Here are the food safety inspection reports from Lehigh and Northampton counties, conducted the week of March 15.
Each week, we highlight the inspection reports provided through the Pennsylvania Department of Agriculture. The department performs the inspections in many areas, while some municipalities such as Allentown and Bethlehem conduct their own inspections.
All establishments are inspected once per year, and inspectors may return several more times if the initial inspection is not passed or complaints are received. (For more information on how food safety inspections are conducted in Pennsylvania, view a list of FAQs.)
As noted by the Department of Agriculture, the reports are merely a “snapshot” in time, and they may not be representative of the restaurant’s long-term condition. Many of the violations are corrected on the spot prior to the inspector leaving the establishment.
If a food provider is considered “out of compliance,” that means it has one or more violations that require a return visit by an inspector. The establishment is given time to fix the violations and remains open for business.

The wire shelving units in the kitchen require cleaning. Clean all of the wire shelving units.
Food employees are eating in the kitchen as evidenced by plates of partially consumed food which were observed in the pizza preparation area. Employees may not eat in food preparation areas. Discontinue this practice immediately.
Food dispensing utensils in breading and seasoning were observed stored in the food and not with handle above the top of the food and the container. All utensils must have handles and be stored correctly.
Soap was not available at the handwash sink in the kitchen due to a broken soap dispenser. Replace this dispenser.
Garlic butter was held at room temperature, on the cook line, rather than 41° F or below as required. Garlic butter is temperature control for safety product (TCS). This product shall be discarded after four hours of storage at room temperature or kept below 41° F as required.
The vents on two fryers were observed to have a build up of old grease and food residue on them. Clean them and maintain these fryers in a clean and sanitary condition.

Food employees observed in the Produce Department area not wearing proper hair restraints, such as nets, hats, or beard covers. *Corrected on-site. Managers talked with employees and proper hair restraints were placed.
Food facility water heater is not producing enough hot water to supply the restroom sinks at the time of this inspection. *Manager explained that bathroom sink remodels (and other store remodels) will be happening very soon, and sinks will be replaced with better functioning units to allow for proper hot water for customers and employees. *All food employees are required to wash their hands at the designated food department handwash sinks prior to returning to food tasks, and will continue this process to ensure food safety.
Three-bay sink sanitizer units at multiple food department locations are dispensing sanitizer at too high of a level (over 400ppm) straight from the hoses connected to the units at the time of this inspection. *Corrected on-site. Food employees will make sure to add adequate water amounts to the three-bay sink sanitizer bays, as well as buckets with rags for sanitizer, to bring the sanitizer solution to proper 200-400 ppm levels, and will verify with QAC/QR test strips for appropriate levels. A service call will be made to the Sanitizer/Chemical company for the three-bay sinks to correct the overall issues ASAP.
