Observed a plastic container of fruit stored in the drink ice at the bar. Corrected. The quaternary ammonia concentration in the sanitizing solution of the 3-bay warewash sink at the bar was 0 ppm. The incorrect sanitizing solution was installed at this sink. The container was replaced with the correct product during this inspection. One set of lights is not working in the dry storage area near the ice machine. Plumbing system not maintained in good repair – observed water leaking from the dipper well drain line. A work order has been submitted to correct this issue. Cheese and sour cream were held at 48 °F, in the cold & hot hold unit at the cooking area, rather than 41°F or below as required. The out-of-temperature products were thrown away, ice was added to the cold well, and new product was added. Floor tiles are missing in front of the fryers and at the walk-in cooler near the back door. The floor in these areas is no longer a smooth, easily cleanable surface. A work order has been submitted to correct this issue. Facility does not have a method to verify the final rinse temperature at the hot water sanitizing dishwasher. Lights are not shielded or shatter proof in the dishwashing area.
