Maybe $8 at the farmers market. Maybe $12 at the bakery everyone swears by.

But $60? That’s a whole different conversation.

That’s exactly the price tag that sent New Yorkers into a frenzy this fall, when an Austrian bakery opened its first U.S. shop and started selling one very large, very serious loaf of sourdough rye bread.

The reactions poured in fast. Some people called it outrageous. Others got in line to try it. And plenty of people online just wanted to know one thing: Is any bread really worth that much?

The answer depends on what you’re paying for. Spoiler: It’s not just flour and water.

What is RYE by Martin Auer?

It’s a New York City bakery from Austrian baker Martin Auer, and it’s the brand’s first location in the U.S.

RYE by Martin Auer opened Sept. 10, 2026, at 285 Lafayette Street. The menu centers on one star product: a 3.3-pound loaf of 100% rye sourdough bread made with a family starter that’s 57 years old.

Why does RYE’s sourdough rye bread cost $60?

Mostly because it takes a long time to make, and it’s made in one of the priciest cities in the world.

The sourdough needs at least 24 hours of prep, co-owner Tim Auer told People. After baking, each loaf rests for another eight to 12 hours before it can be sold.

RYE also brings in organic rye flour from Austria and bakes every loaf on-site in SoHo, where New York rents and operating costs add up quickly. For comparison, a similar large rye loaf from Martin Auer goes for about €12 to €14 in Austria, or roughly $13 to $16.

Can you buy a smaller loaf at RYE?

Yes, and most people do. A quarter loaf costs $15, and a half loaf costs $30.

General Manager Sophie Aulitzky and COO Linda Spann say the full loaf is bigger than many people expect. “You get a lot of bread for your money, almost 1.5 kilograms. Most customers do not buy the entire loaf anyway; the quarter loaf is by far the most popular option,” they told Advantage Austria.

Even so, $15 for a quarter is steep by most standards.

Why did the $60 rye bread go viral?

The price is the hook. A $12 loaf likely wouldn’t have flooded TikTok with reviews and reaction videos, but a $60 one gave people something to debate and a reason to see it for themselves.

Rick Camac, executive director of industry relations at the Institute of Culinary Education, told The Guardian that viral luxury foods often become a form of social currency. “It’s a conversation piece,” he said, noting that some customers enjoy the “bragging rights” that come with trying the latest buzzy item.

The strategy seems to be working. Soon after opening, Tim Auer told People the bakery had “almost sold out every day.”

What is it like to visit RYE in NYC?

It’s designed to feel like more than a quick bread run. Customers can watch the bakers at work and sit down to eat slices on-site.

“We really wanted to create a place for people to slow down and to have an experience, to not only taste the bread, but also see it, and smell it, and hear it essentially being baked,” Tim Auer said.

The bakery’s “Spreads on RYE” menu pairs slices of the rye sourdough bread with a variety of toppings. Staff also explain how the bread is made, stored and sliced. “Americans are still learning to appreciate the kind of bread culture that exists in Austria,” Aulitzky and Spann told Advantage Austria.

Is RYE’s sourdough rye bread actually good?

Some critics think so. In a blind taste test by Food & Wine, Finland-born associate director of digital production Elsa Säätelä singled out RYE’s loaf.

“To me, this is how a rye bread is supposed to taste,” she said. “This is the only bread out of the four that I would classify as rye bread.”

Will the $60 bread hype last?

That’s the big question. Curiosity can fill a line for a few weeks, but once everyone who wanted to try it has checked it off their list, RYE will need repeat customers.

Its best bet is everything beyond the price: the on-site experience, the family history behind the starter and a loaf that at least some critics say tastes like the real thing.

This article was created by content specialists using various tools, including AI.

Related Stories from Kansas City Star

                Ryan Brennan

                    Trend Hunter

Ryan Brennan is a content specialist working with McClatchy Media’s Trend Hunter and national content specialists team.

Freshly baked sourdough bread is held in a woman’s hand thodsaph Getty Images Most of us have paid…

[8
9,24,55,54,56
post-377473","post","type-post","status-publish","format-standard","has-post-thumbnail","category-new-york-city","tag-new-york","tag-new-york-city","tag-new-york-city-headlines","tag-new-york-city-news","tag-ny
["GET
