The former head chef at the now-closed seafood restaurant Adagio has brought his expertise and several popular dishes to another Bethlehem eatery.

Dan Spinosa, who spent a decade at Adagio, is the new head chef for Sotto Santi at 10 W. Fourth St.

Adagio customers will recognize new food items on the menu, including all-you-can-eat crab legs (available 5-9 p.m. Monday through Wednesday); “Peel N’ Eat Shrimp” with cocktail sauce; sliced tuna; the chicken, bacon and ranch sandwich; and the “Black and Blue Burger” with Cajun seasoning, blue cheese crumble, bacon and garlic aioli.

“I have a great relationship with the owners here,” said Spinosa, who worked off and on at Sotto Santi during his time at Adagio. “They take care of me, I try to take care of them, and it’s just very cohesive. So it made sense just to come over here.”

Other dishes include pizza, wraps, pasta and stromboli.

Anthony Spagnola, who owned Adagio, co-owns Sotto Santi with Michelle Wozniak and Robert Marin, who are engaged. The Adagio property at 530 Pembroke Road was sold to the Bethlehem Fraternal Order of Police, who plan to create a wellness center and meeting space for officers.

“We all work really well together,” Martin said. “Anthony was a great mentor, it’s just a new experience.”

Spagnola explained that Sotto Santi, which he took over a few years after it opened in 2003 as Casa Mia, has the same staff that Adagio had.

“It feels wonderful, to be able to keep everyone employed, being mindful that they can come over here and accentuate on those items that work so well over there,” he said. “Just having everyone cohesive over here, like a little family.”

Wozniak, who became a co-owner in 2023 after nearly 20 years of working at Sotto Santi, said, “I have great relationships with my now employees there — my friends and also my employees — so it was a little hard for me at first to get over that hurdle of trying to change from coworker to co-owner, but things are great. We have a great family here. Everyone that works with me and for me, I call my sisters and brothers or my daughters pretty much at this point, since I’m the oldest one here, but everything’s been great. We’re all trying to just hustle and bustle and make the money.”

Alongside the new menu items, customers can look forward to new paint work, new tables and new chairs, Wozniak said.

The restaurant is open 11 a.m. to 11 p.m. Monday through Wednesday and 11-2 a.m. Thursday through Sunday.

Lehigh Valley retail and restaurant news in brief

Weyerbacher Brewing Co. announced it will close on March 29 at 518 Bank St. in Emmaus, nearly two years after it opened.

The Hive crafts market has closed retail operations due to cash flow issues at 27 E. Belvidere St. in Nazareth and Promenade Saucon Valley in Upper Saucon Township.

The vintage clothing and decor store Room & Ward Vintage announced it will reopen March 7 after it relocates from 26 N. Sixth St. in Allentown to the larger 21 N. Seventh St. space.

Whitehall Deli & Grocery will announced it will open soon at 3001 S. Second St. in Whitehall Township.

The New Jersey-based Inspire Suites will open a new location in April or May at the Nazareth Plaza at 859 Nazareth Pike in Lower Nazareth Township, owner Alice DiGiambattista said. It will allow people to rent space for providing clients services like haircuts, coloring and massage therapy.
