data-testid=\"transcript-caption-1\">I&#8217;m Chef Claire Malfitano,<\/p>\n<p data-testid=\"transcript-caption-2\">the chef de cuisine for Murray&#8217;s Cheese,<\/p>\n<p data-testid=\"transcript-caption-3\">and today I&#8217;m gonna show you how to make the world&#8217;s<\/p>\n<p data-testid=\"transcript-caption-4\">best mac and cheese.<\/p>\n<p data-testid=\"transcript-caption-5\">[bell dinging]<\/p>\n<p data-testid=\"transcript-caption-6\">Here at our Bleecker Street location,<\/p>\n<p data-testid=\"transcript-caption-7\">the flagship store,<\/p>\n<p data-testid=\"transcript-caption-8\">we make upwards of 30 tons of mac and cheese every year.<\/p>\n<p data-testid=\"transcript-caption-9\">We&#8217;re bringing our expertise in cheese to mac and cheese,<\/p>\n<p data-testid=\"transcript-caption-10\">so we&#8217;re very intentional<\/p>\n<p data-testid=\"transcript-caption-11\">with the ingredients that we choose,<\/p>\n<p data-testid=\"transcript-caption-12\">whether it be the pasta,<\/p>\n<p data-testid=\"transcript-caption-13\">the cheeses that we shred for inside,<\/p>\n<p data-testid=\"transcript-caption-14\">and the way that we prepare the mac and cheese.<\/p>\n<p data-testid=\"transcript-caption-15\">[smooth groovy music]<\/p>\n<p data-testid=\"transcript-caption-16\">For our cheese sauce,<\/p>\n<p data-testid=\"transcript-caption-17\">we&#8217;ll start by infusing some whole milk with aromatics,<\/p>\n<p data-testid=\"transcript-caption-18\">and that fat that you get in the whole milk<\/p>\n<p data-testid=\"transcript-caption-19\">is really gonna add flavor, but it also isn&#8217;t too fatty<\/p>\n<p data-testid=\"transcript-caption-20\">so that it will break the sauce.<\/p>\n<p data-testid=\"transcript-caption-21\">Using onion is a great way to infuse some flavor<\/p>\n<p data-testid=\"transcript-caption-22\">that&#8217;s a little bit of a kick.<\/p>\n<p data-testid=\"transcript-caption-23\">The thyme really adds some savory notes,<\/p>\n<p data-testid=\"transcript-caption-24\">some herbiness that we need.<\/p>\n<p data-testid=\"transcript-caption-25\">Just to layer, I think these two flavors<\/p>\n<p data-testid=\"transcript-caption-26\">really complement cheddar.<\/p>\n<p data-testid=\"transcript-caption-27\">We&#8217;re making a sachet, so I&#8217;m just adding the sliced onion,<\/p>\n<p data-testid=\"transcript-caption-28\">and then I&#8217;ll add the thyme to some cheesecloth,<\/p>\n<p data-testid=\"transcript-caption-29\">and that&#8217;s just gonna make the infusion very easy.<\/p>\n<p data-testid=\"transcript-caption-30\">And when I&#8217;m ready to remove<\/p>\n<p data-testid=\"transcript-caption-31\">and feel the flavor&#8217;s been imparted enough,<\/p>\n<p data-testid=\"transcript-caption-32\">I can just pull it out.<\/p>\n<p data-testid=\"transcript-caption-33\">And we really just wanna put it over medium-low heat.<\/p>\n<p data-testid=\"transcript-caption-34\">We&#8217;re not trying to bring it to a boil.<\/p>\n<p data-testid=\"transcript-caption-35\">It&#8217;s really below a simmer.<\/p>\n<p data-testid=\"transcript-caption-36\">I would just stir it occasionally because you will see<\/p>\n<p data-testid=\"transcript-caption-37\">that the milk could stick to the bottom.<\/p>\n<p data-testid=\"transcript-caption-38\">Infusing the milk really adds flavors<\/p>\n<p data-testid=\"transcript-caption-39\">at the very start of the recipe.<\/p>\n<p data-testid=\"transcript-caption-40\">Really, any recipe,<\/p>\n<p data-testid=\"transcript-caption-41\">you wanna build flavor from the beginning.<\/p>\n<p data-testid=\"transcript-caption-42\">Now that the milk is infused,<\/p>\n<p data-testid=\"transcript-caption-43\">we&#8217;ll begin our roux by melting some butter.