ALLENTOWN, Pa. \u2013 A new spot for locally made wines, specialty cocktails, signature small plates and more is coming soon to Lehigh County.<\/p>\n
Soaked in the City, a new cocktail lounge from the team behind Soaked Winery, is expected to open in mid-June at 932 Hamilton St. in downtown Allentown, owner Shannon Birosik told 69 News.<\/p>\n

The new venue will occupy a soon-to-be-renovated space that previously housed a DeSales University education hub, which closed in 2025 after a little more than 2 years of operation.<\/p>\n
Soaked in the City will be a sister location of Soaked Winery, which opened in 2019 at 567 Blue Mountain Drive in Lehigh Township.<\/p>\n
The Lehigh Township location is housed in a rustic, 1837 German-style barn, surrounded by picturesque natural scenery that includes mature trees and a pond.<\/p>\n

The new Allentown spot will offer the same friendly service and award-winning wines that have led to Soaked\u2019s success over the past several years, but it will feature a more \u201cchic, urban vibe\u201d compared to the winery\u2019s countryside homebase, Birosik said.<\/p>\n
\u201cWe\u2019re really excited for our Allentown location,\u201d Birosik said.<\/p>\n
\u201cAnybody who is familiar with our current location knows that it has a very rustic, farm vibe, and the Allentown location will be a total contrast to that.\u201d<\/p>\n
In addition to Soaked\u2019s wines, the Allentown lounge will feature Pennsylvania craft beers and an expanded selection of hand-crafted cocktails, Birosik said.<\/p>\n

\u201cIn Allentown, we\u2019re moving into more of a cocktail lounge feel,\u201d Birosik said.<\/p>\n
\u201cSo, hand-crafted cocktails made with PA spirits and fresh ingredients will be a big focus at the new venue. We\u2019ve also come up with a few fun cocktails, where we marry the wine and spirits together.\u201d<\/p>\n
Birosik, an at-home winemaker for many years, opened Soaked Winery in 2019 as an off-shoot of the now-closed Calvaresi Winery in Penn Township, Berks County.<\/p>\n
Birosik had purchased Calvaresi in 2014 from longtime owner Tom Calvaresi, who was retiring, and eventually began developing a few additions to Calvaresi\u2019s regular lineup under the Soaked brand.<\/p>\n

With a degree in food science from Delaware Valley College and a background in developing new products and processes for a local confectionary company for 13 years, she felt right at home.<\/p>\n
At Soaked, Birosik purchases grapes from growers in Pennsylvania and Washington to produce a wide array of high-quality, small-batch wines.<\/p>\n
Guests can enjoy dry selections such as merlot, syrah, barbera, pinot grigio and sauvignon blanc; off-dry varieties such as Riesling, ros\u00e9 (spicy and clean with hints of strawberry and pineapple) and \u201cWillow White\u201d (crisp, semi-dry Rhine-style white, delivering orange blossoms in the nose and apple and grapefruit flavors); and sweet selections such as apple, blueberry, cranberry and \u201cLush\u201d (port-style dessert wine that\u2019s fruity and smooth with hints of dark cherry and currant).<\/p>\n
A popular pick is Albari\u00f1o, a white wine described as \u201ccrisp and juicy with initial impact of green apple followed by lingering nectarine.\u201d<\/p>\n

\u201cWe released a wine called Envy, which has also become super popular,\u201d Birosik said.<\/p>\n
\u201cIt\u2019s a cabernet sauvignon, with the grapes coming from Washington state, and I age it in bourbon barrels. I also do a merlot in bourbon barrels that I call Moxy, and that\u2019s become popular as well. I\u2019ve been making that for a few years.\u201d<\/p>\n
Like the Lehigh Township location, the new Allentown venue will offer Soaked\u2019s wines by the glass and bottle, along with wine flights and tastings.<\/p>\n
Tastings consist of five 1-ounce pours, while flights consist of four 3-ounce pours.<\/p>\n

Wine slushies, which Birosik labels \u201cvery, very popular,\u201d also will be offered in Allentown.<\/p>\n
Wine slushie flavors regularly rotate, with this weekend\u2019s offerings including blackberry and blood orange.<\/p>\n
\u201cSome of our returning favorites include a red sangria and a \u2018Camberry,\u2019 made with our sweet Cameo wine and a little cranberry juice,\u201d Birosik added.<\/p>\n
Local craft beer and artisan cocktails also will be available in Allentown, along with a variety of small plates.<\/p>\n

The Allentown location\u2019s food menu is still being finalized, but individuals can expect elevated options such as seasonal charcuterie boards, flatbreads, smoked salmon crostinis and a burrata and prosciutto plate, Birosik said.<\/p>\n
New kitchen equipment is being installed along with other upgrades such as new flooring, lighting and furniture.<\/p>\n
A new bar will be centrally located, with a nearby lounge area to the left and another room \u2013 designed for private events and overflow seating \u2013 to the right, Birosik said.<\/p>\n
The venue will accommodate around 80 guests, and all of the rooms will flow seamlessly together.<\/p>\n
\u201cWe hope to host music and other things like that on the weekends, but we also would like to rent out the space on the right for private functions,\u201d Birosik said.<\/p>\n
\u201cSo, people could host baby showers, birthday parties, business functions and other events. We\u2019ve also been hosting comedy events in Lehigh Township, which have been very successful, and we hope to do that in Allentown as well.\u201d<\/p>\n
Soaked is no stranger to the downtown Allentown business scene.<\/p>\n

The winery hosted a pop-up shop on the ArtsWalk in 2018, and Birosik has continued to watch the city’s downtown progress with new apartment complexes, office buildings, entertainment venues and restaurants over the ensuing years.<\/p>\n
Last summer, she and her husband attended a show at the new Archer Music Hall, and she commented to him at the time how \u201ca great cocktail bar\u201d would be perfect right across the street.<\/p>\n
Less than a year later, the opportunity presented itself when the leasing team from City Center Group \u2013 the property\u2019s landlord \u2013 reached out to Birosik about the ground-floor space.<\/p>\n
\u201cI\u2019ve been watching the revitalization of downtown Allentown over the past several years,\u201d Birosik said. \u201cSo, I\u2019m familiar with the area, and I just really felt that now is the time to expand there.\u201d<\/p>\n

In Lehigh Township, Soaked Winery operates 3-8 p.m. Thursdays and Fridays, noon to 7 p.m. Saturdays and noon to 5 p.m. Sundays.\u00a0<\/p>\n
Hours for the new Allentown location are still being finalized, but the plan is for it to operate Tuesday through Sunday.<\/p>\n
Tentative hours are 4 to 9 or 10 p.m. Tuesday through Thursday, 2 p.m. to midnight Fridays, 11 a.m. to midnight Saturdays and 11 a.m. to 7 or 8 p.m. Sundays, Birosik said.<\/p>\n
It\u2019s Birosik\u2019s hope that Soaked in the City becomes not only a hot spot for great drinks and small bites but also a community hub for social activities.<\/p>\n
\u201cWhat I\u2019d really like to do is offer different workshops and classes throughout the week,\u201d Birosik said.<\/p>\n
\u201cI work with someone who teaches you how to make beautiful charcuterie boards. We could host cocktail classes and other types of instructional events. I\u2019d also like to work with other local businesses for things like plant workshops, crochet classes and so on.\u201d<\/p>\n
