EASTON, Pa. \u2013 A popular spot for specialty omelettes, steak sandwiches and other freshly prepared eats is planning to satisfy the community\u2019s hunger for expanded hours in Northampton County.<\/p>\n
West Side Cafe & Grill, a full-service eatery offering a variety of breakfast and lunch dishes, will introduce dinner service beginning Monday, Jan. 26, at 1100 Bushkill St. in Easton, co-owner George Kouros said.<\/p>\n

Kouros and his wife, Kalliopi, and friend, Photis Zographou, opened West Side in July at a renovated corner property that was once home to Uncle Wesley\u2019s, a popular eatery known for its crab cakes, burgers and fresh-cut fries, which closed in 2010 after 71 years of business.<\/p>\n
Business has taken off over the past six months, with many customers requesting the business also serve dinner, Kouros said.<\/p>\n
Starting Jan. 26, the restaurant will debut new hours of 8 a.m. to 8 p.m. Thursday through Sunday (closed Wednesdays).<\/p>\n
\u201cA lot of people have been asking for dinner hours, and so we\u2019re going to cater to them,\u201d Kouros said.<\/p>\n
\u201cWe have tons of items that we\u2019re going to make to complement our current menu such as soups, comfort foods and great dinner platters \u2013 all dishes that people love and have been asking for.\u201d<\/p>\n

West Side currently offers rotating breakfast and lunch specials, and the restaurant will continue to feature specials during dinner hours, Kouros said.<\/p>\n
Guests can expect a wide array of homemade platters and other specialties.<\/p>\n
\u201cWe\u2019ll introduce items like homemade soups, tons of pasta dishes with fresh ingredients, Italian sauteed dishes and American comfort food,\u201d Kouros said.<\/p>\n
\u201cWe\u2019ll even have flatbread pizzas. So, we\u2019re bringing a lot to the table.\u201d<\/p>\n

At West Side Cafe & Grill, guests can enjoy specialty breakfast sandwiches and wraps such as a breakfast burrito, bacon egg and cheese wrap and Monte Cristo sandwich (grilled French toast bread with turkey, ham and Swiss cheese, topped with powdered sugar and served with syrup); and fresh-from-the-griddle options such as churro toast, Nutella banana pancakes and stuffed pancakes (tower of homemade pancakes stuffed with glazed strawberries, blueberries and topped with whipped cream).<\/p>\n
Other breakfast highlights include classic dishes (served with breakfast potatoes and choice of toast) such as creamed chipped beef and a breakfast combo (two eggs, a pancake and choice of bacon, sausage, ham or pork roll); and specialty omelettes such as “South of the Border” (spicy chorizo, sauteed onions and peppers and melted cheddar jack cheese) and “Athena’s” (Mediterranean flavors with spinach, roasted red pepper and feta cheese).<\/p>\n
Lunch options include burgers such as cowboy BBQ, patty melt and veggie burger; hot and cold sandwiches such as chicken salad, tuna melt and corned beef and cheese; wraps such as reuben, grilled chicken Caesar and crispy Buffalo chicken; and paninis such as chicken parm, pesto chicken and roasted veggie.<\/p>\n

Other menu highlights include bone-in and boneless wings (in your choice of sauce), various club sandwiches, quesadillas such as chicken and ribeye, baskets such as shrimp and fish and chips and salads such as chef and Greek.<\/p>\n
\u201cWe\u2019ve become known for our cheesesteaks,\u201d Kourous said.<\/p>\n
The Easton restaurant, with seating for around 50 guests, also features a robust coffee menu, featuring Italian-imported coffee and specialty drinks such as affogato and caramel lattes.<\/p>\n
The establishment is also BYOB, allowing guests to bring their alcoholic beverage of choice to enjoy with their meals. Over the past six months, Kouros has noticed a prevalence of diners bringing champagne to make their own mimosas.<\/p>\n
West Side\u2019s full menu will be available during its newly expanded hours.<\/p>\n
\u201cThat means we\u2019re doing breakfast all day,\u201d Kouros said.<\/p>\n
\u201cSo, if someone wants to come in at 6 p.m. and get a full stack of our specialty pancakes with an omelette, they can do that.\u201d<\/p>\n

Kouros, a 2012 graduate of Saucon Valley High School, is no stranger to the local restaurant scene.<\/p>\n
The Bethlehem resident gained experience working at local eateries – including the Hellertown Diner on Main Street in Hellertown – while in high school before owning and operating Stefko Pizza on Stefko Boulevard in Bethlehem for about eight years.<\/p>\n
Kouros sold Stefko Pizza a couple of years ago.<\/p>\n
In 2025, Kouros and Zographou also were looking to open another restaurant, Smash Brothers Grill, featuring smash burgers, hot dogs, cheesesteaks and more, at 2115 Stefko Blvd. in Bethlehem.<\/p>\n
However, that restaurant is no longer planned as the partners devote their attention to West Side Cafe & Grill, Kouros said.<\/p>\n
The Smash Brothers concept could be revisited in the future, but the partners are currently zeroed in on West Side, which continues to flourish.\u00a0<\/p>\n
\u201cWe\u2019re focusing on the Easton restaurant because it\u2019s been going very well,\u201d Kouros said.<\/p>\n
\u201cA lot of people have been asking us to extend our hours into dinner, and now we\u2019re doing it. So, we just want people to know that they no longer have to hurry and get into the restaurant before 4 o\u2019clock. You\u2019ll now be able to stop by after work, and we also offer delivery on various online platforms.”<\/p>\n
