Easton Public Market will welcome a new food vendor later this winter with the opening of Bincho-Don, an island-focused takeout concept led by Chef Kadon Barnwell<\/a>. <\/p>\n

The new vendor is expected to open in February in downtown Easton.<\/p>\n

Bincho-Don will operate out of the former More Than Q<\/a> space, which was occupied by pitmaster Matt Martin for nearly a decade, according to a news release.<\/p>\n

More Than Q, one of the market\u2019s original vendors, decided to transition out of the Easton location and pass along the space and smoker to Barnwell.<\/p>\n

The new concept centers on island-inspired cuisine, drawing heavily from Caribbean food traditions. <\/p>\n

\u201cI\u2019m incredibly excited to bring Bincho-Don to the Easton Public Market,\u201d Barnwell said. \u201cThe concept is inspired by the island foods I grew up around \u2013 Caribbean, Guyanese, Honduran, and Filipino \u2013 and the way those cultures use rice, fire, spice, and time to create comforting, soulful meals. [Easton Public Market] feels like the perfect place to build something community-driven, and I\u2019m looking forward to cooking food that feels both familiar and a little unexpected.\u201d<\/p>\n

Bincho-Don is modeled after Caribbean takeout spots and will focus on rice plates paired with proteins, sauces and side dishes. The format is designed to fit within the fast-paced environment of a food hall.<\/p>\n

Barnwell has more than 12 years of experience in professional kitchens and has worked his way up from dishwasher to executive chef. According to the release, the opening at Easton Public Market marks a significant milestone in his career, as Easton has become both his personal and professional home.<\/p>\n

Bincho-Don plans to collaborate with other market vendors and source ingredients from regional farmers and producers when possible. <\/p>\n
