And don&#8217;t rush it.<\/p>\n<p data-testid=\"transcript-caption-14\">Take your time.<\/p>\n<p data-testid=\"transcript-caption-15\">Irie cool. Everything is good.<\/p>\n<p data-testid=\"transcript-caption-16\">Keep it calm. It&#8217;s a Jamaica thing, we say irie man.<\/p>\n<p data-testid=\"transcript-caption-17\">[upbeat music]<\/p>\n<p data-testid=\"transcript-caption-18\">I know you guys want to see the fire and the smoke. Me too.<\/p>\n<p data-testid=\"transcript-caption-19\">But before we get out there,<\/p>\n<p data-testid=\"transcript-caption-20\">we gotta season up this chicken.<\/p>\n<p data-testid=\"transcript-caption-21\">Who is that behind me? Right here?<\/p>\n<p data-testid=\"transcript-caption-22\">Yeah. That&#8217;s my wife.<\/p>\n<p data-testid=\"transcript-caption-23\">That&#8217;s my life. That&#8217;s my wife, Kahyii.<\/p>\n<p data-testid=\"transcript-caption-24\">My better half without her, irie jerk ain&#8217;t possible.<\/p>\n<p data-testid=\"transcript-caption-25\">These are the small chicken leg quarters.<\/p>\n<p data-testid=\"transcript-caption-26\">You have to clean out the guts.<\/p>\n<p data-testid=\"transcript-caption-27\">A lot of people don&#8217;t do that.<\/p>\n<p data-testid=\"transcript-caption-28\">You can&#8217;t eat chicken and you see liver and kidneys.<\/p>\n<p data-testid=\"transcript-caption-29\">When you use vinegar and lime<\/p>\n<p data-testid=\"transcript-caption-30\">and that&#8217;s what we use whether we have vinegar<\/p>\n<p data-testid=\"transcript-caption-31\">or lime, one of them has to be used.<\/p>\n<p data-testid=\"transcript-caption-32\">This is going inside of you.<\/p>\n<p data-testid=\"transcript-caption-33\">So now that we wash the chicken<\/p>\n<p data-testid=\"transcript-caption-34\">and it&#8217;s clean, so now we&#8217;re gonna add our<\/p>\n<p data-testid=\"transcript-caption-35\">powder seasoning to it.<\/p>\n<p data-testid=\"transcript-caption-36\">We do dry seasoning and wet seasoning,<\/p>\n<p data-testid=\"transcript-caption-37\">just to give the jerk the full flavor of it<\/p>\n<p data-testid=\"transcript-caption-38\">because the things<\/p>\n<p data-testid=\"transcript-caption-39\">that we use in the dry seasoning is different<\/p>\n<p data-testid=\"transcript-caption-40\">from the things that we do in the wet seasoning.<\/p>\n<p data-testid=\"transcript-caption-41\">Like the first thing we do, we add with allspice seasoning.<\/p>\n<p data-testid=\"transcript-caption-42\">Allspice is vital. This is the pimento, we need this.<\/p>\n<p data-testid=\"transcript-caption-43\">We usually use the wood itself as the fire in Jamaica.<\/p>\n<p data-testid=\"transcript-caption-44\">But we are in New York,<\/p>\n<p data-testid=\"transcript-caption-45\">so we are using the ground allspice right now.<\/p>\n<p data-testid=\"transcript-caption-46\">So we&#8217;re gonna pour a little ground sauce in here.<\/p>\n<p data-testid=\"transcript-caption-47\">We wanna add some ginger, you understand?<\/p>\n<p data-testid=\"transcript-caption-48\">We also gonna blend some up in the wet jar.<\/p>\n<p data-testid=\"transcript-caption-49\">We done with the ginger.<\/p>\n<p data-testid=\"transcript-caption-50\">For me, we use look a mixed up blend.<\/p>\n<p data-testid=\"transcript-caption-51\">You can call it Sazon mixed with whatever.<\/p>\n<p data-testid=\"transcript-caption-52\">This is my local blend.<\/p>\n<p data-testid=\"transcript-caption-53\">This is the garlic with the ground garlic.<\/p>\n<p data-testid=\"transcript-caption-54\">So you wanna add your garlic<\/p>\n<p data-testid=\"transcript-caption-55\">and this is your dry jerk seasoning.