While Cliff Coffee opened earlier this month, Assembly Icehouse is set to open on Oct. 23 and Tacoro on Nov. 2.

Blender Brands is bringing three new concepts to Plano’s Assembly Park, with Cliff Coffee open now.

Assembly Park’s mixed-use development opened in 2023 and has slowly begun filling with tenants since then.

“My partners and I and our families are proud residents of Collin County,” said Jacob Cox, co-founder and CEO of Blender Brands. “We’re pleased to bring these three original concepts to East Plano where we can welcome apartment residents, office tenants, students, families, and locals alike — inspired by our passion, upbringing and travels.”

The Blender Brands team —lead by Cox, Danny Wilson, John “J.R.” Munoz and Ray Risley — have partnered with a variety of Texas businesses to bring several businesses to life.

Cliff Coffee brings handcrafted espresso and tea drinks, scratch-made pastries, tacos, breads and desserts to the Southwestern-themed lounge. And there are lots of local touches. Ice cream from Tongue in Cheek in Richardson. Drinks made with Lemma Roasters coffee in Lewisville. Bear Naked Honey made in Allen. Mill-King dairy from Waco.

“From coffee beans to honey, milk, and ice cream — everything we can source locally, we do,” Cox said.

The shop is open Monday through Friday from 6 a.m. to 9 p.m., and Saturday and Sunday from 8 a.m. to 9 p.m.

Blender Brands isn’t stopping there. Casual American bar and grill Assembly Icehouse is opening on Oct. 23 with live music, game watching and a spacious patio.

On Nov. 2, Tacoro, a full-service taqueria and bar, is set to open.
