For many, it <a href=\"https:\/\/today.yougov.com\/society\/articles\/48626-which-holidays-do-americans-enjoy-most-and-least\" rel=\"nofollow noopener\" target=\"_blank\">ranks as a favorite holiday<\/a>, bringing together family and friends around a meal that often centers on one iconic dish: roast turkey.<\/p>\n<p>Yet, few people consider the agricultural effort behind this holiday staple. Each year, an estimated <a href=\"https:\/\/www.usda.gov\/media\/blog\/2017\/11\/22\/tips-and-resources-bacteria-free-thanksgiving\" rel=\"nofollow noopener\" target=\"_blank\">46 million turkeys<\/a>\u00a0are consumed on Thanksgiving alone, with production largely concentrated in a handful of states. As the holiday nears, these leading turkey-producing states work hard to support millions of Thanksgiving tables nationwide. Here, we take a closer look at the regions making this tradition possible.<\/p>\n<p>Trends in U.S. Turkey Production &amp; Consumer Demand<\/p>\n<p>Americans are eating less turkey: per capita turkey production fell from 26.8 lbs in 1996 to 19.3 lbs in 2024<\/p>\n<p><img decoding=\"async\" width=\"100%\" src=\"https:\/\/www.newsbeep.com\/us-pa\/wp-content\/uploads\/2025\/11\/Chart1_Trends-in-U.S.-Turkey-Production-Consumer-Demand.png\"\/><\/p>\n<p>Trace One analysis of USDA data | Image Credit: Trace One<\/p>\n<p>Over the decades, U.S. turkey production has seen significant growth followed by a more recent decline. Between 1960 and the mid-1990s, per capita turkey production rose sharply, peaking in 1996 at 26.8 pounds per person. However, between the mid-1990s and present, per capita turkey production experienced a fairly steep decline. In 2024, annual production had dropped to just 19.3 pounds per person\u2014a decline of approximately 28%. On an absolute basis, total turkey production peaked in 2008 at 7.9 billion pounds before dropping to just over 6.5 billion in 2024.<\/p>\n<p>Several factors can explain this shift in consumer demand. Health concerns and changing dietary preferences play a significant role, with <a href=\"https:\/\/www.mdpi.com\/2072-6643\/15\/23\/4990\" rel=\"nofollow noopener\" target=\"_blank\">more Americans choosing plant-based diets<\/a>\u00a0and reducing overall meat consumption, including turkey. Additionally, <a href=\"https:\/\/www.ers.usda.gov\/newsroom\/trending-topics\/turkey-sector-background-statistics\/\" rel=\"nofollow noopener\" target=\"_blank\">rising turkey prices<\/a>, which increased from $0.80 per pound in 2018 to $1.40 per pound in 2023, have also impacted consumption. Fortunately for consumers, average turkey prices fell to $0.94 per pound in 2024 but are expected to climb to an annual average of $1.19 per pound by the end of 2025.<\/p>\n<p>Average Turkey Weight<\/p>\n<p>The average turkey size in the U.S. has nearly doubled since the 1960s, from 17.7 lbs in 1960 to 32.9 lbs in 2024<\/p>\n<p><img decoding=\"async\" width=\"100%\" src=\"https:\/\/www.newsbeep.com\/us-pa\/wp-content\/uploads\/2025\/11\/Chart2_Average-Turkey-Weight.png\"\/><\/p>\n<p>Trace One analysis of USDA data | Image Credit: Trace One<\/p>\n<p>Interestingly, the average size of turkeys raised in the U.S. has nearly doubled since the 1960s, a trend that has helped maintain relatively high production levels even as the total number of turkeys raised has declined.<\/p>\n<p>The number of turkeys raised peaked in 1996 at approximately 303 million birds annually, but has since dropped by about 34% to an estimated 200 million birds in 2024. However, the larger size of today\u2019s turkeys\u2014averaging nearly 33 pounds per bird compared to around 18 pounds in the 1960s\u2014has offset the decline in numbers, resulting in a relatively less pronounced decrease in overall production weight.<\/p>\n<p>The increase in average turkey size is primarily due to <a href=\"https:\/\/www.popsci.com\/science\/why-are-turkeys-so-big\/\" rel=\"nofollow noopener\" target=\"_blank\">selective breeding<\/a>\u00a0focused on larger, faster-growing birds. Advances in nutrition, health, and farming practices have also contributed, allowing turkeys to reach target weights more efficiently. While larger turkeys are generally more economical on a per-pound basis, experts point out that <a href=\"https:\/\/www.foodnetwork.com\/holidays-and-parties\/articles\/turkey-buying-guide\" rel=\"nofollow noopener\" target=\"_blank\">smaller birds offer certain advantages<\/a>: they tend to be more tender, cook more evenly, and require significantly less time for thawing and cooking. For larger gatherings, preparing two smaller birds instead of a single large one has the added benefit of increasing the quantity of popular cuts, such as wings, drumsticks, and thighs.<\/p>\n<p>Annual Turkey Production by State<\/p>\n<p>North Carolina &amp; Minnesota are the top turkey producers in the nation<\/p>\n<p><img decoding=\"async\" width=\"100%\" src=\"https:\/\/www.newsbeep.com\/us-pa\/wp-content\/uploads\/2025\/11\/Chart3_Annual-Turkey-Production-by-State.png\"\/><\/p>\n<p>Trace One analysis of USDA data | Image Credit: Trace One<\/p>\n<p>More than 86% of U.S. turkey production takes place in just 13 states, with North Carolina and Minnesota leading as the top producers. Together, these two states contribute nearly 30% of the nation\u2019s total turkey output. North Carolina ranks first, accounting for 15.5% of turkeys by weight, driven in part by a larger average bird size of 37.8 pounds. Minnesota, where turkeys tend to be smaller, ranks second in production weight at 14.0% but raises the largest number of turkeys overall, accounting for 16.0% of the nation\u2019s total birds.<\/p>\n<p>Outside of North Carolina and Minnesota, Indiana is a major producer, contributing 12.9% of U.S. turkey production by weight, followed by Arkansas at 7.8% and Iowa at 7.7%.