<\/p>\n<p data-testid=\"transcript-caption-44\">A roux is a thickening agent.<\/p>\n<p data-testid=\"transcript-caption-45\">It really just allows for a sauce to thicken.<\/p>\n<p data-testid=\"transcript-caption-46\">Once it&#8217;s fully melted, we&#8217;ll begin adding the flour.<\/p>\n<p data-testid=\"transcript-caption-47\">You really wanna stir;<\/p>\n<p data-testid=\"transcript-caption-48\">make sure you&#8217;re getting everything mixed together.<\/p>\n<p data-testid=\"transcript-caption-49\">You&#8217;re honestly going for almost<\/p>\n<p data-testid=\"transcript-caption-50\">what looks like an applesauce texture.<\/p>\n<p data-testid=\"transcript-caption-51\">This is gonna add some structure and stability to the sauce<\/p>\n<p data-testid=\"transcript-caption-52\">that really helps it coat the pasta.<\/p>\n<p data-testid=\"transcript-caption-53\">It&#8217;s gonna begin bubbling, and I&#8217;ve always been taught<\/p>\n<p data-testid=\"transcript-caption-54\">that it smells like Christmas cookies,<\/p>\n<p data-testid=\"transcript-caption-55\">and that&#8217;s how you know that a blond roux is done.<\/p>\n<p data-testid=\"transcript-caption-56\">So we&#8217;ve been cooking the roux for about five minutes.<\/p>\n<p data-testid=\"transcript-caption-57\">You can see that we&#8217;ve achieved this texture<\/p>\n<p data-testid=\"transcript-caption-58\">that almost looks like pancake batter.<\/p>\n<p data-testid=\"transcript-caption-59\">So this is the exact color that we want.<\/p>\n<p data-testid=\"transcript-caption-60\">Now that our roux is ready,<\/p>\n<p data-testid=\"transcript-caption-61\">our next step will be adding in the infused milk.<\/p>\n<p data-testid=\"transcript-caption-62\">We wanna make sure we&#8217;re stirring the whole time,<\/p>\n<p data-testid=\"transcript-caption-63\">otherwise, it could get lumpy.<\/p>\n<p data-testid=\"transcript-caption-64\">You do wanna have a plastic spatula handy<\/p>\n<p data-testid=\"transcript-caption-65\">just to scrape the side so you don&#8217;t get<\/p>\n<p data-testid=\"transcript-caption-66\">pieces of roux like that stuck.<\/p>\n<p data-testid=\"transcript-caption-67\">It will thicken up very quickly,<\/p>\n<p data-testid=\"transcript-caption-68\">and that will give us a bechamel.<\/p>\n<p data-testid=\"transcript-caption-69\">Bechamel is just cooked milk that&#8217;s been thickened<\/p>\n<p data-testid=\"transcript-caption-70\">and infused with aromatics.<\/p>\n<p data-testid=\"transcript-caption-71\">There&#8217;s no shame in eating boxed mac and cheese at home.<\/p>\n<p data-testid=\"transcript-caption-72\">I&#8217;m a big fan.<\/p>\n<p data-testid=\"transcript-caption-73\">That&#8217;s what I grew up with.<\/p>\n<p data-testid=\"transcript-caption-74\">And I would say you can easily doctor it up<\/p>\n<p data-testid=\"transcript-caption-75\">by adding, like, sour cream, cottage cheese,<\/p>\n<p data-testid=\"transcript-caption-76\">another shredded cheese that you love,<\/p>\n<p data-testid=\"transcript-caption-77\">and really amping up the cheesiness.<\/p>\n<p data-testid=\"transcript-caption-78\">So it&#8217;s been about seven minutes<\/p>\n<p data-testid=\"transcript-caption-79\">since we infused the milk into the roux.<\/p>\n<p data-testid=\"transcript-caption-80\">We&#8217;ve been patiently stirring,<\/p>\n<p data-testid=\"transcript-caption-81\">and now we&#8217;ve got a great thickness.<\/p>\n<p data-testid=\"transcript-caption-82\">You can see it&#8217;s not dripping like water.<\/p>\n<p data-testid=\"transcript-caption-83\">It&#8217;s having more resistance and clinging to the whisk.