Hey, how&#8217;s it going?<\/p>\n<p data-testid=\"transcript-caption-18\">Good, how&#8217;s it going? Nice to see you.<\/p>\n<p data-testid=\"transcript-caption-19\">This is Sophia.<\/p>\n<p data-testid=\"transcript-caption-20\">She is the owner of Po Wing.<\/p>\n<p data-testid=\"transcript-caption-21\">Well, second-gen.<\/p>\n<p data-testid=\"transcript-caption-22\">That&#8217;s my mom, actually.<\/p>\n<p data-testid=\"transcript-caption-23\">Hey, mom, say hi.<\/p>\n<p data-testid=\"transcript-caption-24\">[light music]<\/p>\n<p data-testid=\"transcript-caption-25\">These dried scallops are the ones<\/p>\n<p data-testid=\"transcript-caption-26\">that I usually get for the restaurant.<\/p>\n<p data-testid=\"transcript-caption-27\">Dried scallops are really important to Chinese food<\/p>\n<p data-testid=\"transcript-caption-28\">because not only does it concentrate the flavor,<\/p>\n<p data-testid=\"transcript-caption-29\">I think in French food, you think fresh is best,<\/p>\n<p data-testid=\"transcript-caption-30\">but actually, dried scallops are like a huge part<\/p>\n<p data-testid=\"transcript-caption-31\">of Chinese preservation and history.<\/p>\n<p data-testid=\"transcript-caption-32\">In the past, there&#8217;s no refrigeration,<\/p>\n<p data-testid=\"transcript-caption-33\">but it concentrates the flavor.<\/p>\n<p data-testid=\"transcript-caption-34\">The methods they use, actually,<\/p>\n<p data-testid=\"transcript-caption-35\">it is prized more than a fresh scallop.<\/p>\n<p data-testid=\"transcript-caption-36\">Well, I&#8217;m using these for my XO sauce.<\/p>\n<p data-testid=\"transcript-caption-37\">I would say it&#8217;s an essential Chinese condiment.<\/p>\n<p data-testid=\"transcript-caption-38\">It still has a lot of umami,<\/p>\n<p data-testid=\"transcript-caption-39\">using a lot of dried shrimp and dried scallops.<\/p>\n<p data-testid=\"transcript-caption-40\">You can put it on anything.<\/p>\n<p data-testid=\"transcript-caption-41\">We use it at the restaurant<\/p>\n<p data-testid=\"transcript-caption-42\">to make it into a French-ish sauce.<\/p>\n<p data-testid=\"transcript-caption-43\">So I&#8217;m gonna go get some fish maw as well.<\/p>\n<p data-testid=\"transcript-caption-44\">Okay, sure. Around the corner?<\/p>\n<p data-testid=\"transcript-caption-45\">It is dried.<\/p>\n<p data-testid=\"transcript-caption-46\">It is the bladder.<\/p>\n<p data-testid=\"transcript-caption-47\">It has so much flavor.<\/p>\n<p data-testid=\"transcript-caption-48\">We use it for, like, our superior stock.<\/p>\n<p data-testid=\"transcript-caption-49\">The one I was previously using,<\/p>\n<p data-testid=\"transcript-caption-50\">people were like, It&#8217;s a little bit strong.<\/p>\n<p data-testid=\"transcript-caption-51\">Oh, okay. So I think this one<\/p>\n<p data-testid=\"transcript-caption-52\">was like a great like<\/p>\n<p data-testid=\"transcript-caption-53\">gateway fish maw. Yeah, yeah.<\/p>\n<p data-testid=\"transcript-caption-54\">I think my goal is to, like, make people<\/p>\n<p data-testid=\"transcript-caption-55\">who are not Chinese eat more of the delicacies<\/p>\n<p data-testid=\"transcript-caption-56\">that we&#8217;re used to eating growing up.<\/p>\n<p data-testid=\"transcript-caption-57\">[Sophia] Okay, so I think you wanna<\/p>\n<p data-testid=\"transcript-caption-58\">get the goji berries as well.<\/p>\n<p data-testid=\"transcript-caption-59\">Right? Oh, yes.