Cando grew up blocks from his restaurant, opened it in 2016 on National Street bordering Corona Plaza, and named it after his mother Leticia, who always had something on the stove when family came over. The menu is built on that kitchen: encebollado, a fish stew with cassava; the pork trio of fritada, hornado and chorizo he calls tres chanchitos, loosely “three little piggies”; and tripa mishqui, grilled pork intestines, popular street food in both Ecuador and on Corona Plaza itself, cleaned and marinated until they’re genuinely mishqui, the Quechua word for delicious. Cando now pours cocktails built around Ecuadorian spirits and fruits: naranjilla, colada morada.
