The department performs the inspections in many areas, while some municipalities such as <a href=\"https:\/\/www.allentownpa.gov\/en-us\/Government\/Departments\/Community-Economic-Development\/Health-Bureau\/Environmental-Field-Services\/Food-Protection-Services\" rel=\"nofollow noopener\" target=\"_blank\">Allentown<\/a> and <a href=\"https:\/\/www.bethlehem-pa.gov\/Health-Bureau\/Environmental\/FOOD-ESTABLISHMENT-INSPECTIONS\" rel=\"nofollow noopener\" target=\"_blank\">Bethlehem<\/a> conduct their own inspections.<\/p>\n<p>All establishments are inspected once per year, and inspectors may return several more times if the initial inspection is not passed or complaints are received. (For more information on how food safety inspections are conducted in Pennsylvania, view a <a href=\"https:\/\/www.agriculture.pa.gov\/consumer_protection\/FoodSafety\/retail-food-inspection-reports\/pages\/default.aspx\" rel=\"nofollow noopener\" target=\"_blank\">list of FAQs<\/a>.)<\/p>\n<p>As noted by the Department of Agriculture, the reports are merely a \u201csnapshot\u201d in time, and they may not be representative of the restaurant\u2019s long-term condition. Many of the violations are corrected on the spot prior to the inspector leaving the establishment.<\/p>\n<p>If a food provider is considered \u201cout of compliance,\u201d that means it has one or more violations that require a return visit by an inspector. Store raw chicken below raw pork. \u2013Several items in the meat area walk-in cooler were not being stored according to proper hierarchy. Observed raw chicken over whole limes, raw pork, and raw beef as well as raw whole meat cuts being stored over smoked and preserved meat products. From top to bottom, store limes over smoked and preserved meat products, over whole cuts of pork and beef, over chicken.<br \/>\nWater was dripping from ceiling in active prep area of meat walk-in cooler. Operator stated this was due to a water heater in disrepair. Operator stated a repair person was onsite to correct issue. \u2013Observed employee\u2019s soiled apron being stored on packages of raw pork. Store employee personal belongings away from food products to prevent contamination.<br \/>\nCeiling of meat walk-in cooler was in disrepair. Repair ceiling to be sealed, smooth, and easily cleanable.<br \/>\nA fruit preparation and packaging area was observed in the loading area of the facility and lacks a convenient handwash sink. Move fruit preparation area to a part of the facility serviced by a handwash sink.<br \/>\nInterior walls, plastic curtains, and floor of meat walk-in cooler were observed with accumulation of residue. Clean and maintain these areas.<br \/>\nFood facility does not provide lockers or storage for food employee personal food and possessions as evidenced by employee food and possessions being stored at fruit preparation area. Provide area for employees to store personal belongings and food separate from food facility\u2019s product.<br \/>\nMeat slicer, a food contact surface, was observed to have food residue and was not clean to sight and touch. Wash, rinse, and sanitize all food contact surfaces after each use.<br \/>\nThe handwash sink in the meat prep walk-in cooler was blocked by a trashcan and not accessible at all times for employee use. Ensure handwash sinks are always accessible.<br \/>\nMouse droppings observed in rear storage area. Area could not be inspected further due to accumulation of backstock. Organize backstock to prevent rodent harborage and clean droppings to allow for activity monitoring.<br \/>\nDrain for handwash sink in meat preparation area of walk-in cooler was backed-up and causing pooling on the floor.