<\/p>\n<p data-testid=\"transcript-caption-60\">It&#8217;s just like garnish, but also on top of our wonton soup.<\/p>\n<p data-testid=\"transcript-caption-61\">Perfect. I love people&#8217;s reaction<\/p>\n<p data-testid=\"transcript-caption-62\">to it because they&#8217;re like,<\/p>\n<p data-testid=\"transcript-caption-63\">usually, they use it in like a smoothie.<\/p>\n<p data-testid=\"transcript-caption-64\">[Sophia] Yeah, yeah.<\/p>\n<p data-testid=\"transcript-caption-65\">I think I need to get my cordyceps mushrooms, flowers.<\/p>\n<p data-testid=\"transcript-caption-66\">When people eat it, they&#8217;re like, What is this?<\/p>\n<p data-testid=\"transcript-caption-67\">I really love that.<\/p>\n<p data-testid=\"transcript-caption-68\">That opens up a conversation<\/p>\n<p data-testid=\"transcript-caption-69\">about all Chinese ingredients as well.<\/p>\n<p data-testid=\"transcript-caption-70\">It has natural umami in,<\/p>\n<p data-testid=\"transcript-caption-71\">so we just rehydrate it and put it in our wonton soup.<\/p>\n<p data-testid=\"transcript-caption-72\">It&#8217;s really important to come here<\/p>\n<p data-testid=\"transcript-caption-73\">to talk to Sophia and her family.<\/p>\n<p data-testid=\"transcript-caption-74\">I can&#8217;t really find these anywhere else.<\/p>\n<p data-testid=\"transcript-caption-75\">I can&#8217;t just order online for these ingredients.<\/p>\n<p data-testid=\"transcript-caption-76\">I&#8217;m gonna bring all these things back<\/p>\n<p data-testid=\"transcript-caption-77\">to Ying Tao so we can start our day.<\/p>\n<p data-testid=\"transcript-caption-78\">[upbeat music]<\/p>\n<p data-testid=\"transcript-caption-79\">All right, welcome to Ying Tao.<\/p>\n<p data-testid=\"transcript-caption-80\">We are a Chinese contemporary restaurant.<\/p>\n<p data-testid=\"transcript-caption-81\">We have about 38 seats and nine at the bar.<\/p>\n<p data-testid=\"transcript-caption-82\">Today, we have Restaurant Week and also our regular menu,<\/p>\n<p data-testid=\"transcript-caption-83\">so it is pretty hectic.<\/p>\n<p data-testid=\"transcript-caption-84\">Restaurant Week is a way for New York restaurants to do,<\/p>\n<p data-testid=\"transcript-caption-85\">I would say, like a cheaper menu, shortened menu,<\/p>\n<p data-testid=\"transcript-caption-86\">three courses for $60 as opposed<\/p>\n<p data-testid=\"transcript-caption-87\">to our regular seven courses for $150.<\/p>\n<p data-testid=\"transcript-caption-88\">This is, we call our Grandma Ying Tao.<\/p>\n<p data-testid=\"transcript-caption-89\">She overlooks us, but this is our owner, Bolun&#8217;s grandma.<\/p>\n<p data-testid=\"transcript-caption-90\">The restaurant&#8217;s named after her.<\/p>\n<p data-testid=\"transcript-caption-91\">We kind of like randomly pray to her,<\/p>\n<p data-testid=\"transcript-caption-92\">ask for good service, less dietary restrictions.<\/p>\n<p data-testid=\"transcript-caption-93\">[light music]<\/p>\n<p data-testid=\"transcript-caption-94\">Okay, so I&#8217;m gonna change to my chef white.<\/p>\n<p data-testid=\"transcript-caption-95\">We just got in our A5 Miyazaki Wagyu flowing from Japan.<\/p>\n<p data-testid=\"transcript-caption-96\">It&#8217;s on our supplements, so it&#8217;s an add-on<\/p>\n<p data-testid=\"transcript-caption-97\">from our regular tasting menu.<\/p>\n<p data-testid=\"transcript-caption-98\">Maybe the side is better, actually.<\/p>\n<p data-testid=\"transcript-caption-99\">Oh my God, this is like $800, you know?