My favorite “walk-in and grab it” joint is Simple Simon’s Pizza – Lubbock, located right next to Harbor Freight Tools. It’s a quirky, personality-packed shop run by an ex-Marine, and you can feel that energy the moment you walk in.

The walls are lined with action figures. A retro TV usually has something fun playing. It’s technically a franchise, but it feels like something between a clubhouse and a hometown diner—completely unique, unapologetically authentic.

And after an extended hospital stay, I finally worked up the nerve to try a couple of slices last Saturday. It was heaven. I’ve eaten a lot of pizza in my life—trust me, a lot—and that Supreme may have been the best I’ve ever wrapped my lips around. I usually stick to pepperoni or sausage, but this upgrade? Total game changer.
