I got out of bed on a Sunday and decided to visit a local food truck. I hadn’t had the chance to test it out yet, but my friends were ranting and raving about how good it was, and they were right.
Where is it?
Parked at 4611 50th Street, I found Birria LBK, a food truck that specializes in all things Birria. I ordered the Birria Tacos, Birria Egg Rolls, and, of course, the Birria Ramen.
How Was It?
Everything was ready to go in under 15 minutes. Then, I was on my way with food that smelled SO good it was nearly impossible not to eat in the car. (I’m not gonna lie, folks, I actually ate it in BED, and now I’m pretty sure that’s where you’re supposed to eat meals like this, because I needed a nap immediately, and I was in the perfect spot to do both.)

Holy monkeys, that birria egg roll was something special. It was perfectly crispy and meaty in the middle. I think I may have dreamed about it last night.
