PALMER TWP., Pa. – The husband-and-wife team behind a well-known mobile food business is expanding operations with a new eatery.
Armando and Yesenia Rodriguez, owners of the La Frikitona food truck, offering authentic Puerto Rican specialties, plan to open Chinchorro by La Frikitona in about a month at 2600 William Penn Highway in Palmer Township, Armando told 69 News.

“We are really excited and can’t wait to open,” Armando said. “We started the food truck five years ago, and this will be our first restaurant.”
The fast-casual Chinchorro, offering dine-in and takeout services, will be La Frikitona’s first brick-and-mortar location.
It will offer a menu of Puerto Rican specialties similar to the one offered on La Frikitona’s food truck, which the Rodriguezes plan to continue operating at public and private events, Armando said.

Popular dishes include rice and beans platters, mofongo, tostones and empanadas.
Other menu highlights include alcapurria (Puerto Rican fritter) and canoas (plantains filled with meat and other ingredients).
The restaurant’s menu is still being finalized, but individuals also can expect rotating specials such as loaded baked potatoes and three-meat “tripleta” sandwiches, Armando said.

The Rodriguezes also use the word “tripleta” to describe one of La Frikitona’s meat offerings, featuring a mix of pork, ham and chicken, which they incorporate into various menu items.
The Rodriguezes, Puerto Rican natives who now reside in Salisbury Township, previously helped operate a beachside food stand run by Armando’s father in Puerto Rico over 15 years ago.
Many of La Frikitona’s dishes are made using long-held family recipes.
In Palmer, the couple is updating a former location of Don Juan Mex Grill with new wall paint and other cosmetic touches.
New signage has already been installed, and a new tropical theme is being implemented with vibrant window images depicting vibrant beach scenes, featuring colorful hibiscus flowers, bright blue skies and palm trees.

La Frikitona is named after a popular song by Puerto Rican musical duo Plan B, and chinchorro is a Puerto Rican term that refers to a casual roadside food spot or a food tour or pub crawl, Armando said.
