\/1776980168_699_image.webp.webp\" alt=\"cote\" data-caption=\"\" data-credit=\"Photograph: Courtesy of Cote\" data-width-class=\"\" data-image-id=\"106397846\"\/>&#13;<br \/>\nPhotograph: Courtesy of Cote&#13;<\/p>\n<p>Upstairs, Bar Chimera is your entry point\u2014and it makes an entrance. The room is built around a towering pine tree (a nod to Korean symbolism), surrounded by plush booths and three distinct bars dedicated to wine, whisky and Martinis. It\u2019s a mix of brasserie and cocktail playground, with snacks like oysters and a foie gras-filled take on Korea\u2019s nostalgic \u201cHome Run\u201d treat.<\/p>\n<p>Downstairs, at Cote 550, the subterranean dining room embraces the brand\u2019s signature mix of Korean barbecue and chophouse energy, with smokeless grills at every table and a jungle of greenery overhead. The menu sticks to what works\u2014the $118-per-person Butcher\u2019s Feast, a parade of dry-aged beef cuts with banchan and stews\u2014alongside a few location-specific additions like tableside japchae.<\/p>\n<p><img decoding=\"async\" id=\"02dc8f3d-9797-e882-7b68-d992751f4e66\" class=\"photo lazy inline\" loading=\"lazy\" data-component=\"lazy-embed\" src=\"https:\/\/www.newsbeep.com\/us-ny\/wp-content\/uploads\/2026\/04\/1776980169_350_image.webp.webp\" alt=\"bar chimera\" data-caption=\"\" data-credit=\"Photograph: Gary He\" data-width-class=\"\" data-image-id=\"106397847\"\/>&#13;<br \/>\nPhotograph: Gary He&#13;<\/p>\n<p>And then there\u2019s the wine. If the original Cote made a point of taking its cellar seriously, this one goes even further. The list spans more than 1,400 bottles, with deep verticals across Burgundy, Champagne and Bordeaux. Near the entrance, a display of vintage Madeira (some dating back to 1835) immediately sets the tone. At Bar Chimera, rare pours are even available by the glass, thanks to Coravin.<\/p>\n<p>The whole thing feels made for Midtown: it\u2019s bigger, flashier and built for lingering over Martinis or steak (or both).