<\/p>\n<p data-testid=\"transcript-caption-56\">Just a little bit.<\/p>\n<p data-testid=\"transcript-caption-57\">It don&#8217;t have to be too much, &#8217;cause it&#8217;s spicy.<\/p>\n<p data-testid=\"transcript-caption-58\">Jerk is just listen,<\/p>\n<p data-testid=\"transcript-caption-59\">I was born hearing the name jerk.<\/p>\n<p data-testid=\"transcript-caption-60\">I can&#8217;t tell you the full definition.<\/p>\n<p data-testid=\"transcript-caption-61\">I just go along with what the world does.<\/p>\n<p data-testid=\"transcript-caption-62\">So you wanna pour some chicken seasoning on it<\/p>\n<p data-testid=\"transcript-caption-63\">so you don&#8217;t wanna add salt<\/p>\n<p data-testid=\"transcript-caption-64\">because you have all these other dry seasoning<\/p>\n<p data-testid=\"transcript-caption-65\">that contain salt.<\/p>\n<p data-testid=\"transcript-caption-66\">So I know you got all your powder seasoning,<\/p>\n<p data-testid=\"transcript-caption-67\">all your dry seasoning on it.<\/p>\n<p data-testid=\"transcript-caption-68\">You wanna go ahead now<\/p>\n<p data-testid=\"transcript-caption-69\">and start making the wet one.<\/p>\n<p data-testid=\"transcript-caption-70\">To start your wet marinade,<\/p>\n<p data-testid=\"transcript-caption-71\">you wanna have the real, real, real life taste<\/p>\n<p data-testid=\"transcript-caption-72\">of these ingredients in it, coming from the earth.<\/p>\n<p data-testid=\"transcript-caption-73\">You need this. We have the raw ginger in there.<\/p>\n<p data-testid=\"transcript-caption-74\">You need that in the chicken.<\/p>\n<p data-testid=\"transcript-caption-75\">Mixed with the powdered one comes together.<\/p>\n<p data-testid=\"transcript-caption-76\">Good combination.<\/p>\n<p data-testid=\"transcript-caption-77\">This is our base<\/p>\n<p data-testid=\"transcript-caption-78\">for our wet marinade is Juices International Sorrel Drink.<\/p>\n<p data-testid=\"transcript-caption-79\">Tastes wonderful.<\/p>\n<p data-testid=\"transcript-caption-80\">A lot of people know what it is hibiscus.<\/p>\n<p data-testid=\"transcript-caption-81\">Everybody makes it Trinidad, [speaking foreign language],<\/p>\n<p data-testid=\"transcript-caption-82\">everybody makes it.<\/p>\n<p data-testid=\"transcript-caption-83\">But everybody&#8217;s tastes different.<\/p>\n<p data-testid=\"transcript-caption-84\">It adds a nice tang to it mixed with the other ingredients.<\/p>\n<p data-testid=\"transcript-caption-85\">The sorrel just brings out something in the chicken.<\/p>\n<p data-testid=\"transcript-caption-86\">So we wanna start the blend up.<\/p>\n<p data-testid=\"transcript-caption-87\">[blender whirring]<\/p>\n<p data-testid=\"transcript-caption-88\">First thing first, the spring onions.<\/p>\n<p data-testid=\"transcript-caption-89\">Yeah, you see this now?<\/p>\n<p data-testid=\"transcript-caption-90\">This is what look called the scotchy.<\/p>\n<p data-testid=\"transcript-caption-91\">This is a Scotch Bonnet Pepper. Very hot.<\/p>\n<p data-testid=\"transcript-caption-92\">I don&#8217;t take the stem outta my pepper.<\/p>\n<p data-testid=\"transcript-caption-93\">And you wanna add some pimento pepper.<\/p>\n<p data-testid=\"transcript-caption-94\">Pimento pepper is not hot, it just gives you flavor.<\/p>\n<p data-testid=\"transcript-caption-95\">Allspice grounded.<\/p>\n<p data-testid=\"transcript-caption-96\">I have allspice whole<\/p>\n<p data-testid=\"transcript-caption-97\">and I even have allspice in my grill<\/p>\n<p data-testid=\"transcript-caption-98\">&#8217;cause we use the pimento wood in Jamaica.<\/p>\n<p data-testid=\"transcript-caption-99\">So we gotta improvise here in America, we don&#8217;t have it.