Pittsburgh, Pennsylvania, is known as a lot of things: the City of Bridges, thanks to its more than 400 bridges; the City of Champions, thanks to its championship-winning sports teams<\/a>; and the Steel City, thanks to its deep roots in America’s steel industry. However, when I tell people I think Pittsburgh is one of the greatest food cities in the world, they tend to think I’m joking.<\/p>\n

I’ve lived in New York City, London, the Midwest, and the South, and visited hundreds more cities and countries around the world, but growing up in Pittsburgh ruined me for a lot of food. I’ll stand by the fact that Pittsburgh, specifically from Fiori’s restaurant, has the best pizza of any city\u2014and I’m in good company, since actor Joe Manganiello agrees<\/a>. Pittsburgh is the birthplace of Heinz ketchup<\/a>, it’s the hometown of Mrs. T’s pierogies<\/a>, and it’s where Klondike bars originated<\/a>. Plus, we put french fries on everything<\/a>, dedicate entire tables to cookies at weddings<\/a>, and have our own brand of Sarris’ chocolate-covered pretzels that even former NFL star JJ Watt<\/a> can’t resist\u2014you can’t tell me that all doesn’t sound amazing.<\/p>\n

While historical figures like Andrew Carnegie, Andy Warhol, and Fred Rogers (yep, Mister Rogers was a Pittsburgher) might have put the ‘Burgh on the map economically and culturally, one “Almost Famous” restaurant has solidified its culinary reputation: Primanti Bros. Even if you can’t remember the restaurant’s name, you’ve likely heard it described as the chain that puts fries and coleslaw directly onto the sandwich.<\/p>\n

What Is a Pittsburgh Sandwich?<\/p>\n

The Pittsburgh sandwich was created during the Great Depression by Joe Primanti in the city’s Strip District. Legend has it<\/a>, one winter night someone dropped off a truckload of potatoes, so Primanti fried them up and, after customers started asking for fries, he plopped them right on the sandwich\u2014along with two slices of tomato, tangy slaw, provolone cheese, and grilled meat on Italian bread. That way, the truck drivers passing through could eat the hearty sandwich with one hand, while driving with the other.<\/p>\n

Now, nearly 100 years later, Primanti Bros. and its sandwiches<\/a> are loved by locals, visitors, and celebrities alike.\u00a0It was even named one of America’s Classic restaurants by the James Beard Foundation<\/a> in 2007.<\/p>\n

Today, Primanti Bros.’ menu offers more than a dozen sandwiches, all topped with fries, cheese, tomatoes, and slaw. However, the most-ordered sandwich (the restaurant’s second best-seller, second only to Pittsburgh’s own Iron City Beer) is the Pitts-Burger.\u00a0This sandwich combines a burger and fries into one sandwich with a seasoned beef patty, cheese, tomatoes, and slaw on Italian bread.<\/p>\n

How To Make a Pittsburgh Sandwich<\/p>\n

Any sandwich can be a Pittsburgh sandwich with the addition of two specific ingredients: french fries and coleslaw. While Primanti Bros. uses a standard cut for its fresh-cut fries, really any style, like shoestring or crinkle, will work.<\/p>\n

However, the coleslaw is very specific. The Pittsburgh sandwich coleslaw is not creamy and sweet, but rather it has a tangy flavor from the vinegar dressing. To make it, our on-site recipe<\/a> calls for shredded cabbage, vegetable oil, apple cider vinegar, sugar, adobo seasoning, and black pepper.<\/p>\n

From there, you’ll need your favorite meat and provolone cheese. I always opt for the ham and cheese sandwich at Primanti Bros., but our on-site recipe calls for pastrami. Whatever deli meat you choose, you’ll grill it to warm, then add provolone and heat it until the cheese melts.<\/p>\n

Primanti Bros. uses two thick, untoasted slices of Italian bread. You’ll put the meat and cheese on the sandwich, then add the fries, slaw, and tomatoes. This is where white Italian bread comes in handy, since you can mash it down to keep all the ingredients in place.<\/p>\n

There’s nothing like it and, to me, it’s the best damn sandwich in the world.<\/p>\n
