Owner Amy Huynh of Northampton is a lifelong ice cream fan and saw an opportunity to share that passion with the community.<\/p>\n
\u201cI was also in the restaurant industry, and so this is just something that I eased into and wanted to do,\u201d Huynh said. \u201cIce cream makes people happy.\u201d<\/p>\n
The main attraction at Mimi\u2019s on Main is the ice cream, with around 30 rotating hard ice cream flavors, including two dairy-free and two sugar-free varieties.<\/p>\n

The Hershey\u2019s Ice Cream flavors regularly rotate, with recent selections including blueberry cheesecake, butter pecan, caramel cookie twist, coconut chocolate almond, cookies & cream, cotton candy, dark chocolate raspberry truffle, green mint chip and peach, among others.<\/p>\n
In the business\u2019 first few weeks, banana pudding has been a top seller, shop associate Caroline Rodriguez said.<\/p>\n
Guests can enjoy their ice cream in cups or cones and can also customize their orders by choosing from toppings such as rainbow or chocolate sprinkles, marshmallows, gummy bears, Oreos and Swedish fish; and syrups such as caramel, peanut butter and strawberry.<\/p>\n

Other chilled treats include banana splits, custom sundaes, milkshakes, sundae-style milkshakes (with toppings mixed in), ice cream sandwiches (ice cream sandwiched between cookies or waffles) and Asian novelties such as fruit-shaped ice cream.<\/p>\n
In addition to ice cream, Mimi\u2019s offers a rotating selection of fresh baked goods, including cookie dough brownies, dulce de leche cake, rainbow cake, chocolate croissants, pumpkin cream cheese blondies and cookies such as chocolate chip, white chocolate macadamia and oatmeal raisin.<\/p>\n
There are also artisan soft pretzels, including plain, cheese, cinnamon sugar and pizza, with the latter featuring sauce and melted cheese.<\/p>\n
