Live pests reported in food prep areas

LUBBOCK, Texas (KCBD) – Health inspectors uncovered dozens of violations, including live pests in food prep areas, improper food storage, and repeated sanitation issues.

Several establishments addressed many of the problems during their inspections. However, reports indicate ongoing concerns, including temperature control violations and a lack of certified food managers.

Sugar Browns Coffee at 6701 Indiana had 10 violations.

Here’s a look at their priority violations.

Kolaches were not at least 135°.Sausage did not have a date mark.Raw bacon was stored above cranberries.Employees were cleaning utensils in a hand sink. The hand sink was not sanitized afterward. Hand sinks are for hand washing only to prevent cross-contamination.The shut off valve at a sink is not installed properly.There are no certified food manager employed at the facility.

The report shows most violations were corrected at the time of the inspection.

Rise N Shine Donuts at 7803 University had 19 violations.

Here’s a look at their priority violations.

Sausage, eggs and kolaches were above the safe cold temperature of 41°.Heated kolaches were not at least 135°.A package of ham did not have a date mark.Raw bacon was stored on ready to eat cheese, and raw chorizo was stored above dairy products.There were no paper towels available in the restroom. Not all employees had a food handler certification.

Water dripping onto packaged mustard.Single use articles stored on floor in hallway and dry storage area.Single use article used as scoop and stored in flour. Sakura Noodle House and Sushi Bar at 4520 50th Street 26 violations.

Here’s a look at their priority violations.

Cooked rice was held longer than allowed. Raw salmon was stored above ready to eat jalapeños. Imitation crab, cut vegetables and rice did not have a date mark. There were two cans of residential pesticide in the kitchen.Toxic items were not labeled or stored properly. A sanitizer solution was at toxic levels.There were no chlorine test strips available.There are no logs or paperwork regarding the acidification of sushi rice. This is a repeat violation. Ice was stored in plastic grocery sacks.The facility does not have a certified food manager. This is a repeat violation.

Accumulation of food residue and debris on cart carrying spices. Accumulation of grease dripping from vent hood system. Last known date of cleaning was 2017. This is a repeat violation from previous inspection. Maintenance tools stored mixed with food service items in dry storage. Accumulation of dust, food residue, and debris under shelves and on floors around kitchen area.

Tikka Shack at 6620 Milwaukee had 27 violations

Here’s a look at their priority violations.

Raw chicken was stored over cooked chicken. Chicken and other ready-to-eat items had an 8-day date mark. They should be thrown out after seven days. Dirty containers were stored with clean ones.The dough roller was visibly soiled. A container of diced tomatoes was stacked inside another container with dirty liquid. Diced tomatoes did not have a date mark. Toxic items were not labeled. There was food debris in a hand sink. Hand sinks are for hand washing only to prevent cross-contamination. Tongs and ladles were damaged. The three compartment sink was not sealed to the wall properly. The inspector notes due to the number and the nature of the violations management did not show proper food safety knowledge.

Live pests were found in the food prep area.An in-use spoon used to dispense coconut oil from the bulk container is stored on the soiled metal lid of the container between uses.Plastic food containers were wet stacked on the clean wares rack after washing. A metal band that is installed along the wall under the entire 3-compartment sink area is not sealed to prevent contamination. Bulk rice was stored in non original containers and not identified with common name of food. Clean wares rack with clean bowl storage is visibly soiled.Interior of the vent hood in the grill area is visibly soiled with an amber-colored residue. PIC state it is cleaned quarterly. Food prep tables, and shelves in the grill area were visibly soiled. RIC interior surfaces (drawer rails, bottom surfaces, shelves, and door gaskets), and outer surfaces were visibly soiled with old food debris. Reach-in freezer in storage room is visibly soiled on the bottom surface, and on the interior door gasket. A not-in-current use food thermometer stored on a holder in the grill area was visibly soiled. The floors throughout the grill area are visibly soiled with food residues, food debris, and other debris.The floor behind the cooking equipment in the back prep area had a dried spill from the overflow of the waste pipe installed to catch the cooker discharge. The walls in the grill are are visibly soiled. The floor drains throughout the food service areas are visibly soiled with a build-up of food debris, mold/algae, and other debris.
