I tried meal prepping once. It was a tremendous amount of work, and boy-oh-boy was I sick of my own cooking after a couple of days.

Lubbock’s Easiest Meal Prep

When I want three healthy, pre-prepped meals, I go to Kung Fu China Express (5102 60th St M) in Lubbock and order the 2-item plate with steamed rice, mixed veggies, and bourbon chicken. It’s slightly sweet, very lightly glazed grilled chicken thigh meat. Tons of protein, tons of green stuff, and rice to help keep me full but not bogged down. It’s about $15, but there’s enough there for 3 meals (seriously, the container is HEAVY and full to the brim), making it a bargain.

You Can Get Naughty Stuff Too

Kung Fu also has all your other Chinese food favorites- the black pepper chicken is delicious, as are the eggrolls, cream cheese wantons, and everything else. And if you’ve never been before, you might get full trying a sample of everything they have to offer, as they want to be sure you’ll enjoy what you order.

Any Other Healthy Suggestions In Town?

Sure! The Protein Bowl at Caprock Cafe is incredible if you want something low-carb and high-protein with some veggies. Souper Salad is an immaculately clean and healthy buffet (you may be tempted by the pizza and ice cream, though). The Fresca Bowls at Taco Villa are very yummy and filling too. And don’t forget the pre-packed salads at Market Street in the ready meal section- the salmon Caesar is my favorite!

Sometimes Its The Small Things

Little changes can add up and make a big difference with your health, and little changes are actually sustainable long-term. When I get a burger from Braum’s, I sub out the fries for cottage cheese. I lost 60 pounds over the last two years, and keeping it off sometimes seems harder. That’s why I’m always looking for easy “hacks” to stay healthy. I hope this helped you!