<\/p>\n<p data-testid=\"transcript-caption-84\">Now we can make this bechamel into a Mornay sauce.<\/p>\n<p data-testid=\"transcript-caption-85\">Mornay sauce is just a fancy word for cheese sauce.<\/p>\n<p data-testid=\"transcript-caption-86\">So high-moisture mozzarella melts really, really nicely,<\/p>\n<p data-testid=\"transcript-caption-87\">and the flavor isn&#8217;t overpowering,<\/p>\n<p data-testid=\"transcript-caption-88\">and that&#8217;s what makes it a great blank canvas.<\/p>\n<p data-testid=\"transcript-caption-89\">We&#8217;ll add more shredded mozzarella in later<\/p>\n<p data-testid=\"transcript-caption-90\">when we mix our pasta and sauce together.<\/p>\n<p data-testid=\"transcript-caption-91\">And that is really for the cheese pull<\/p>\n<p data-testid=\"transcript-caption-92\">and less about the flavor.<\/p>\n<p data-testid=\"transcript-caption-93\">We&#8217;ll add some cream cheese.<\/p>\n<p data-testid=\"transcript-caption-94\">It really adds a nice tanginess and acidity.<\/p>\n<p data-testid=\"transcript-caption-95\">Really balances out the salt,<\/p>\n<p data-testid=\"transcript-caption-96\">takes away any sweetness<\/p>\n<p data-testid=\"transcript-caption-97\">that might be present from the cooked milk.<\/p>\n<p data-testid=\"transcript-caption-98\">So we&#8217;re just making sure that the cream cheese<\/p>\n<p data-testid=\"transcript-caption-99\">is fully melted.<\/p>\n<p data-testid=\"transcript-caption-100\">So it didn&#8217;t look too thick<\/p>\n<p data-testid=\"transcript-caption-101\">when we removed it from the stove,<\/p>\n<p data-testid=\"transcript-caption-102\">but now, adding the cheese, the cream cheese,<\/p>\n<p data-testid=\"transcript-caption-103\">it&#8217;s really added a lot of body to the sauce,<\/p>\n<p data-testid=\"transcript-caption-104\">and that&#8217;s really gonna cling to the pasta.<\/p>\n<p data-testid=\"transcript-caption-105\">Takes a little arm strength.<\/p>\n<p data-testid=\"transcript-caption-106\">It&#8217;s really almost like a cake batter at this point.<\/p>\n<p data-testid=\"transcript-caption-107\">Worked out all those lumps, and now we can add the mustard.<\/p>\n<p data-testid=\"transcript-caption-108\">The acidity really lightens it up.<\/p>\n<p data-testid=\"transcript-caption-109\">It makes it possible for you to eat<\/p>\n<p data-testid=\"transcript-caption-110\">a good helping of mac and cheese in one sitting.<\/p>\n<p data-testid=\"transcript-caption-111\">I am gonna add kosher salt as well.<\/p>\n<p data-testid=\"transcript-caption-112\">So we&#8217;re gonna hit really a lot of different flavors,<\/p>\n<p data-testid=\"transcript-caption-113\">and that will create complexity in the sauce.<\/p>\n<p data-testid=\"transcript-caption-114\">I think another mistake that people make in the kitchen<\/p>\n<p data-testid=\"transcript-caption-115\">is not tasting their food as they go.<\/p>\n<p data-testid=\"transcript-caption-116\">So I think that&#8217;s perfect.<\/p>\n<p data-testid=\"transcript-caption-117\">A pro tip that we do recommend<\/p>\n<p data-testid=\"transcript-caption-118\">if you&#8217;re using your sauce today, like we are,<\/p>\n<p data-testid=\"transcript-caption-119\">is to make a cartouche<\/p>\n<p data-testid=\"transcript-caption-120\">to avoid a skin developing on top of the sauce.<\/p>\n<p data-testid=\"transcript-caption-121\">From here, we&#8217;ll start cooking the pasta<\/p>\n<p data-testid=\"transcript-caption-122\">so we can mix our mac and cheese and bake it in the oven.<\/p>\n<p data-testid=\"transcript-caption-123\">[smooth groovy music] [pasta clattering]<\/p>\n<p data-testid=\"transcript-caption-124\">Here at Murray&#8217;s Cheese, we use radiatori pasta<\/p>\n<p data-testid=\"transcript-caption-125\">for our mac and cheese.