<\/p>\n<p data-testid=\"transcript-caption-100\">It&#8217;s crazy.<\/p>\n<p data-testid=\"transcript-caption-101\">So I&#8217;m gonna take this to our dry ager.<\/p>\n<p data-testid=\"transcript-caption-102\">So we have a dry ager because my dream<\/p>\n<p data-testid=\"transcript-caption-103\">is to start a Chinese charcuterie program.<\/p>\n<p data-testid=\"transcript-caption-104\">Kind of put it in.<\/p>\n<p data-testid=\"transcript-caption-105\">Here, I got some things started already.<\/p>\n<p data-testid=\"transcript-caption-106\">Our housemade lap cheong sausage,<\/p>\n<p data-testid=\"transcript-caption-107\">which you typically never see, you always buy.<\/p>\n<p data-testid=\"transcript-caption-108\">Right here, we have some cured pork lap yuk.<\/p>\n<p data-testid=\"transcript-caption-109\">So it&#8217;s like cured pork belly with a lot of spices,<\/p>\n<p data-testid=\"transcript-caption-110\">soy sauce, so it&#8217;s been curing.<\/p>\n<p data-testid=\"transcript-caption-111\">It&#8217;s almost ready.<\/p>\n<p data-testid=\"transcript-caption-112\">You&#8217;ll see in here, this is our black cod that we dry age.<\/p>\n<p data-testid=\"transcript-caption-113\">Preserving and dry aging is like a part,<\/p>\n<p data-testid=\"transcript-caption-114\">integral part of Chinese food and Chinese cuisine.<\/p>\n<p data-testid=\"transcript-caption-115\">Not only does it just preserve the food,<\/p>\n<p data-testid=\"transcript-caption-116\">but it concentrates the flavors.<\/p>\n<p data-testid=\"transcript-caption-117\">And for Chinese food, it&#8217;s all about like layers of flavors.<\/p>\n<p data-testid=\"transcript-caption-118\">There&#8217;s a lot of depth to it as well.<\/p>\n<p data-testid=\"transcript-caption-119\">[light music]<\/p>\n<p data-testid=\"transcript-caption-120\">So this is a black cod.<\/p>\n<p data-testid=\"transcript-caption-121\">We cut it up, dry aged it for a little bit.<\/p>\n<p data-testid=\"transcript-caption-122\">We&#8217;re gonna marinate it.<\/p>\n<p data-testid=\"transcript-caption-123\">This is a ginger scallion marinade,<\/p>\n<p data-testid=\"transcript-caption-124\">blended-up ginger and scallion<\/p>\n<p data-testid=\"transcript-caption-125\">that we a little bit saucing wine.<\/p>\n<p data-testid=\"transcript-caption-126\">So we wanna marinate the fish for about 30 minutes.<\/p>\n<p data-testid=\"transcript-caption-127\">When I transitioned it into fine dining,<\/p>\n<p data-testid=\"transcript-caption-128\">I realized that each dish might seem simple,<\/p>\n<p data-testid=\"transcript-caption-129\">but you need like 20 different layers<\/p>\n<p data-testid=\"transcript-caption-130\">of what makes a perfect dish.<\/p>\n<p data-testid=\"transcript-caption-131\">When I took the job here, it already had one Michelin star,<\/p>\n<p data-testid=\"transcript-caption-132\">so it was a huge transition for me<\/p>\n<p data-testid=\"transcript-caption-133\">because I worked in fine dining before,<\/p>\n<p data-testid=\"transcript-caption-134\">but just as a line cook.<\/p>\n<p data-testid=\"transcript-caption-135\">This is the first time I&#8217;m running<\/p>\n<p data-testid=\"transcript-caption-136\">a Michelin-star restaurant.<\/p>\n<p data-testid=\"transcript-caption-137\">So for me, it was like a huge learning curve.<\/p>\n<p data-testid=\"transcript-caption-138\">We wanna put the black cod just on the bed.