LEHIGH TWP., Pa. – A new fast-casual spot is offering omelettes, cheesesteaks, smashed burgers and more in Northampton County.
The Lunchbox, serving made-to-order specialties for breakfast and lunch via a drive-thru and walk-up window, held a soft opening on Tuesday at 4685 Lehigh Drive in Lehigh Township, operator Luis Cortes told 69 News.
The site was previously home to another eatery, The Junction.

Lunchbox orders for pickup or delivery can be placed online at thelunchbox248.com, and customers also can call 484-949-0623, Cortes said.
While The Lunchbox focuses on takeout service, outdoor tables are also available for on-site dining during nice weather.
“Right now, everything’s covered in snow,” Cortes said with a laugh. “But when it’s nice out, yes, we have a couple of tables that people can use.”
The Lunchbox offers its full breakfast and lunch menu during its operating hours of 7 a.m. to 4 p.m. Monday through Saturday, Cortes said.
Omelettes, $10-$11, include options such as Mexican chorizo, veggie garden and The Lunchbox (cheddar, onions, peppers, bacon and sausage). All omelettes are served with breakfast potatoes.

Customers also can enjoy egg and cheese breakfast sandwiches ($5-$6; served on Kaiser roll or bagel) with optional bacon, sausage or ham; and signature items ($9-$10) such as a breakfast cheesesteak (steak, scrambled eggs, American cheese and grilled onions on a 6-inch roll), breakfast quesadilla (10-inch flour tortilla with scrambled eggs, cheddar cheese, bacon, pico de gallo and sour cream) and big griddle breakfast bowl (scrambled eggs, breakfast potatoes and bacon or sausage).
Other menu highlights include cheesesteaks (steak or chicken) such as The Mushroom Melt (sauteed mushrooms, onions and provolone cheese), Peppers & Onions Philly (grilled peppers and onions and American cheese) and The Triple Cheese (onions, American cheese, provolone and cheddar); smashed burgers (served on brioche roll with fries) such as the BLT Smash (crispy bacon, lettuce, tomatoes, American cheese and Lunchbox mayoketchup) and Spicy Jalapeno (pepper jack cheese, jalapenos and spicy chipotle aioli); and loaded fries such as cheeseburger loaded fries, cheesesteak loaded fries and South American loaded fries (fries, fried hot dog, American cheese and Lunchbox mayoketchup drizzle).
There are also sides such as chicken tenders, onion rings and mozzarella sticks; and drinks such as coffee, hot or iced tea, orange juice and soda.
