Third St. in Bethlehem.<\/p>\n<p>                                    Ryan Kneller<\/p>\n<p>The Gully Kitchen, with seating for around 70 guests on two levels, will occupy an updated space that previously housed Alibi Bar &amp; Lounge, an upscale bar and lounge that <a href=\"https:\/\/www.wfmz.com\/features\/eat-sip-shop\/upscale-bethlehem-bar-and-lounge-known-for-hand-crafted-cocktails-closes\/article_4fc1301f-8b46-42b6-a7df-03f55891b9a3.html\" target=\"_blank\" rel=\"nofollow noopener\">closed in spring 2025<\/a> after about a year of operation.<\/p>\n<p>The new restaurant will specialize in custom, freshly prepared Indian street bowls, where customers choose their base, protein, toppings and sauce, Paul said.<\/p>\n<p>Other menu highlights will include Indian-inspired sandwiches and sides.<\/p>\n<p>\u201cWe\u2019re very excited,\u201d said Paul, who\u2019s operating the restaurant with three partners.<\/p>\n<p>\u201cAnd we\u2019ve been getting social media messages from people who are excited, too. So, I think it will fill right in. There are a lot of [quick-service restaurants] on that street, but we wanted to bring in something different. Third St. in Bethlehem.<\/p>\n<p>                                    Ryan Kneller<\/p>\n<p>\u201cI just got married in India last year,\u201d Paul said.<\/p>\n<p>\u201cSo, I had to take multiple trips back to India, and as I was trying the traditional homecooked food while I was there, I realized that it was something I wanted to offer here in the U.S. So, we\u2019re bringing the fresh and authentic flavors of Indian street food to Bethlehem.\u201d<\/p>\n<p>The Gully Kitchen will offer build-your-own Indian bowls, with an ordering format similar to the one featured at Chipotle restaurants, Paul said.<\/p>\n<p>Hot and cold bars will be positioned in front of customers, who will begin their order by selecting a base \u2013 white rice, Gully rice or mixed greens.<\/p>\n<p>Next, guests will choose from various Indian-inspired proteins, including chicken tikka, malai chicken, lamb shawarma, paneer small chunks and amritsari chole.<\/p>\n<p>They\u2019ll then choose from various spreads (rajma, dal makhani, spicy potato and spinach) and toppings (pickled onions, jalapeno, shredded lettuce, tomatoes, crunchy chickpeas, beetroots, cucumber, caramelized onions and olives).<\/p>\n<p>Lastly, they\u2019ll complete their custom dish by picking a sauce (butter chicken sauce, malai sauce, korma sauce, mint sauce, spicy sauce or tandoori mayo).<\/p>\n<p>\u201cOur whole concept for The Gully Kitchen is to combine authentic Indian cuisine with a modern touch, making it more appealing to consumers,\u201d Paul said.<\/p>\n<p>\u201cSo, we\u2019ll have the custom bowls, and we\u2019ll also be doing Indian-inspired sandwiches. For example, instead of doing just a fried chicken sandwich, we\u2019re going to do a butter fried chicken sandwich.\u201d<\/p>\n<p>Additional Indian-inspired handhelds will include a kathi rolls \u2013 similar to wraps \u2013 such as shredded lamb, shredded chicken tikka, malai chicken and paneer; and sandwiches such as lamb korma, malai chicken, butter paneer panini and Bombay sandwich (classic white bread layered with spicy potato spread, cucumbers, tomato, onions, beetroots and mint chutney).<\/p>\n<p>Guests also will be able to enjoy \u201cGully Special\u201d dishes such as samosa chat (crispy samosa topped with spicy chutneys and fresh ingredients) and butter chicken fries (golden crispy fries topped with rich butter chicken sauce, fresh herbs and authentic Indian spices) and sides such as samosa chicken (crunchy samosa stuffed with juicy chicken and signature Indian spices) and masala fries (crispy golden fries tossed with spicy masala seasoning and herbs).<\/p>\n<p>The Gully Kitchen will have two floors, with the lower level featuring the kitchen, ordering counter and main dining room, and the upper level featuring additional dining space and a lounge with couches, plush chairs and other comfortable seating, Paul said.<\/p>\n<p>Outdoor dining on a covered patio also will be available.<\/p>\n<p>                        <img loading=\"lazy\" decoding=\"async\" src=\"data:image\/png;base64,iVBORw0KGgoAAAANSUhEUgAAAAQAAAADCAQAAAAe\/WZNAAAAEElEQVR42mM8U88ABowYDABAxQPltt5zqAAAAABJRU5ErkJggg==\" alt=\"gully 1.jpg\" class=\"img-responsive lazyload full blur\" width=\"1961\" height=\"1056\" data- data-\/><\/p>\n<p>             <img decoding=\"async\" src=\"https:\/\/www.newsbeep.com\/us-pa\/wp-content\/uploads\/2026\/07\/6a5d67ed2458a.image.jpg\" alt=\"\" aria-hidden=\"true\" loading=\"lazy\" height=\"108\" width=\"200\"\/><\/p>\n<p>The Gully Kitchen, offering authentic Indian street food with a modern touch, is coming soon to 203 E. Third St. in Bethlehem.<\/p>\n<p>                                    Ryan Kneller<\/p>\n<p>\u201cThis is more than just the opening of a restaurant \u2013 it\u2019s the beginning of a dream that wouldn\u2019t have been possible without the love and support of our friends and family,\u201d Paul said.<\/p>\n<p>The Gully Kitchen, which also will offer mango lassi, chai tea lattes and other specialty drinks, is tentatively set to operate for lunch and dinner daily, with late-night hours Thursday through Saturday, Paul said.<\/p>\n<p>The restaurant will operate next to The Flying V Poutinerie and within a few blocks of other popular restaurants such as U &amp; Tea, F&amp;A Grog House, Paranormal Pizza and Wondaffle.<\/p>\n<p>In developing The Gully Kitchen, Paul and his partners also took inspiration from the success of other fast-casual concepts on East Third Street.<\/p>\n<p>\u201cWe saw how well other restaurants in Bethlehem are serving the community, including the many college students in the area,\u201d Paul said.<\/p>\n<p>\u201cThere\u2019s Sizzling Bites on the Mediterranean side and El Jefe\u2019s on the Mexican side, and we just felt like there was a fast, student-friendly Indian option that was missing.