<\/p>\n<p data-testid=\"transcript-caption-139\">We don&#8217;t wanna marinate the top<\/p>\n<p data-testid=\"transcript-caption-140\">&#8217;cause I wanna keep it crispy,<\/p>\n<p data-testid=\"transcript-caption-141\">&#8217;cause if we add extra moisture to the top,<\/p>\n<p data-testid=\"transcript-caption-142\">it&#8217;s gonna not be as crispy when we sear it.<\/p>\n<p data-testid=\"transcript-caption-143\">So we&#8217;re gonna leave this for about 30 minutes in the fridge<\/p>\n<p data-testid=\"transcript-caption-144\">and then we&#8217;ll come back to it in a little bit.<\/p>\n<p data-testid=\"transcript-caption-145\">[light music]<\/p>\n<p data-testid=\"transcript-caption-146\">Thanks, Chef.<\/p>\n<p data-testid=\"transcript-caption-147\">Well, now the fish is done.<\/p>\n<p data-testid=\"transcript-caption-148\">I&#8217;m gonna move on to some tomatoes for our scallop dish.<\/p>\n<p data-testid=\"transcript-caption-149\">[light music]<\/p>\n<p data-testid=\"transcript-caption-150\">We start the first course with these refreshing scallops<\/p>\n<p data-testid=\"transcript-caption-151\">with these tomatoes because I want people to open<\/p>\n<p data-testid=\"transcript-caption-152\">their palate with a spicy cake<\/p>\n<p data-testid=\"transcript-caption-153\">and also want them to realize what&#8217;s coming.<\/p>\n<p data-testid=\"transcript-caption-154\">So they&#8217;re either ready for the ride or they&#8217;re not.<\/p>\n<p data-testid=\"transcript-caption-155\">So this is huamei.<\/p>\n<p data-testid=\"transcript-caption-156\">This is preserved plums.<\/p>\n<p data-testid=\"transcript-caption-157\">It&#8217;s really good, I always eat one while we are cooking.<\/p>\n<p data-testid=\"transcript-caption-158\">It&#8217;s kind of like a, it&#8217;s like a salty,<\/p>\n<p data-testid=\"transcript-caption-159\">look at drinking snack.<\/p>\n<p data-testid=\"transcript-caption-160\">I would say that even though I don&#8217;t drink.<\/p>\n<p data-testid=\"transcript-caption-161\">We&#8217;re putting some raw sugar in,<\/p>\n<p data-testid=\"transcript-caption-162\">some lemon peels, water.<\/p>\n<p data-testid=\"transcript-caption-163\">So I&#8217;m gonna grab all that.<\/p>\n<p data-testid=\"transcript-caption-164\">[light music]<\/p>\n<p data-testid=\"transcript-caption-165\">Shit, do we have any more lemons?<\/p>\n<p data-testid=\"transcript-caption-166\">Lemons. Maybe no, right?<\/p>\n<p data-testid=\"transcript-caption-167\">Okay.<\/p>\n<p data-testid=\"transcript-caption-168\">Let me make sure we put it on the order list.<\/p>\n<p data-testid=\"transcript-caption-169\">This is our board for the day<\/p>\n<p data-testid=\"transcript-caption-170\">where everyone puts down their orders, but obviously,<\/p>\n<p data-testid=\"transcript-caption-171\">whoever took the last lemon forgot.<\/p>\n<p data-testid=\"transcript-caption-172\">Super annoying.<\/p>\n<p data-testid=\"transcript-caption-173\">So I&#8217;m gonna put it in now<\/p>\n<p data-testid=\"transcript-caption-174\">so we can make it for tomorrow.<\/p>\n<p data-testid=\"transcript-caption-175\">When life gives you no lemons, you use orange peel.<\/p>\n<p data-testid=\"transcript-caption-176\">Substitutions are like a normal part of every chef&#8217;s day.<\/p>\n<p data-testid=\"transcript-caption-177\">Being able to think on your feet<\/p>\n<p data-testid=\"transcript-caption-178\">and adjust is like super important.<\/p>\n<p data-testid=\"transcript-caption-179\">I mean, I always say my job is problem-solving.