<\/p>\n<p data-testid=\"transcript-caption-126\">As you can see, it&#8217;s shaped like an old-timey radiator,<\/p>\n<p data-testid=\"transcript-caption-127\">and those grooves really allow<\/p>\n<p data-testid=\"transcript-caption-128\">for maximum cheese sauce coverage.<\/p>\n<p data-testid=\"transcript-caption-129\">It&#8217;s very important to salt your water<\/p>\n<p data-testid=\"transcript-caption-130\">before cooking your pasta.<\/p>\n<p data-testid=\"transcript-caption-131\">You wanna be very generous with your salt.<\/p>\n<p data-testid=\"transcript-caption-132\">I&#8217;d say close to a tablespoon per quart of water.<\/p>\n<p data-testid=\"transcript-caption-133\">Don&#8217;t be afraid to taste your water;<\/p>\n<p data-testid=\"transcript-caption-134\">if it doesn&#8217;t taste salty,<\/p>\n<p data-testid=\"transcript-caption-135\">probably not enough salt to infuse into your pasta.<\/p>\n<p data-testid=\"transcript-caption-136\">Our cook time is very short, only six minutes.<\/p>\n<p data-testid=\"transcript-caption-137\">In the first minute of cooking,<\/p>\n<p data-testid=\"transcript-caption-138\">it&#8217;s important to stir the pasta.<\/p>\n<p data-testid=\"transcript-caption-139\">This will prevent it from sticking to each other<\/p>\n<p data-testid=\"transcript-caption-140\">and then also sticking to the bottom.<\/p>\n<p data-testid=\"transcript-caption-141\">We cook it to al dente,<\/p>\n<p data-testid=\"transcript-caption-142\">so it&#8217;s still gonna have a bite to it,<\/p>\n<p data-testid=\"transcript-caption-143\">and it won&#8217;t be fully cooked through.<\/p>\n<p data-testid=\"transcript-caption-144\">We&#8217;re gonna cook our mac and cheese<\/p>\n<p data-testid=\"transcript-caption-145\">with the sauce in the oven.<\/p>\n<p data-testid=\"transcript-caption-146\">So we don&#8217;t want it to become mushy.<\/p>\n<p data-testid=\"transcript-caption-147\">We still want the structural integrity of the pasta.<\/p>\n<p data-testid=\"transcript-caption-148\">Don&#8217;t be afraid to experiment with fun shapes.<\/p>\n<p data-testid=\"transcript-caption-149\">If you can&#8217;t find radiatori in your local grocery store,<\/p>\n<p data-testid=\"transcript-caption-150\">I definitely recommend a cavatappi.<\/p>\n<p data-testid=\"transcript-caption-151\">Fusilli is nice.<\/p>\n<p data-testid=\"transcript-caption-152\">It has a lot of grooves that will catch the sauce.<\/p>\n<p data-testid=\"transcript-caption-153\">Even a shell is really fun<\/p>\n<p data-testid=\"transcript-caption-154\">&#8217;cause it does capture that sauce,<\/p>\n<p data-testid=\"transcript-caption-155\">but it&#8217;s not gonna capture the sauce in a heat bomb<\/p>\n<p data-testid=\"transcript-caption-156\">kind of like a rigatoni would.<\/p>\n<p data-testid=\"transcript-caption-157\">I love macaroni.<\/p>\n<p data-testid=\"transcript-caption-158\">I think it doesn&#8217;t capture the sauce<\/p>\n<p data-testid=\"transcript-caption-159\">in the same way as our radiatori does.<\/p>\n<p data-testid=\"transcript-caption-160\">It doesn&#8217;t have grooves.<\/p>\n<p data-testid=\"transcript-caption-161\">The holes are a little too small<\/p>\n<p data-testid=\"transcript-caption-162\">to even really take in very much, but it&#8217;s a fun shape.<\/p>\n<p data-testid=\"transcript-caption-163\">We&#8217;ll leave the stove to strain the water from our pasta.<\/p>\n<p data-testid=\"transcript-caption-164\">You don&#8217;t wanna rinse your pasta.