EASTON, Pa. – A new restaurant will soon serve up a taste of the tropics in Northampton County.

Carlitos Cuchifritos & Cubanos, specializing in Puerto Rican cuisine and also offering Cuban and Dominican dishes, is set to open July 18 at 1213 Washington St. in Easton, owner and chef Carlos Rodriguez told 69 News.

Carlitos, offering takeout, delivery and catering, will occupy an updated space that previously housed Radical Rations featuring Madam Mac, a soul food business that is continuing to operate via a mobile format.

Rodriguez has more than 25 years of experience in the food service industry, having worked at various dining establishments in New York City and other major cities since 2001.

At Carlitos, he plans to offer freshly prepared sandwiches and other handhelds, including cheeseburgers, chopped cheese and Cuban sandwiches, along with sides and snacks such as tostones, chicken wings, pork rinds, French fries, alcapurria and rellenos de papa (stuffed potato balls).

Other menu highlights will include combos such as seasoned baked flounder with fries; breakfast sandwiches, including egg and cheese with bacon, sausage or ham; and a wide array of pastelillos, including beef, beef and cheese, chicken, chicken and cheese, shrimp, octopus, seafood mix, cheese and pizza.

Pastelillos will start at $2.20, and breakfast sandwiches will start at $3.25.

“I’m very excited,” Rodriguez said. “We’re dedicated to the community and making everything affordable for them. We’ll also be running some really good specials, like rice and beans with steak or chicken, on the weekends.”

Carlitos is tentatively set to operate 7 a.m. to 2 p.m. Mondays, 7 a.m. to 8 p.m. Tuesdays, 7 a.m. to 2 p.m. Wednesdays, 7 a.m. to 8 p.m. Thursdays and 7 a.m. to 9 p.m. Fridays and Saturdays, Rodriguez said.