<\/p>\n<p data-testid=\"transcript-caption-180\">And babysitting.<\/p>\n<p data-testid=\"transcript-caption-181\">So I&#8217;m gonna put some water in it<\/p>\n<p data-testid=\"transcript-caption-182\">and melt down the rock sugar.<\/p>\n<p data-testid=\"transcript-caption-183\">Using rock sugar because it creates<\/p>\n<p data-testid=\"transcript-caption-184\">a little bit more of a shine.<\/p>\n<p data-testid=\"transcript-caption-185\">It&#8217;s a little bit milder.<\/p>\n<p data-testid=\"transcript-caption-186\">It&#8217;s easier to control.<\/p>\n<p data-testid=\"transcript-caption-187\">I don&#8217;t want it to be too sweet.<\/p>\n<p data-testid=\"transcript-caption-188\">So I&#8217;m gonna peel all these tomatoes<\/p>\n<p data-testid=\"transcript-caption-189\">&#8217;cause we don&#8217;t have a prep cook today.<\/p>\n<p data-testid=\"transcript-caption-190\">So people think it&#8217;s a pain in the ass,<\/p>\n<p data-testid=\"transcript-caption-191\">but I actually really love it.<\/p>\n<p data-testid=\"transcript-caption-192\">It&#8217;s like therapeutic.<\/p>\n<p data-testid=\"transcript-caption-193\">I don&#8217;t have to think about anything.<\/p>\n<p data-testid=\"transcript-caption-194\">I&#8217;m doing the same thing.<\/p>\n<p data-testid=\"transcript-caption-195\">And then it only takes about like five minutes<\/p>\n<p data-testid=\"transcript-caption-196\">before someone yells my name and asks me for something.<\/p>\n<p data-testid=\"transcript-caption-197\">So these tomatoes have been pre-scored and then blanched.<\/p>\n<p data-testid=\"transcript-caption-198\">I tell them to do a little bigger cut<\/p>\n<p data-testid=\"transcript-caption-199\">because marinade also enters the inside as well.<\/p>\n<p data-testid=\"transcript-caption-200\">I wish there was a shortcut to this, but there isn&#8217;t.<\/p>\n<p data-testid=\"transcript-caption-201\">I think that&#8217;s also what makes Michelin-star food.<\/p>\n<p data-testid=\"transcript-caption-202\">You can&#8217;t really do shortcuts.<\/p>\n<p data-testid=\"transcript-caption-203\">Whenever the cooks and I have a free second,<\/p>\n<p data-testid=\"transcript-caption-204\">we&#8217;re peeling tomatoes.<\/p>\n<p data-testid=\"transcript-caption-205\">Right now, it&#8217;s on the Restaurant Week menu,<\/p>\n<p data-testid=\"transcript-caption-206\">so there&#8217;s no free seconds.<\/p>\n<p data-testid=\"transcript-caption-207\">So I&#8217;m trying to help them out today by peeling tomatoes,<\/p>\n<p data-testid=\"transcript-caption-208\">get them started for the day,<\/p>\n<p data-testid=\"transcript-caption-209\">&#8217;cause I think we are at,<\/p>\n<p data-testid=\"transcript-caption-210\">I&#8217;m gonna cry, 74 covers.<\/p>\n<p data-testid=\"transcript-caption-211\">When it&#8217;s not Restaurant Week,<\/p>\n<p data-testid=\"transcript-caption-212\">it&#8217;s probably about like 40 to 50 covers,<\/p>\n<p data-testid=\"transcript-caption-213\">but it just depends of what kind of season we&#8217;re in.<\/p>\n<p data-testid=\"transcript-caption-214\">So I&#8217;m gonna be doing this for the next<\/p>\n<p data-testid=\"transcript-caption-215\">like half an hour to 40 minutes.<\/p>\n<p data-testid=\"transcript-caption-216\">And then I&#8217;m gonna check in on the wontons.<\/p>\n<p data-testid=\"transcript-caption-217\">[light music]<\/p>\n<p data-testid=\"transcript-caption-218\">Okay, so I&#8217;m gonna help Linette.