EAST ALLEN TWP., Pa.- A third-generation butcher is bringing his skills to a brand-new shop in Northampton County.
Jeremy Scavazzo, along with his wife, Allison Scavazzo, will open Scavazzo’s Gilded Cleaver at 5751 Nor-Bath Boulevard in East Allen Township.
The couple closed on the sale of the three-unit strip mall this week. It previously was home to two businesses, a resale boutique and an HVAC company. The property is adjacent to Seiple Farms.

For now, the Scavazzos are swinging hammers instead of meat cleavers as they work to convert the space to one large shop. A grand opening is planned for the fall.
According to the business’s website, Jeremy learned the butcher craft at his grandfather’s shop, Dottie Lou Meats & Catering in Tunkhannock, Pennsylvania.
His new storefront will be a modern take on a classic butcher shop, featuring beef, pork, and poultry, cut fresh to order; sausages made in-house; lunch meats; and smoked favorites like kielbasa, bacon, and jerky.
Eventually, Scavazzo hopes to expand its offerings to take-home prepared meals, charcuterie boards, butcher boxes, holiday orders, and more.
The name Gilded Cleaver is symbolic; the cleaver represents the trade and honest work done by hand, while “gilded” is the standard the couple will hold it to. “Nothing leaves our counter that we wouldn’t put on our own table,” the website reads.

While Jeremy mans the counter, Allison, who works in accounting and finance, will manage the books for the shop. Or, to steal a phrase from their website: “Jeremy handles the meat, Allison handles the math.”
Mario and Nicholas D’Egidio of Coletta Commercial Realty represented both the buyer and the seller in the real estate transaction. They opened their new office in Bushkill Township last year.
