Project Steaks<\/p>\n
From July through September, the cheesesteaks were available on Thursdays as part of Jay\u2019s Local\u2019s Guest Chef Collaboration Program, but foodies can now score the cheesesteaks from 4 to 7:30 p.m. on Thursdays, Fridays and Saturdays.<\/p>\n
\u201cIf our time here continues to go well, we\u2019d love to make it permanent,\u201d Roberts said.<\/p>\n
\u201cThe feedback\u2019s been really great. People are telling us it\u2019s the best cheesesteak in the Valley, the best they\u2019ve ever had.\u201d<\/p>\n
Roberts and Kilroy also operate the five-year-old Chopfin, a fast-casual eatery specializing in sushi burritos and poke bowls on Cedar Crest Boulevard in South Whitehall Township.<\/p>\n
Additionally, Kilroy operates Primo Hoagies franchise locations in South Whitehall and Wilson.<\/p>\n
With Project Steaks, the partners are excited to serve up flavorful, high-quality cheesesteaks, which they believe are lacking in the Lehigh Valley.<\/p>\n
\u201cSince I was a teenager, I\u2019ve been traveling down to Philadelphia to eat good cheesesteaks,\u201d Roberts said. \u201cSo, I really saw a need, especially in the western part of the Lehigh Valley, for an elevated cheesesteak.\u201d<\/p>\n

Project Steaks<\/p>\n
Project Steaks\u2019 tagline is \u201cserious cheesesteaks,\u201d and customers can choose from regular and spicy varieties, with additional varieties such as locally smoked Cooper cheese, Italian black truffle and Lehigh Valley set to debut in the coming weeks, Roberts said.<\/p>\n
\u201cThe Lehigh Valley-style cheesesteak will have the red sauce and pickles on it,\u201d Roberts said.<\/p>\n
\u201cFor the spicy cheesesteak, I blister long hots and fresh cherry peppers, and then I dice them up and add them into the cheese. So, you\u2019ll be able to add that to any of the upcoming cheesesteaks as well if you want.\u201d<\/p>\n
Project Steaks\u2019 menu features fresh-cut ribeye on 10-inch double seeded rolls from Corropolese Italian Bakery & Deli in Norristown, Montgomery County.<\/p>\n
The steak sandwiches, priced $17 to $20, are available with or without onions.<\/p>\n
\u201cI get steak meat that no one in the Valley is getting, and it took me years to find it,\u201d Roberts said. \u201cSo, it\u2019s high-end meat from South Philly, and our double seeded rolls are from Corropolese.\u201d<\/p>\n
Project Steaks is open 4 to 7:30 p.m. Thursday through Saturday at Jay\u2019s Local, at 2301 W. Liberty St. in Allentown.<\/p>\n