<\/p>\n<p data-testid=\"transcript-caption-100\">So everything pimento, we doing it.<\/p>\n<p data-testid=\"transcript-caption-101\">Beautiful.<\/p>\n<p data-testid=\"transcript-caption-102\">So the garlic, real garlic pegs. Need it.<\/p>\n<p data-testid=\"transcript-caption-103\">Shaved [indistinct] to me.<\/p>\n<p data-testid=\"transcript-caption-104\">Now you see this? This is where you call the thyme.<\/p>\n<p data-testid=\"transcript-caption-105\">Very, very essential in the flavoring of your food.<\/p>\n<p data-testid=\"transcript-caption-106\">God made this plant, I don&#8217;t know what he was thinking of.<\/p>\n<p data-testid=\"transcript-caption-107\">We&#8217;re going all in and nothing is going to waste.<\/p>\n<p data-testid=\"transcript-caption-108\">We&#8217;re gonna cut some onions up now and we gonna put them in<\/p>\n<p data-testid=\"transcript-caption-109\">and we need a raw ginger.<\/p>\n<p data-testid=\"transcript-caption-110\">So now we&#8217;re gonna leave some of this marinade.<\/p>\n<p data-testid=\"transcript-caption-111\">See that? See that?<\/p>\n<p data-testid=\"transcript-caption-112\">Now we&#8217;re gonna put it all up in our chicken now.<\/p>\n<p data-testid=\"transcript-caption-113\">Cover your chicken completely with it.<\/p>\n<p data-testid=\"transcript-caption-114\">So the season you sit behind the chicken,<\/p>\n<p data-testid=\"transcript-caption-115\">I&#8217;ll stuff it behind here so.<\/p>\n<p data-testid=\"transcript-caption-116\">When you&#8217;re jerking it on the grill now,<\/p>\n<p data-testid=\"transcript-caption-117\">you wanna make sure season the all on your chicken.<\/p>\n<p data-testid=\"transcript-caption-118\">So when you bite the chicken, when they eat the chicken,<\/p>\n<p data-testid=\"transcript-caption-119\">you&#8217;re supposed to taste everywhere<\/p>\n<p data-testid=\"transcript-caption-120\">I&#8217;m gonna put the seasoning.<\/p>\n<p data-testid=\"transcript-caption-121\">You&#8217;re supposed to,<\/p>\n<p data-testid=\"transcript-caption-122\">so even if the skin should fall off in the fire,<\/p>\n<p data-testid=\"transcript-caption-123\">you have a marinade right here.<\/p>\n<p data-testid=\"transcript-caption-124\">And I let this marinade for 24, 48 hours.<\/p>\n<p data-testid=\"transcript-caption-125\">If you gotta make it right away,<\/p>\n<p data-testid=\"transcript-caption-126\">like throw it on the grill right<\/p>\n<p data-testid=\"transcript-caption-127\">after seasoning it, choosing what I just told you to use,<\/p>\n<p data-testid=\"transcript-caption-128\">it&#8217;ll still be good.<\/p>\n<p data-testid=\"transcript-caption-129\">We&#8217;re gonna drop this on the grill and get ready to eat.<\/p>\n<p data-testid=\"transcript-caption-130\">We&#8217;re gonna make the sweet honey jerk sauce.<\/p>\n<p data-testid=\"transcript-caption-131\">So the wet marinade that we had earlier, some left in here.<\/p>\n<p data-testid=\"transcript-caption-132\">All right, so we&#8217;re gonna add some more<\/p>\n<p data-testid=\"transcript-caption-133\">of the juices, International Sorrel<\/p>\n<p data-testid=\"transcript-caption-134\">and we&#8217;re gonna add our honey sauce in there.<\/p>\n<p data-testid=\"transcript-caption-135\">Now man to make it sauce<\/p>\n<p data-testid=\"transcript-caption-136\">because it tastes good on top<\/p>\n<p data-testid=\"transcript-caption-137\">of the chicken when the food is done.<\/p>\n<p data-testid=\"transcript-caption-138\">I&#8217;m scared of the pepper as much as I&#8217;m Jamaican.<\/p>\n<p data-testid=\"transcript-caption-139\">So I gotta add some honey in there.