EASTON, Pa. – A new destination for street tacos, tortas and other Mexican favorites is satisfying appetites in Northampton County.
Tia B’s Street Tacos, offering authentic, hand-crafted tacos, quesadillas and other Mexican street food, opened last week at 118 Northampton St. in downtown Easton, co-owner Bridget Lauer told 69 News.

“We’re super excited,” said Lauer, who’s operating the business with her husband, Chris Quintile. “We’ve always admired Easton. It has great events, great people and great vibes, and now we’re going to be in the middle of it all.”
Lauer established Tia B’s in spring 2022 with a single food trailer, and a second Tia B’s mobile unit was added to the operation in 2024.
Additionally, Lauer and Quintile operated a former brick-and-mortar location of Tia B’s for a couple of years in Glen Gardner, New Jersey before closing that eatery in December to prepare for the new Easton spot.
Lauer and Quintile recently moved to Palmer Township from Glen Gardner, and they found downtown Easton’s vibrant business scene to be a perfect spot for Tia B’s new homebase.

“We had sold our house in Glen Gardner and were looking for another house, but it was so difficult to find anything in New Jersey, and so we thought, ‘Let’s just take a peek over in the Easton area,’” Lauer said.
“We happened to find a lovely house in Palmer and decided this is where we want to be. We then learned that there was this commercial space in Easton that was available, and things just kind of quickly happened from there. So, we’ll have our new shop in Easton, and we’ll also still have our food trucks. We plan to be involved in a lot of the community events, and we also do private events and catering.”
Tia means aunt in Spanish, and Tia B’s is named after Lauer as she is an aunt to several nieces and nephews.
Lauer and Quintile are both passionate about cooking, with Quintile having previously worked as a chef at The Tewksbury Inn in New Jersey for roughly 20 years.

“We started the food truck as a part-time hustle, and then it kind of took over both of our lives,” Lauer said with a laugh.
“The following year, we ended up getting fully booked, and I left my full-time job in the corporate world to be a taco truck person, which is great because I love cooking, people and Mexican food and culture. My husband eventually also left his job to help me, and now we run the business together.”
The forthcoming Easton shop occupies an updated space that was previously home to other food-centric businesses, including Khanisa’s Pudding Bar and, most recently, Doughpamine by Cake & Corolla.
Tia B’s customers can choose from a variety of street tacos, burritos, quesadillas and more.

Street tacos, two for $10, include your choice of pollo (chicken), carnitas (pork), chorizo (sausage), barbacoa (beef) or vegetables, along with fresh onion, cilantro, green salsa and a lime wedge on warm corn tortillas.
Specialty street tacos, two for $12, include birria (slow-cooked beef with a rich blend of spices and herbs, nestled into corn tortillas and cheese, which are grilled until crispy and golden, served with dipping broth), Tia B’s pescado (gentle white fish, lightly seasoned with salt, pepper, lime and garlic, complemented by Tia B’s coleslaw, featuring a touch of spice and honey) and al pastor (savory-sweet experience, with a smoky, slightly spicy and tangy profile, with a hint of sweetness from the pineapple).

Burrito buffs can enjoy burritos (served on 12-inch flour tortilla with choice of meat and veggie mix), burrito sliders (three mini burritos served on six-inch flour tortillas filled with veggie mix, cheese, choice of meat and side of red salsa) and burrito bowls (choice of meat served on lettuce, veggie mix, cheese, onions, cilantro, red salsa, guacamole, tajin and sour cream, with sweet morita dressing and side of warm flour tortillas).
Other menu highlights include quesadillas, chili nachos, tortas (choice of meat on roll with melted cheese, fresh onions, pickled jalapenos, guacamole, spicy mayo, Tia B’s coleslaw or lettuce) and sides such as Mexican rice, refried beans and elote salad.
The shop is geared toward takeout and delivery customers, but counter seating and a high-top table are available for individuals looking to dine on-site.

The shop is open 11 a.m. to 8 p.m. Tuesday through Thursday, 11 a.m. to 9 p.m. Fridays and Saturdays and 11 a.m. to 7 p.m. Sundays.
Down the line, late-night hours on select days may also be offered if there is demand, Lauer said.

Customers also can purchase Tia B’s hot sauces, $10 per bottle, including Smokey Morita (mild), Sassy Serrano (medium hot) and Hoppin Habanero (medium hot).
