BETHLEHEM, Pa. – It’s a food challenge running all month long in the Lehigh Valley, with chefs coming up with unique dishes for customers to vote on.
But here’s the twist — it’s all plant-based.

Marybelle Fayad, Vice President of Animal Defenders Greater Lehigh Valley and a vegan chef challenge organizer, said 12 restaurants are participating in the monthlong event. They’re creating anywhere between one and three vegan dishes.
Animal Defenders Greater Lehigh Valley teamed up with Vegan outreach for the event, she said.
The challenge is in its second year.
Brendan Breslin, Owner of Wishful Thinking Brewery, which has locations in Bethlehem and Riegelsville, said the eatery has always offered vegan options for its pizzas. The brewery is adding two more vegan options for the months of September: a vegan BLT pie and a summer squash salad.
He said the brewery’s mission is to offer great pizza, great food, and great beer made with local ingredients.
Shelby Ringer, Head Chef and Kitchen Manager at Wishful Thinking Brewery, said the restaurant is highlighting local produce and partnerships with local farms and getting to show people that they can have more than one option on the menu.

It’s only been over a week, but more than 60 votes have already been cast, Fayad said.
