EASTON, Pa. – A beloved Easton cafe re-opens in part.

The State Cafe and Grill is holding a two day pop-up. This, after being closed since mid-February due to fire damage.

‘Here we go again’: Easton restaurant devastated by second catastrophe in 4 years

Inside the Easton Bank Street Annex, pancakes served with a side of resilience, for State Cafe and Grill owner Bill Sneeringer.

“What’s it like to be serving customers again?” 69 News reporter Bo Koltnow asked.

“Good. I’m a little rusty, but it’s going great,” Sneeringer responded.

This Friday and Saturday pop up is the cafe’s and head chef Mel Rake’s first chance to serve customers in months.

“I’ve really missed it. It’s always a challenge working in a kitchen that is not your normal one,” he said.

The Cafe closed Feb. 20, as water from firefighters dousing flames at the nearby Hotel Hampton destroyed much of its inside.

Marking the second time in four years flames left the bitter taste of an extended shutdown for the business.

This two day pop-up is a way to feed customers memories.

“Just what is it about the state cafe that people love so much?” 69 News reporter Bo Koltnow asked customer Shelley Sciabarassi.

“Well, the food is incredible, number one, and you just feel so welcome once you walk into the door, and it’s just a family atmosphere,” she said.

Mickey Pierson and Susan Dalrymple are cafe regulars.

“This kind of pumps the life back into that memory, that we are still here and we will be back,” Dalrymple said.

Jasmeet Bansa owns neighboring restaurant, Aman’s Artisan Indian Cuisine.

“You lose your source of income, not only for the owner but people who work there as well. It’s always great to support pop ups like this, it’s packed on a Friday morning, It’s great to be a part of that,” he said.

For Sneeringer, survival has meant continuing to serve.

“All the people in Easton work together, it’s a beautiful thing,” he said.

The pop up extends into Saturday from 8:00 a.m. to 2:00 p.m..

Work has started inside the cafe. Sneeringer doesn’t know when they will re-open, but he says they will.
