Here are the food safety inspection reports from Lehigh and Northampton counties, conducted the week of May 10.
Each week, we highlight the inspection reports provided through the Pennsylvania Department of Agriculture. The department performs the inspections in many areas, while some municipalities such as Allentown and Bethlehem conduct their own inspections.
All establishments are inspected once per year, and inspectors may return several more times if the initial inspection is not passed or complaints are received. (For more information on how food safety inspections are conducted in Pennsylvania, view a list of FAQs.)
As noted by the Department of Agriculture, the reports are merely a “snapshot” in time, and they may not be representative of the restaurant’s long-term condition. Many of the violations are corrected on the spot prior to the inspector leaving the establishment.
If a food provider is considered “out of compliance,” that means it has one or more violations that require a return visit by an inspector. The establishment is given time to fix the violations and remains open for business.

The fans in the walk-in cooler were observed to have a buildup of dust on them. Clean these fans.
Observed containers of pizza dough and sauce stored directly on the floor in the walk-in cooler, rather than 6 inches off of the floor as required. Ensure all food items are stored at least 6 inches off the floor.
Time in lieu of temperature being used in the food facility to control pizza, a ready-to-eat time/temp control for safety food, without written documentation to verify disposition of food. Keep a time log for verify when pizza was placed out on counter.
Ranch dressing was held at 47° F in the middle Bain Marie on the bottom, rather than 41° F or below as required. Owner stated that this Bain Marie was not functioning properly, and they are waiting on a new unit to come in. Facility is using ice on the top of the Bain Marie to maintain temperature. Move any time/temperature control foods out of the bottom of the Bain Marie until new unit has arrived. –Pizza sauce was held at 48° F, in the back Bain Marie on the bottom, rather than 41° F or below as required. Owner stated that this Bain Marie does not function correctly and they were waiting on parts to repair it. Facility is using ice on the top of the Bain Marie to maintain temperature. Move any time/temperature control food items out of the bottom of the Bain Marie until repairs are done.
Two of the Bain Maries in the food prep area are unable to maintain a temperature of 41° F or below. Facility is using ice on the top portions to maintain proper temperature. Owner stated they are waiting for parts to arrive for one unit and a brand-new unit to replace the other one. Continue using ice to maintain temperature for the time being and keep foods stored in the bottom portion of the Bain Maries in a separate cold hold unit.
The back door leading to the dumpster area was observed to have a gap when closed, which could allow for the entry of pests. Repair this door to ensure protection from pests.
Food facility inspection indicates evidence of rodent activity in the back of the restaurant area. Owner stated that they have a pest control service that comes in regularly for treatment. Continue with treatment and clean the back area to monitor for any increased activity.