<\/p>\n<p data-testid=\"transcript-caption-165\">That really washes the starch away from the pasta<\/p>\n<p data-testid=\"transcript-caption-166\">and makes it much more difficult for a sauce to cling.<\/p>\n<p data-testid=\"transcript-caption-167\">And especially for a mac and cheese,<\/p>\n<p data-testid=\"transcript-caption-168\">you really want that sauce to cling to the pasta.<\/p>\n<p data-testid=\"transcript-caption-169\">If you&#8217;re not using your pasta immediately,<\/p>\n<p data-testid=\"transcript-caption-170\">we recommend spreading it out on a sheet pan<\/p>\n<p data-testid=\"transcript-caption-171\">and allowing it to cool in an even layer<\/p>\n<p data-testid=\"transcript-caption-172\">so that it doesn&#8217;t overcook.<\/p>\n<p data-testid=\"transcript-caption-173\">Once the pasta&#8217;s cooled, we can assemble our mac and cheese<\/p>\n<p data-testid=\"transcript-caption-174\">and get it in the oven.<\/p>\n<p data-testid=\"transcript-caption-175\">[smooth groovy music]<\/p>\n<p data-testid=\"transcript-caption-176\">So these are the three cheeses<\/p>\n<p data-testid=\"transcript-caption-177\">that we use for our classic mac and cheese.<\/p>\n<p data-testid=\"transcript-caption-178\">I think a great rule of thumb,<\/p>\n<p data-testid=\"transcript-caption-179\">kind of like cook with the wine that you would drink,<\/p>\n<p data-testid=\"transcript-caption-180\">is cook with the cheese that you would eat,<\/p>\n<p data-testid=\"transcript-caption-181\">while keeping in mind that high moisture<\/p>\n<p data-testid=\"transcript-caption-182\">is what&#8217;s gonna make it really, really silky and smooth.<\/p>\n<p data-testid=\"transcript-caption-183\">You wanna avoid cheeses that are heavily aged<\/p>\n<p data-testid=\"transcript-caption-184\">because they won&#8217;t melt in the same way<\/p>\n<p data-testid=\"transcript-caption-185\">that these cheeses do.<\/p>\n<p data-testid=\"transcript-caption-186\">So we already have our pre-shredded<\/p>\n<p data-testid=\"transcript-caption-187\">high-moisture mozzarella.<\/p>\n<p data-testid=\"transcript-caption-188\">We add even more at this point,<\/p>\n<p data-testid=\"transcript-caption-189\">not really for the flavor, but for the cheese pull.<\/p>\n<p data-testid=\"transcript-caption-190\">So this is our Red Wax Gouda.<\/p>\n<p data-testid=\"transcript-caption-191\">It is very high moisture and delicious.<\/p>\n<p data-testid=\"transcript-caption-192\">It&#8217;s gonna impart a lot of buttery flavor<\/p>\n<p data-testid=\"transcript-caption-193\">and add richness.<\/p>\n<p data-testid=\"transcript-caption-194\">It would contribute similar flavors<\/p>\n<p data-testid=\"transcript-caption-195\">as a Havarti, I would say.<\/p>\n<p data-testid=\"transcript-caption-196\">I&#8217;m using a box grater.<\/p>\n<p data-testid=\"transcript-caption-197\">I&#8217;m going on a finer shred.<\/p>\n<p data-testid=\"transcript-caption-198\">This is our New York State white cheddar.<\/p>\n<p data-testid=\"transcript-caption-199\">It&#8217;s gonna add some great acidity<\/p>\n<p data-testid=\"transcript-caption-200\">that we want to balance the other flavors.<\/p>\n<p data-testid=\"transcript-caption-201\">So Gouda does have a little bit of sweetness.<\/p>\n<p data-testid=\"transcript-caption-202\">That acidity is gonna temper that down.<\/p>\n<p data-testid=\"transcript-caption-203\">Now we&#8217;ll mix them so we can top our mac and cheese.<\/p>\n<p data-testid=\"transcript-caption-204\">So we&#8217;ll add all of our cooked pasta to the bowl.<\/p>\n<p data-testid=\"transcript-caption-205\">I would say we can probably serve about 30 to 40 people<\/p>\n<p data-testid=\"transcript-caption-206\">with this amount of mac.