The Maker\/Facebook<\/p>\n<p>First up was Serre, a gourmet nook located in a glass conservatory in Hudson\u2019s boutique Maker Hotel, just a two-hour\u2019s drive north of NYC.<\/p>\n<p>This hotel hotspot is the brainchild of chef Jonas Offenbach, an alumnus of the famed Gramercy Tavern <a href=\"https:\/\/www.thedishing.com\/content\/chefjonasoffenbach-serre\" target=\"_blank\" rel=\"noopener nofollow\">who envisioned Serre as<\/a> a culmination of everything he learned during his travels and career.<\/p>\n<p>The result is a rotating mosaic of French-inflected seasonal dishes such as warm potato dauphine topped with cool mackerel and horseradish and East Coast oysters accentuated with black plum and elderflower vinegar.<\/p>\n<p>Serre is housed in a light-filled glass conservatory. Fields Restaurant in Skaneateles<\/p>\n<p>Situated in the uppercrust enclave of Skaneateles \u2014 where properties can run upwards of $20 million \u2014 this restaurant stays true to its local roots by sourcing ingredients from the surrounding region and elevating them with French and Italian techniques.<\/p>\n<p>Chef Esparanza Guzman\u2019s specialties include a bronzed chicken aged for two days with koji (fermented rice powder), and a refreshing fennel-and-greens salad adorned with edible flowers picked right outside the restaurant.<\/p>\n<p>These are washed down with wines exclusively sourced from the Finger Lakes region.<\/p>\n<p>These NY eateries occupy rarified air alongside the likes of Amber Terrace, the new cocktail bar and restaurant at the Leela Palace in Jaipur, and Marcus Samuelsson\u2019s eponymous restaurant in the Morrow Washington DC, Curio Collection by Hilton.<\/p>\n<p>Travel &amp; Leisure experts compiled the elite 25 from a staggering 120 hotel restaurants and bars (including cruise ship and train dining halls), spanning 17 countries.<\/p>\n<p>Their conclusion was that \u201chotels have seriously upped their culinary game.\u201d<\/p>\n","protected":false},"excerpt":{"rendered":"If you can bake it here, you can bake it anywhere.