<\/p>\n<p data-testid=\"transcript-caption-140\">We gotta make it blend a little bit longer.<\/p>\n<p data-testid=\"transcript-caption-141\">It&#8217;s got the spice<\/p>\n<p data-testid=\"transcript-caption-142\">and you could just add it on top of your chicken<\/p>\n<p data-testid=\"transcript-caption-143\">when you ready man.<\/p>\n<p data-testid=\"transcript-caption-144\">[upbeat music]<\/p>\n<p data-testid=\"transcript-caption-145\">So guys, we did all the hard work in the kitchen<\/p>\n<p data-testid=\"transcript-caption-146\">and it&#8217;s time to hit the streets.<\/p>\n<p data-testid=\"transcript-caption-147\">Made it outside guys.<\/p>\n<p data-testid=\"transcript-caption-148\">Chicken is ready to hit the fire.<\/p>\n<p data-testid=\"transcript-caption-149\">So we&#8217;re gonna put them in order,<\/p>\n<p data-testid=\"transcript-caption-150\">you know, make it nice and neat.<\/p>\n<p data-testid=\"transcript-caption-151\">And we&#8217;re gonna give it like 15,<\/p>\n<p data-testid=\"transcript-caption-152\">20 minutes on each side to make sure<\/p>\n<p data-testid=\"transcript-caption-153\">that it&#8217;s, it&#8217;s cooked thoroughly.<\/p>\n<p data-testid=\"transcript-caption-154\">It doesn&#8217;t matter if you put the skin up or skin down.<\/p>\n<p data-testid=\"transcript-caption-155\">It&#8217;s whichever way it comes up on the tongue is<\/p>\n<p data-testid=\"transcript-caption-156\">gonna cook the same way.<\/p>\n<p data-testid=\"transcript-caption-157\">Sometimes you do it and the skin might, you know, fall off.<\/p>\n<p data-testid=\"transcript-caption-158\">Nothing&#8217;s wrong with that.<\/p>\n<p data-testid=\"transcript-caption-159\">All right, so in like 20 minutes, like I said,<\/p>\n<p data-testid=\"transcript-caption-160\">we keep flipping it and make sure it&#8217;s cooked thoroughly.<\/p>\n<p data-testid=\"transcript-caption-161\">We call these grills the barrel grills.<\/p>\n<p data-testid=\"transcript-caption-162\">They&#8217;re not like the authentic ones in Jamaica<\/p>\n<p data-testid=\"transcript-caption-163\">&#8217;cause the authentic ones in Jamaica, we don&#8217;t have<\/p>\n<p data-testid=\"transcript-caption-164\">to have a rack on the grill.<\/p>\n<p data-testid=\"transcript-caption-165\">The the rack is already made in the grill.<\/p>\n<p data-testid=\"transcript-caption-166\">In Jamaica, we use the nutmeg wood or the pimento wood.<\/p>\n<p data-testid=\"transcript-caption-167\">In New York I don&#8217;t have that,<\/p>\n<p data-testid=\"transcript-caption-168\">so I have to improvise.<\/p>\n<p data-testid=\"transcript-caption-169\">So what I do use lump charcoal,<\/p>\n<p data-testid=\"transcript-caption-170\">no briquettes, no Match Light.<\/p>\n<p data-testid=\"transcript-caption-171\">I add my nutmeg and my pimento seeds in there.<\/p>\n<p data-testid=\"transcript-caption-172\">Give me that home flavor.<\/p>\n<p data-testid=\"transcript-caption-173\">I feel like I&#8217;m in Jamaica right now.<\/p>\n<p data-testid=\"transcript-caption-174\">We started very early this morning.<\/p>\n<p data-testid=\"transcript-caption-175\">This is like our third batch.<\/p>\n<p data-testid=\"transcript-caption-176\">We started since 6:00 AM this morning.<\/p>\n<p data-testid=\"transcript-caption-177\">When the line starts,<\/p>\n<p data-testid=\"transcript-caption-178\">we gotta make sure we have it on hand<\/p>\n<p data-testid=\"transcript-caption-179\">and people still gotta wait but we do it as fast as we can.<\/p>\n<p data-testid=\"transcript-caption-180\">Even though you don&#8217;t see the big fire underneath it.<\/p>\n<p data-testid=\"transcript-caption-181\">It&#8217;s being slow cooked on top.