Together, they dreamed of opening a small, sunlit restaurant in New York City—one that served Italian and French-inspired dishes that shifted with the seasons, the kind of casual place where the focus is on the food and conversation.

On a recent morning, the three women squeezed into a corner booth and reminisced about King’s early scrappy days. “We had no money,” Shi says. “We literally Googled ‘How to Write a Restaurant Business Plan’ and made one in PowerPoint. We weren’t fully funded until two months after opening.”

They knew they had found their spot the instant they saw it: a small, light-filled space with generous windows at the intersection of Avenue and the Americas and King Street (hence the name). The design of the space was deliberately simple—both out of necessity and philosophy. “It was completely bootstrapped,” de Boer says. “My mom, Jane Gowers, designed the space. Annie’s dad helped build it. And Jess was on her knees grouting tiles.”

The dining room at King restaurant in Greenwich Village. Courtesy of King

Soon, King began drawing a loyal following of both foodies and the fashion crowd for its signature dishes—panisse (chickpea fritters), grilled halibut, and handmade pasta. Nearly a decade later, the trio is finally sharing their recipes in The King Cookbook, out now from Flatiron Books. Here, they offer a few of their best lessons on entertaining—whether you are cooking for a crowd or setting the table for two.

Poached Striped Bass from The King Cookbook. Matt Russell

KEEP THE CANVAS CLEAN

At King, every design choice was made to let the food take center stage. Tables are covered in plain white paper (a white tablecloth or simple wood surface works just as well at home), plates are unadorned white porcelain, and there is virtually no décor competing for attention. Even the napkins are folded to the edge of the table, seam-side down. “Let the food be the most beautiful thing on the table,” Shadbolt says. “Our plates aren’t expensive but the one thing we insist on are rims—they frame a dish and make the food pop.”

SIMPLICITY WINS

There are no showpiece stoves or caviar trolleys at King—the space is far too small for that. From the narrow, open galley, diners can watch every move in the kitchen: pasta stirred over basic gas burners, sauces whisked in utilitarian stainless-steel pots, knives flashing as herbs are chopped. It’s a reminder that all you need to cook great food is an investment in basic quality cookware. “You don’t need much—just essentials and a clear workflow,” de Boer says. “Our kitchen mirrors most home kitchens, if not smaller.”

DESIGN FOR CONNECTION

At King, tables are set without silverware, encouraging guests to begin the meal by sharing food with their hands—often the restaurant’s Carta di Musica, the paper-thin Sardinian flatbreads served grilled and topped with everything from torn figs, mint, and fresh ricotta to whipped bottarga, sungolds, and wild oregano. There is even a chocolate-and-olive oil version for dessert.

SPLURGE WHERE IT COUNTS

King’s owners learned early to spend wisely. When it came to the restaurant’s design, they chose one true indulgence: Josef Hoffmann’s 1925 cane and bentwood chairs for Thonet. “That was the one ‘nice’ thing Jane insisted on,” Shi says. “We sat in every available chair before choosing them. They’ve become synonymous with King.”

Décor is sparse, but each piece has meaning. There is artwork by R.F. Alvarez, who also illustrated the cookbook. In one window sits an antique Provençal confit pot—cracked during an event and later repaired with 24-karat gold by a kintsugi artist in Queens. “We love it even more now,” Shi says.

The same philosophy applies to their food. The cookbook’s pantry section lists the olive oils they rely on most: a Tuscan single-estate fresh press from Capezzana; their own fresh press from Tuscany’s Sesti; and a Californian Arbequina. Every ingredient has a story just as every design choice reflects quiet intention.

MAKE A STATEMENT

Even their desserts reveal a design lesson. Pies and tarts are baked in unusually wide 12-to-14-inch round tins, so each slice looks generous and elegant on the plate. The approach shines in recipes like Huckleberry Galette or Tarte Tatin. And when nothing is in season, De Boer offers an easy fix: Supermarket blackberries. “They are great in any baked fruit dessert,” she says.

Variations on King’s signature Carta di Musica appetizers, as seen in the new cookbook. Matt Russell

ENTERTAIN WITH EASE

For gatherings, the King strategy is simple: do less but do it beautifully. Choose recipes that save time and invite conversation. Batch a cocktail, like the restaurant’s Train to Bayonne—made with tarragon gin, lime juice, and chartreuse—and let guests serve their own. Start with Carta di musica, which are easier to serve than individual canapés.

In winter, the team suggests this celebratory menu: start with roasted chestnuts followed by a bubbling cassoulet and a green salad, and then finish with tangerine sorbet served in frozen tangerine shells. The effect is pure King—a lovely organic touch that puts the emphasis on the dish. As Shadbolt says, “Let the food be the most beautiful thing on the table.”

You Might Also Like

“Hearst Magazines and Yahoo may earn commission or revenue on some items through these links.” With its plain…

[35
17907,2519,17906,7150,17909,17908,75,84,83,9,24,63
post-28746","post","type-post","status-publish","format-standard","has-post-thumbnail","category-manhattan","tag-clare-de-boer","tag-greenwich-village","tag-jess-shadbolt","tag-king","tag-king-restaurant","tag-king-street","tag-manhattan","tag-manhattan-headlines","tag-manhattan-news","tag-new-york","tag-new-york-city","tag-nyc
["GET