<\/p>\n<p data-testid=\"transcript-caption-207\">I&#8217;m gonna add the cheese sauce into our pasta<\/p>\n<p data-testid=\"transcript-caption-208\">and shredded cheese.<\/p>\n<p data-testid=\"transcript-caption-209\">Now, with gloved hands, I&#8217;m gonna mix everything together<\/p>\n<p data-testid=\"transcript-caption-210\">so every piece of pasta is coated with sauce.<\/p>\n<p data-testid=\"transcript-caption-211\">At this point, the sauce is still warm,<\/p>\n<p data-testid=\"transcript-caption-212\">but it&#8217;s not hot enough to melt the cheese.<\/p>\n<p data-testid=\"transcript-caption-213\">We want the oven to melt the cheese that&#8217;s inside<\/p>\n<p data-testid=\"transcript-caption-214\">and then also on top of the mac and cheese.<\/p>\n<p data-testid=\"transcript-caption-215\">I always find this very relaxing.<\/p>\n<p data-testid=\"transcript-caption-216\">Mixing, making sure everything&#8217;s incorporated.<\/p>\n<p data-testid=\"transcript-caption-217\">This is the point of no return,<\/p>\n<p data-testid=\"transcript-caption-218\">so we wanna taste our cheese sauce on our pasta,<\/p>\n<p data-testid=\"transcript-caption-219\">and that will let us know if we need to add<\/p>\n<p data-testid=\"transcript-caption-220\">any last-minute salt before we begin baking.<\/p>\n<p data-testid=\"transcript-caption-221\">I think it&#8217;s good.<\/p>\n<p data-testid=\"transcript-caption-222\">So we&#8217;ll be using a small baking dish<\/p>\n<p data-testid=\"transcript-caption-223\">to make our mac and cheese today.<\/p>\n<p data-testid=\"transcript-caption-224\">We recommend a baking dish that isn&#8217;t too tall.<\/p>\n<p data-testid=\"transcript-caption-225\">You really wanna make sure that your mac and cheese<\/p>\n<p data-testid=\"transcript-caption-226\">is heated all the way through<\/p>\n<p data-testid=\"transcript-caption-227\">before it gets too brown on the top.<\/p>\n<p data-testid=\"transcript-caption-228\">You don&#8217;t wanna really mound it<\/p>\n<p data-testid=\"transcript-caption-229\">because that kind of makes it hard<\/p>\n<p data-testid=\"transcript-caption-230\">to heat all the way through.<\/p>\n<p data-testid=\"transcript-caption-231\">You also don&#8217;t wanna push it down too much<\/p>\n<p data-testid=\"transcript-caption-232\">&#8217;cause, again, it&#8217;s gonna be very dense,<\/p>\n<p data-testid=\"transcript-caption-233\">hard to heat it all the way through<\/p>\n<p data-testid=\"transcript-caption-234\">before the cheese browns all the way.<\/p>\n<p data-testid=\"transcript-caption-235\">Now we&#8217;ll top our mac and cheese with our remaining cheese<\/p>\n<p data-testid=\"transcript-caption-236\">and then bake it in the oven.<\/p>\n<p data-testid=\"transcript-caption-237\">We do not add breadcrumbs.<\/p>\n<p data-testid=\"transcript-caption-238\">We let the cheese do all the work.<\/p>\n<p data-testid=\"transcript-caption-239\">It&#8217;s gonna toast in the oven<\/p>\n<p data-testid=\"transcript-caption-240\">and become golden brown and crispy,<\/p>\n<p data-testid=\"transcript-caption-241\">and you&#8217;ll actually get the really delicious cooked,<\/p>\n<p data-testid=\"transcript-caption-242\">toasted cheese flavor of Cheez-Its.<\/p>\n<p data-testid=\"transcript-caption-243\">I promise this isn&#8217;t a Cheez-Its commercial.<\/p>\n<p data-testid=\"transcript-caption-244\">This is actually an item that we referenced quite a bit<\/p>\n<p data-testid=\"transcript-caption-245\">as we were developing the recipe,<\/p>\n<p data-testid=\"transcript-caption-246\">as we were aiming for the end goal<\/p>\n<p data-testid=\"transcript-caption-247\">of what we wanted the cheese crust to taste like.