George Switzer runs the family business, and he believes that the pasta extruder they use every day is from 1909. It’s not the easiest approach. When a machine breaks, the business needs backup motors, belts, and gears, including custom-made parts. But it works for Queen Ann, which brings in nearly $2 million a year. <\/p>\n

\n How does a Brooklyn ravioli company bring in nearly $2,000, 000 a year using a pasta machine from 1909? Queen Anne Ravioli was founded in 1972. Today, George Switzer runs the family business with machinery that is decades old, including what he believes is the only 1909 pasta extruder used daily in the US. This old school approach comes with real costs. The company spends 25 to $35,000 a week on ingredients and other consumables, including thousands of pounds. Flower and cheese. Switzer needs backup motors, belts, gears and custom made parts to keep production moving. Still, Queen Anne produces 1500 to 2000 boxes of ravioli a day and more than one million boxes a year. About 75% of its business is wholesale, supplying stores and other brands. So you may have eaten Queen Anne ravioli without knowing it. Switzer knows he can’t compete with big pasta brands when it comes to scale. Instead, he’s built a business around quality, consistency and a product that keeps customers.