<\/p>\n<p data-testid=\"transcript-caption-182\">You know, closing the lids.<\/p>\n<p data-testid=\"transcript-caption-183\">We don&#8217;t want too much fire, too much oxygen going in here<\/p>\n<p data-testid=\"transcript-caption-184\">&#8217;cause we don&#8217;t want this chicken to dry out.<\/p>\n<p data-testid=\"transcript-caption-185\">This one is the fire.<\/p>\n<p data-testid=\"transcript-caption-186\">So I&#8217;m gonna close it right now<\/p>\n<p data-testid=\"transcript-caption-187\">and have the smoke and the fire.<\/p>\n<p data-testid=\"transcript-caption-188\">The smoke, the fire is at the bottom.<\/p>\n<p data-testid=\"transcript-caption-189\">The smoke is cooking in the top.<\/p>\n<p data-testid=\"transcript-caption-190\">I might have to hose this side down<\/p>\n<p data-testid=\"transcript-caption-191\">&#8217;cause like I tell you, I feel this side cooking real fast.<\/p>\n<p data-testid=\"transcript-caption-192\">You see right now, the chicken just got<\/p>\n<p data-testid=\"transcript-caption-193\">to cook a little bit faster just now.<\/p>\n<p data-testid=\"transcript-caption-194\">Prepare for this.<\/p>\n<p data-testid=\"transcript-caption-195\">Decided the chicken is almost cooked.<\/p>\n<p data-testid=\"transcript-caption-196\">30, 45 minutes the most<\/p>\n<p data-testid=\"transcript-caption-197\">and you have your jerk chicken.<\/p>\n<p data-testid=\"transcript-caption-198\">Once you put it on the grill, the hard work is done.<\/p>\n<p data-testid=\"transcript-caption-199\">The fire does it for you.<\/p>\n<p data-testid=\"transcript-caption-200\">Every day, I cook about five, 600 pounds.<\/p>\n<p data-testid=\"transcript-caption-201\">You know more on weekends.<\/p>\n<p data-testid=\"transcript-caption-202\">We&#8217;re open six days a week.<\/p>\n<p data-testid=\"transcript-caption-203\">We&#8217;re getting ready to start opening seven days now<\/p>\n<p data-testid=\"transcript-caption-204\">&#8217;cause the demand, I have people throwing rocks upstairs at<\/p>\n<p data-testid=\"transcript-caption-205\">windows and I gotta please my people.<\/p>\n<p data-testid=\"transcript-caption-206\">You know that&#8217;s a lot of work. We are hiring.<\/p>\n<p data-testid=\"transcript-caption-207\">Chicken is coming along.<\/p>\n<p data-testid=\"transcript-caption-208\">You could hear the fire, it&#8217;s coming along.<\/p>\n<p data-testid=\"transcript-caption-209\">We wanna turn them.<\/p>\n<p data-testid=\"transcript-caption-210\">We wanna stick it to make sure<\/p>\n<p data-testid=\"transcript-caption-211\">that the heat goes through your chicken.<\/p>\n<p data-testid=\"transcript-caption-212\">You don&#8217;t want this side cooking<\/p>\n<p data-testid=\"transcript-caption-213\">and that side not cooking.<\/p>\n<p data-testid=\"transcript-caption-214\">By sticking it with the fork,<\/p>\n<p data-testid=\"transcript-caption-215\">you&#8217;re letting all the heat gets in the chicken<\/p>\n<p data-testid=\"transcript-caption-216\">so the chicken could cook thoroughly all through.<\/p>\n<p data-testid=\"transcript-caption-217\">You don&#8217;t want one half cooking<\/p>\n<p data-testid=\"transcript-caption-218\">and the other half not cooking.<\/p>\n<p data-testid=\"transcript-caption-219\">You understand what I&#8217;m saying?<\/p>\n<p data-testid=\"transcript-caption-220\">And you could tell when your<\/p>\n<p data-testid=\"transcript-caption-221\">chicken is cooked because this one is not cooked.<\/p>\n<p data-testid=\"transcript-caption-222\">It&#8217;s heavy. It&#8217;s heavy.<\/p>\n<p data-testid=\"transcript-caption-223\">This one is almost there.<\/p>\n<p data-testid=\"transcript-caption-224\">It not because it&#8217;s smaller.