<\/p>\n<p data-testid=\"transcript-caption-219\">So Linette&#8217;s our owner.<\/p>\n<p data-testid=\"transcript-caption-220\">We&#8217;re a little bit shorthanded,<\/p>\n<p data-testid=\"transcript-caption-221\">so she&#8217;s helping us today fold wontons.<\/p>\n<p data-testid=\"transcript-caption-222\">She&#8217;s folding it into a form of a golden nugget.<\/p>\n<p data-testid=\"transcript-caption-223\">It represents prosperity, wealth, so hopefully,<\/p>\n<p data-testid=\"transcript-caption-224\">you&#8217;ll eat our wontons and you&#8217;ll be young and rich.<\/p>\n<p data-testid=\"transcript-caption-225\">Yeah, there are a lot of different wonton folds,<\/p>\n<p data-testid=\"transcript-caption-226\">and this is not the most efficient way.<\/p>\n<p data-testid=\"transcript-caption-227\">[both laughing]<\/p>\n<p data-testid=\"transcript-caption-228\">But we&#8217;re folding it, like chef said,<\/p>\n<p data-testid=\"transcript-caption-229\">into a golden nugget or golden ingot<\/p>\n<p data-testid=\"transcript-caption-230\">because we want to have a prosperous year.<\/p>\n<p data-testid=\"transcript-caption-231\">For Chinese food, it&#8217;s not just about how good it tastes,<\/p>\n<p data-testid=\"transcript-caption-232\">but it&#8217;s about what it represents.<\/p>\n<p data-testid=\"transcript-caption-233\">So the filling is pork, shrimp, and then abalone sauce,<\/p>\n<p data-testid=\"transcript-caption-234\">13 spices, garlic chives, white pepper, salt,<\/p>\n<p data-testid=\"transcript-caption-235\">and then also egg whites.<\/p>\n<p data-testid=\"transcript-caption-236\">So we whip it up so it&#8217;s nice and bouncy.<\/p>\n<p data-testid=\"transcript-caption-237\">So the whole thing is capped off<\/p>\n<p data-testid=\"transcript-caption-238\">with a tablespoon-size pour of our superior stock.<\/p>\n<p data-testid=\"transcript-caption-239\">This is where I would say<\/p>\n<p data-testid=\"transcript-caption-240\">our superior stock gets highlighted the most.<\/p>\n<p data-testid=\"transcript-caption-241\">You can really like taste it,<\/p>\n<p data-testid=\"transcript-caption-242\">and a good tip for when you know<\/p>\n<p data-testid=\"transcript-caption-243\">you have a good Chinese stock<\/p>\n<p data-testid=\"transcript-caption-244\">is like you put your lips together<\/p>\n<p data-testid=\"transcript-caption-245\">and you have that like collagen.<\/p>\n<p data-testid=\"transcript-caption-246\">And if your lips are like sticky and go data-testid=\"transcript-caption-262\">For the beef, we also use it as well<\/p>\n<p data-testid=\"transcript-caption-263\">to mix it in with our veal jus.<\/p>\n<p data-testid=\"transcript-caption-264\">These chickens are really special.<\/p>\n<p data-testid=\"transcript-caption-265\">They&#8217;re heavily corn-fed.<\/p>\n<p data-testid=\"transcript-caption-266\">It&#8217;s really hard to find.<\/p>\n<p data-testid=\"transcript-caption-267\">So these are really essential to why<\/p>\n<p data-testid=\"transcript-caption-268\">our superior stock tastes so good.<\/p>\n<p data-testid=\"transcript-caption-269\">It&#8217;s a lot more fat in it.<\/p>\n<p data-testid=\"transcript-caption-270\">It flavors this stock and makes the stock<\/p>\n<p data-testid=\"transcript-caption-271\">taste so much better and rich.<\/p>\n<p data-testid=\"transcript-caption-272\">This is kinda like a French chicken stock or veal stock.<\/p>\n<p data-testid=\"transcript-caption-273\">We feature it in a lot of different ways.