LUBBOCK, Texas (KCBD) – Several Lubbock restaurants landed on this week’s low performers list after inspectors documented a combined 49 violations but not every kitchen missed the mark. One local food truck earned top honors for keeping things clean and in compliance.
Yanagi Ramen at 11430 Quaker had 19 violations.
A large pot of soup was above the safe cold temperature of 41°. It had not cooled properly. This can cause bacteria growth. A magnetic knife holder was dirty. A toxic item was not labeled. A container of water was in the hand sink. Hand sinks are for hand washing only to prevent cross-contamination. There were utensils in another hand sink. Utensils were damaged or broken. They must be maintained in good repair. The inspector notes due to the number and the nature of the violations a lack of active managerial control was demonstrated.(Core) Back door to the kitchen was propped open. No air curtain or other protection was in operation on the door.Employee drink in the front service station did not have a lid or straw. Wet rag, not in immediate use, was stored on the side of the hand sink in the kitchen, not in a sanitizer bucket. Wet rag, not in immediate use, was stored outside of a sanitizer bucket. Walk in cooler vent cover was heavily soiled with a buildup of dust and other debris.Plastic container, used to dispense bulk rice from storage, was stored in the rice and did not have a designated handle. A heavy layer of grease and other debris was present on top of the food warmer in the kitchen. Employee personal phone was stored on top of a box of gloves. Wet mop, not in immediate use, was stored with the mop head in the mop bucket in a manner that did not allow for proper air drying. Hand sink next to the kitchen did not have a sign designating it as such. Sink had soap and paper towels available.The report shows most violations were corrected at the time of the inspection.
Hayashi Buffet at 5608 Slide Rd. had 30 violations.
A container of minced garlic in oil was above the safe temperature of 41°. Raw shrimp was stored above ready to eat potatoes. Raw pork ribs were above ready to eat wasabi. Raw chicken was above cut onions. The can opener was dirty.The three compartment sink was not sanitizing.The facility was not calibrating the pH meter and keeping logs for acidified rice.An employee was rinsing a cloth in the hand sink.A scouring pad was in a hand sink. Hand sinks are for handwashing only to prevent cross-contamination. A hand sink was blocked.There were no paper towels in the men’s and women’s restroom. Cardboard was lining the bottom shelf of a prep table.The lid of a container was melted.

Mop, not in-use, stored in mop bucket in a manner that does not allow for proper air drying. Personal headphones case stored on east prep table. A personal beverage and personal jackets stored on shelf above bag-in-box soda syrup located in dry storage room. Covered receptacle not provided in women’s restroom. Hole in wall located above service sink. Door sweep for back door is damaged, light visible. Hand washing sink, three-compartment sink, and auxiliary tables of mechanical dishwasher not properly sealed to their adjoining wall located in ware washing area. Light bulbs not properly shielded, located in south dry storage room.The report shows most violations were corrected at the time of the inspection.
