Mecha means &#8220;mom and pop&#8221; in Vietnamese, and pays homage to Chef Tony&#8217;s Asian-American upbringing &#8211; his parents owned a pho shop when he was growing up.<\/p>\n<p class=\"EkqkG IGXmU nlgHS yuUao lqtkC TjIXL aGjvy \">The menu has a variety of ramen, pho, baos, and dumplings, plus beverages like bubble teas, sakes and more.<\/p>\n<p class=\"EkqkG IGXmU nlgHS yuUao lqtkC TjIXL aGjvy \">The co-founders also worked in a charity element to their business model &#8211; for every bowl of ramen, fifty cents goes to a local charity.