<\/p>\n<p data-testid=\"transcript-caption-248\">So our classic mac and cheese is ready for the oven.<\/p>\n<p data-testid=\"transcript-caption-249\">We&#8217;ll bake it at 375 for about 10 to 12 minutes.<\/p>\n<p data-testid=\"transcript-caption-250\">And it&#8217;s gonna get nice and golden brown on the top<\/p>\n<p data-testid=\"transcript-caption-251\">and be really nice and warm and bubbly around the edges.<\/p>\n<p data-testid=\"transcript-caption-252\">And that will tell us that the inside is heated through.<\/p>\n<p data-testid=\"transcript-caption-253\">So we&#8217;ve got perfect golden-brown deliciousness.<\/p>\n<p data-testid=\"transcript-caption-254\">This is exactly what we&#8217;re looking for<\/p>\n<p data-testid=\"transcript-caption-255\">when we&#8217;re baking the mac and cheese in the oven.<\/p>\n<p data-testid=\"transcript-caption-256\">So all of that caramelization<\/p>\n<p data-testid=\"transcript-caption-257\">is gonna give that Cheez-It flavor that we want.<\/p>\n<p data-testid=\"transcript-caption-258\">And you can see it&#8217;s kind of bubbled over a little bit.<\/p>\n<p data-testid=\"transcript-caption-259\">We&#8217;ve got those nice crunchy bits to snack on.<\/p>\n<p data-testid=\"transcript-caption-260\">But it&#8217;s just absolutely perfect.<\/p>\n<p data-testid=\"transcript-caption-261\">You can enjoy this right out of the oven.<\/p>\n<p data-testid=\"transcript-caption-262\">It&#8217;s gonna be very hot.<\/p>\n<p data-testid=\"transcript-caption-263\">You don&#8217;t need to wait for it to settle<\/p>\n<p data-testid=\"transcript-caption-264\">or anything like that.<\/p>\n<p data-testid=\"transcript-caption-265\">The great debate: fork versus spoon for mac and cheese.<\/p>\n<p data-testid=\"transcript-caption-266\">I am team fork.<\/p>\n<p data-testid=\"transcript-caption-272\">The pasta is not mushy.<\/p>\n<p data-testid=\"transcript-caption-273\">That al dente cook that we did on the stove<\/p>\n<p data-testid=\"transcript-caption-274\">makes it perfect in the end.<\/p>\n<p data-testid=\"transcript-caption-275\">As somebody who&#8217;s eaten mac and cheese<\/p>\n<p data-testid=\"transcript-caption-276\">probably every day for the last 7 1\/2 years,<\/p>\n<p data-testid=\"transcript-caption-277\">I could eat this whole thing.<\/p>\n<p data-testid=\"transcript-caption-278\">So you can see the radiatori<\/p>\n<p data-testid=\"transcript-caption-279\">really has a ton of cheese sauce.<\/p>\n<p data-testid=\"transcript-caption-280\">The cheese on top, you can see the crust.<\/p>\n<p data-testid=\"transcript-caption-281\">Like, look at that crispy piece.<\/p>\n<p data-testid=\"transcript-caption-282\">Cheez-It flavor, nice crunch.<\/p>\n<p data-testid=\"transcript-caption-283\">In contrast with the pasta, so good.<\/p>\n<p data-testid=\"transcript-caption-284\">Mac and cheese is a simple dish.<\/p>\n<p data-testid=\"transcript-caption-285\">So putting intention behind the ingredients you&#8217;re using,<\/p>\n<p data-testid=\"transcript-caption-286\">it really delivers in the end product.<\/p>\n<p data-testid=\"transcript-caption-287\">I think a velvety sauce, a pasta that still has texture,<\/p>\n<p data-testid=\"transcript-caption-288\">a lot of flavor complexity from cheeses<\/p>\n<p data-testid=\"transcript-caption-289\">really is gonna make an absolutely delicious mac and cheese.<\/p>\n<p data-testid=\"transcript-caption-290\">And I feel like cooking for yourself<\/p>\n<p data-testid=\"transcript-caption-291\">is the greatest form of self-care.<\/p>\n<p data-testid=\"transcript-caption-292\">So putting intention into that self-care<\/p>\n<p data-testid=\"transcript-caption-293\">really makes a beautiful end
