Olde Silver Tavern.\u00a0<\/p>\n<p>They\u2019re all part of a portfolio Haldeman has built over more than a decade as \u201c<a href=\"https:\/\/www.raymondhaldeman.com\/\" target=\"_blank\" rel=\"noopener nofollow\">The Restaurant Designer<\/a>,\u201d transforming everything from empty strip-mall spaces and aging restaurants to former dry cleaners into dining destinations.<\/p>\n<p>What caught my attention, though, wasn\u2019t just how his restaurants look. It was how he thinks about them.<\/p>\n<p>For Haldeman, restaurant design starts with the P&amp;L.<\/p>\n<p>A Restaurant Designer Who Actually Ran Restaurants<\/p>\n<p>That philosophy comes from decades as a restaurant operator. Haldeman started as a busboy and worked his way up to server, cook, and chef. At 21, he launched a catering business from his Philadelphia apartment and later opened restaurants and nightclubs in South Florida, Palm Beach, and San Juan.<\/p>\n<p>After years of helping design his own venues, Haldeman turned that experience into a business. He put up a website and, two weeks later, got a call about designing a shuttered resort in Wisconsin\u2019s Northwoods. The owner sent a private jet to pick him up.<\/p>\n<p>\u201cThat was my first job,\u201d Haldeman said, grinning.<\/p>\n<p>That was Memorial Day weekend 2014. He\u2019s been designing ever since.<\/p>\n<p>Pretty Isn\u2019t Enough<\/p>\n<p>Haldeman\u2019s experience as an operator drives his approach to design. He starts with the owner\u2019s vision, then considers how the restaurant will actually function.<\/p>\n<p>\u201cThey\u2019ve got ideas that they\u2019ve been accumulating for, who knows, maybe a lifetime,\u201d he says. \u201cI want to hear what they have to say. I want to get into their head and understand where they\u2019re coming from.\u201d<\/p>\n<p>From there, he looks at kitchen flow, server traffic, sight lines and guest movement, along with opportunities to generate revenue through private dining, bar business and, where it makes sense, a transition to a livelier late-night atmosphere.<\/p>\n<p data-pm-slice=\"1 1 []\">At <a href=\"https:\/\/www.coastalcanteennj.com\/\" target=\"_blank\" rel=\"noopener nofollow\">Coastal Canteen<\/a> in Manasquan, for example, the bar sits prominently near the front, with large windows that open onto the downtown sidewalk. River Rock in Brick features a dramatic digital ceiling, while Fins in Cape May incorporates an illuminated glass bar designed to look like water.<\/p>\n<p>Yes, He Thinks About the Bathrooms<\/p>\n<p>Haldeman\u2019s attention extends even to the bathrooms. When possible, he favors private water closets and considers everything from sight lines to flattering vanity lighting.<\/p>\n<p>He also sees them as an opportunity for a memorable design moment. At the new Cuzin\u2019s in Brick, the ladies\u2019 room will feature a playful mural\u2014a built-in selfie backdrop where guests are already taking photos.<\/p>\n<p>What\u2019s Next<\/p>\n<p>Haldeman\u2019s current New Jersey projects include the new <a href=\"https:\/\/www.cuzinsclambar.com\/brick\" target=\"_blank\" rel=\"noopener nofollow\">Cuzin\u2019s Seafood &amp; Clam Bar<\/a> in Brick and The Flip, a breakfast-and-lunch concept planned for Freehold.<\/p>\n<p>He\u2019s also venturing beyond restaurants. <a href=\"https:\/\/www.seasonalworld.com\/\" target=\"_blank\" rel=\"noopener nofollow\">Seasonal World<\/a>, the Jackson-area pool and outdoor-living company, tapped him to design its new 20,000-square-foot building, including the showroom and displays.<\/p>\n<p>But whether he\u2019s designing a restaurant or something entirely different, Haldeman still approaches the project like an operator.<\/p>\n<p>\u201cI was every one of my clients,\u201d he says. \u201cI sat in their shoes. I paid the bills. I had to make the payroll.\u201d<\/p>\n<p>Guests see the dramatic lighting, digital waterfalls, and Instagram-worthy moments.
