One of the most unique bakeries to hit New Jersey in years launched in the late summer to big accolades and long lines as Panaderya Salvajē has become a quick hit with locals.
The new business, situated at 9 Erie Street, is run by Nicu Dalman. A self-taught baker from the southern Philippines, a profile from The Bread Bakers Guild of America highlighted his Malay and coconut-forward concoctions that use authentic ingredients like ube and calamansi.
Panderya Salvajē had operated as a pop-up endeavor around Jersey City in recent years, finally launching their brick-and-mortar space in August. The lines outside the bakery lessening might actually be a good thing, as the business would regularly sell out of many of their items before close.

A clear highlight at Panderya Salvajē is their croissant, which is filled with coffee pastry cream then dipped in an ube white chocolate ganache. The bakery is not all desserts, however, as their Chorizo egg and cheese pudpod (or Danish), has also been a hit.
Other unique Filipino delicacies at the bakery include an Igado Pot Pie, a northern Filipino dish consisting of puff pastry stuffed with pork and liver, green peas, and bell peppers. Sausage and gruyère on cross-laminated croissant dough is also a highlight.
Panderya Salvajē is closed Monday through Wednesday, but open starting at 7 a.m. on Thursdays and Fridays, with weekend hours starting at 8 a.m. The bakery is open until noon or until they sell out, whichever comes first. They can be followed on Instagram at the handle @panaderyasalvaje.
