Root &amp; Sprig was developed to provide nutritious meals and comfortable service within healthcare facilities, and the Penn location will be the brand\u2019s first with a fully designated dining space.<\/p>\n<p>\u201cWe created this concept in 2019 specifically for people in medical field \u2014 students, doctors, physicians, nurses, researchers, administrators,\u201d Root &amp; Sprig Co-Founder and Vice President of Finance Maryrose Galvez told The Daily Pennsylvanian. \u201cWe saw a need for restful and more joyful environments within hospitals, schools, with service that\u2019s a lot more attentive \u2014 something you could get in a full service dining experience, but in a fast casual setting.\u201d<\/p>\n<p>Root &amp; Sprig currently operates a location at Penn\u2019s Clifton Center for Medical Breakthroughs. According to Galvez, the University City space was designed as \u201ca place to gather students and administrators.\u201d<\/p>\n<p>\u201cWe\u2019re incredibly excited about our partnership and upcoming location at Penn,\u201d Root &amp; Sprig Co-founder and CEO Dan Guaricci wrote in a press release. The new space will allow the company to offer \u201cchef-inspired meals alongside a space designed for rest, conversation, and connection,\u201d he added.<\/p>\n<p>Founded by \u201cTop Chef\u201d judge Tom Colicchio and hospitality group One Goal Hospitality, Root &amp; Sprig operates fast-casual dining concepts primarily in healthcare and research settings.<\/p>\n<p>Colicchio \u2014 a James Beard Award-winning chef and longtime head judge on \u201cTop Chef\u201d \u2014 wrote that the concept aims to improve dining options in healthcare and educational environments.<\/p>\n<p>\u201cMany school and healthcare systems fall short in delivering nutritious meals and attentive, compassionate service,\u201d Colicchio wrote in the release. \u201cA meal should do more than simply meet basic needs \u2014 it should nourish the body and support overall well-being.\u201d<\/p>\n<p>According to the release, the restaurant\u2019s menu will include breakfast items, wraps, sandwiches, salads, soups, and a\u00e7a\u00ed bowls as well as vegan, vegetarian, and gluten-free options.