<\/p>\n<p data-testid=\"transcript-caption-274\">If, like, that&#8217;s why it&#8217;s really important<\/p>\n<p data-testid=\"transcript-caption-275\">that Chef Enrique or I make it.<\/p>\n<p data-testid=\"transcript-caption-276\">We don&#8217;t let anyone else touch it<\/p>\n<p data-testid=\"transcript-caption-277\">because if someone gets it wrong or something like that,<\/p>\n<p data-testid=\"transcript-caption-278\">I know it&#8217;s a very simple thing,<\/p>\n<p data-testid=\"transcript-caption-279\">but it&#8217;s also simple to mess up.<\/p>\n<p data-testid=\"transcript-caption-280\">[water pouring]<\/p>\n<p data-testid=\"transcript-caption-281\">We get chicken feet as well<\/p>\n<p data-testid=\"transcript-caption-282\">because it&#8217;s all about that collagen.<\/p>\n<p data-testid=\"transcript-caption-283\">I want all that gelatinous body into this stock.<\/p>\n<p data-testid=\"transcript-caption-284\">So now we&#8217;re gonna do a first blanch of that.<\/p>\n<p data-testid=\"transcript-caption-285\">So we wanna bring it up to a boil really quickly.<\/p>\n<p data-testid=\"transcript-caption-286\">You see this superior stock, he started last night.<\/p>\n<p data-testid=\"transcript-caption-287\">This one is almost ready to go.<\/p>\n<p data-testid=\"transcript-caption-288\">You see that yellow fat on top?<\/p>\n<p data-testid=\"transcript-caption-289\">That&#8217;s because of the corn-fed chickens.<\/p>\n<p data-testid=\"transcript-caption-290\">We end up using that to flavor rice.<\/p>\n<p data-testid=\"transcript-caption-291\">So that&#8217;s like something that you should never throw away.<\/p>\n<p data-testid=\"transcript-caption-292\">This is going, we&#8217;re gonna leave it<\/p>\n<p data-testid=\"transcript-caption-293\">until I bring it to a boil.<\/p>\n<p data-testid=\"transcript-caption-294\">For my R&amp;D project right now,<\/p>\n<p data-testid=\"transcript-caption-295\">I don&#8217;t really have that much time or patience,<\/p>\n<p data-testid=\"transcript-caption-296\">but I&#8217;m gonna challenge myself and make my own ager<\/p>\n<p data-testid=\"transcript-caption-305\">&#8217;cause it&#8217;s a little bit too cold.<\/p>\n<p data-testid=\"transcript-caption-306\">Century egg is a fermented egg,<\/p>\n<p data-testid=\"transcript-caption-307\">so it&#8217;s usually buried in clay and ash,<\/p>\n<p data-testid=\"transcript-caption-308\">and there&#8217;s, like, it&#8217;s just a natural fermentation process.<\/p>\n<p data-testid=\"transcript-caption-309\">My R&amp;D project right now<\/p>\n<p data-testid=\"transcript-caption-310\">is just making it a little bit crystal, so it&#8217;s clear.<\/p>\n<p data-testid=\"transcript-caption-311\">I don&#8217;t want it to be, like, black.<\/p>\n<p data-testid=\"transcript-caption-312\">So I figured out that if I&#8217;m able to ferment it<\/p>\n<p data-testid=\"transcript-caption-313\">a little bit less, it won&#8217;t turn black on the outside<\/p>\n<p data-testid=\"transcript-caption-314\">and a little bit more palatable and visually appealing.<\/p>\n<p data-testid=\"transcript-caption-315\">I&#8217;m just washing one off to check it.<\/p>\n<p data-testid=\"transcript-caption-316\">I just wanna see what it looks like on inside,<\/p>\n<p data-testid=\"transcript-caption-317\">how many more days, when it&#8217;s time for a chicken anyway.<\/p>\n<p data-testid=\"transcript-caption-318\">Oh, okay.<\/p>\n<p
