Poolgoers in University Park will see change on the menu in the 2026 season at the Holmes Aquatic Center.
The University Park City Council Tuesday approved partnering with concessionaire Sorrells Enterprises to take over kitchen operations and menu planning for the popular Snack Shack concession stand at the pool for the season. The city hopes to boost revenue at the “Snack Shack,” which has traditionally served up burgers, pizza, ice cream, and soda to poolgoers.
City officials said they began looking into partnering with a concessionaire to run the stand after the 2025 pool season, which saw 31,662 pool visits with $133,481 in gross sales at the Snack Shack. But after paying $124,960.81 in salary and food costs, the city was left with a profit of only about $8,520.19.
Sorrells Enterprises offered a 20% revenue share to the city as part of the partnership.
Now that the contract has been approved, city staff will begin working with Sorrells Enterprises on a new menu for the 2026 season.
Items on a sample menu presented at the meeting included brisket sandwiches and fries, brisket quesadillas, funnel cake fries, and chicken quesadillas. While nothing is certain, Park Cities People and University Park purchasing manager Elizabeth Anderson both thought the brisket quesadillas sounded delicious.
“I’m going to push for those,” Anderson said with a laugh after the meeting.
