The former head chef at the now-closed seafood restaurant Adagio<\/a> has brought his expertise and several popular dishes to another Bethlehem eatery.\n<\/p>\n

Dan Spinosa, who spent a decade at Adagio, is the new head chef for Sotto Santi at 10 W. Fourth St.\n<\/p>\n

Adagio customers will recognize new food items<\/a> on the menu, including all-you-can-eat crab legs (available 5-9 p.m. Monday through Wednesday); \u201cPeel N\u2019 Eat Shrimp\u201d with cocktail sauce; sliced tuna; the chicken, bacon and ranch sandwich; and the \u201cBlack and Blue Burger\u201d with Cajun seasoning, blue cheese crumble, bacon and garlic aioli.<\/p>\n

\u201cI have a great relationship with the owners here,\u201d said Spinosa, who worked off and on at Sotto Santi during his time at Adagio. \u201cThey take care of me, I try to take care of them, and it\u2019s just very cohesive. So it made sense just to come over here.\u201d<\/p>\n

Other dishes include pizza, wraps, pasta and stromboli.<\/p>\n

Anthony Spagnola, who owned Adagio, co-owns Sotto Santi with Michelle Wozniak and Robert Marin, who are engaged. The Adagio property at 530 Pembroke Road was sold to the Bethlehem Fraternal Order of Police,<\/a> who plan to create a wellness center and meeting space for officers.<\/p>\n

\u201cWe all work really well together,\u201d Martin said. \u201cAnthony was a great mentor, it\u2019s just a new experience.\u201d<\/p>\n

Spagnola explained that Sotto Santi, which he took over a few years after it opened in 2003 as Casa Mia, has the same staff that Adagio had.<\/p>\n

\u201cIt feels wonderful, to be able to keep everyone employed, being mindful that they can come over here and accentuate on those items that work so well over there,\u201d he said. \u201cJust having everyone cohesive over here, like a little family.\u201d<\/p>\n

Wozniak, who became a co-owner in 2023 after nearly 20 years of working at Sotto Santi, said, \u201cI have great relationships with my now employees there \u2014 my friends and also my employees \u2014 so it was a little hard for me at first to get over that hurdle of trying to change from coworker to co-owner, but things are great. We have a great family here. Everyone that works with me and for me, I call my sisters and brothers or my daughters pretty much at this point, since I\u2019m the oldest one here, but everything\u2019s been great. We\u2019re all trying to just hustle and bustle and make the money.\u201d<\/p>\n

Alongside the new menu items, customers can look forward to new paint work, new tables and new chairs, Wozniak said.<\/p>\n

The restaurant is open 11 a.m. to 11 p.m. Monday through Wednesday and 11-2 a.m. Thursday through Sunday.<\/p>\n
